3. Incazelo Yezitshalo Nezimpahla Ezingavuthiwe:

4. I-Terroir Nezici Zokutshala:
Umasipala we-Zūnyì utholakala endaweni eneziguquko phakathi kwethafa lase-Yúnnán-Guìzhōu, isigodi sase-Sìchuān kanye nezindawo ezinamagquma zase-Húnán. - Inhlabathi: Inhlabathi ephuzi nephuzi-nsundu (黄壤/黄棕壤, huángrǎng / huáng zōngrǎng), ene-asidi, pH 4.5–6.5. Izinga lezinto eziphilayo ≥1.0%, ubukhulu bongqimba lwenhlabathi ≥50 cm. Inhlabathi inothile ngamaminerali (okuhlanganisa i-selenium ne-zinc — okuyizici eziyisipesheli zezindawo zase-Guìzhōu), okwakha iphrofayili yamaminerali evelele yetiye.
- Imvelo: I-Guìzhōu ingesinye sezifundazwe ezinamahlathi acwebileyo eShayina. Imithombo ibonisa ukuthi i-Zūnyì Hóngchá ihlolwa izinsalela zezibulala-zinambuzane ngokwamazinga e-EU. Izibulala-zinambuzane ezingenamaseli ohlelo endaweni evikelwe ngokwezindawo ezikhethekile kufanele zihambisane nezimiso zikazwelonke zokuphepha.
5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-Zūnyì Hóngchá bumele indlela yendabuko ye-gōngfū yokukhiqiza itiye elibomvu, eyakhiwe ngokuhlanganiswa kwezindlela zase-Fújiàn (Zhènghé Gōngfū, Tǎnyáng Gōngfū, amasiko e-Jīn Jùn Méi) nezinto zobuchwepheshe base-Qímén, ezilungiselelwe izici eziyingqayizivele zezimpahla zendawo zochungechunge lwe-Qiánméi.
- Ukuvuna (采摘 — cǎizhāi): Ukuvuna ngesandla kwamahlumela asentwasahlobo yasekuqaleni namahlamvu athambile. Ebangeni eliphezulu kakhulu — ihlumela elilodwa noma ihlumela elilodwa elinekhasi elilodwa.
- Ukumbulala/Ukupholisa (摊凉 — tānliáng): Ikhasilomu elisanda kuvunwa limbulawa ngongqimba omncane ukwenza ukubuna kokuqala nokususa umswakama omningi ongaphezulu.

- Ukufakwa Komoya-mpilo/Ukubila (发酵 — fājiào): Ikhasilomu elisongiwe limbulawa ngongqimba oyi-8–12 cm; izinga lokushisa lensika yamahlamvu ligcinwa libe phakathi kuka-26–33°C amahora angu-3–5. Ekupheleni kokufakwa komoya-mpilo, ikhasilomu lithola umbala obomvu-ophuzi, iphunga lotshani lishintshwa ngokuphelele yiphunga lezimbali nezithelo.
- Ukomisa (干燥 — gānzào): Izinyathelo ezimbili: ukomisa kokuqala (毛火, máohuǒ) ku-110–120°C kuze kube umswakama ungaphansi kuka-20%, bese kupholiswa; ukomisa kokugcina (足火, zúhuǒ) ku-100–110°C kuze kube umswakama ungaphansi kuka-12%. Ukomisa okuphindwe kabili kuqinisa iphunga futhi kuvimbele ukomisa ngokweqile.
- Ukuhlukaniswa ngokwamazinga (分级 — fēnjí): Ukwahlukaniswa ngokwengxenyana, izinga lama-tips nokubukeka. Kukhishwa amabanga: aphezulu (特级, tèjí), owokuqala (一级), owesibili (二级) njll.
6. Izimpawu Zokuzwa Ngezitho Zomzimba:
- Ukubukeka kwekhasi elomile: Izintambo ezincane, ezisondekene ngokuqinile, ezifana nezinsimbi zikaphayini (松针, sōngzhēn). Umbala — onsundu omnyama onokucwebezela okunamafutha; ebusweni kubonakala ngokucacile amathiphu agolide (金毫, jīnháo). Ibanga eliphezulu kakhulu libonakala ngobuncane obukhethekile, ukufana, nenqwaba yezinwele zegolide.
- Iphunga lekhasi elomile: Elimnandi, elinethoni egqamile yezithelo nokunambitheka kwe-caramel. Iphrofayili evamile “efudumele” ye-gōngfū hóngchá.
- Iphunga lotshala: Elihlanzekile, elihlala isikhathi eside, elinamandla ezithelo agqamile — amabhilikosi avuthiwe, ama-apula abhakiwe, ubumnandi obuncane bengcosana. Ngenkathi liphola, kuvela amathoni ezimbali (i-osmanthus, i-rose yasendle). Iphunga lizinza phakathi kokugaya oku-5–7.
- Ukunambitheka: Okusha, okuphilayo, okunamanzi (鲜爽, xiānshuǎng), ngomzimba omkhulu nobumnandi obuyindilinga. Umunyuza mnene, ushintsha ngokushesha ube ubumnandi obuhlala emlonyeni (回甘, huígān). Kuvela amanothi engcosana, izithelo ezomisiwe, kanye nesinongo esincane. I-texture yotshala ibushelelezi, ifana ne-velvet. I-extract enamanzi ≥34.0%.
- Umbala wotshala: Obomvu ogqamile, ohlanzekile futhi ocacile, onendandatho yegolide (金圈, jīnquān) emaphethelweni enkomishi — uphawu lokuqukethwe okuphezulu kwama-theaflavin. Emabangeni aphezulu utshala lungaba nombala o-orange nobomvu ngokucwebezela okugqamile.
- Inkomishi yetiye (ikhasi elimanzi): Elinganayo, elithambile, elinombala obomvu-bethusi onesithunzi esiphuzi. Emabangeni aphezulu — amahlamvu aphelele, anwebekayo, ane-texture efanayo nokucwebezela okuyisipesheli.
7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol: Izinga lokuqala lama-polyphenol ezimpahleni ezingavuthiwe — liphakathi noma ngaphezulu kwaphakathi (kuyisici sochungechunge lwe-Qiánméi, ikakhulukazi i-Qiánméi 419, enesilinganiso esiphakeme kakhulu se-phenol-amino acid phakathi kwezitshalo zendawo). Ngesikhathi sokufakwa komoya-mpilo okuphelele, ingxenye enkulu yama-catechin iguquka ibe ama-theaflavin (茶黄素, cháhuángsù), akha ukucwebezela “nokuphila” kotshala, kanye nama-thearubigin (茶红素, cháhóngsù), abhekele umzimba nobushelelezi.
- Ama-Amino Acid: I-L-theanine (L-茶氨酸) — iyona amino acid eyinhloko, enikeza ukuthamba nokunambitheka okuncane kwe-“umami.” Ukuphakama kwamasimu nokukhanya okusakazekile kwase-Guìzhōu kunomthelela ekuqongeleleni okuphezulu kwama-amino acid.
- Ama-Alkaloid: I-caffeine (咖啡碱, kāfēijiǎn) — iyona alkaloid eyinhloko evuselelayo, enokuqukethwe okuvamile kwe-gōngfū hóngchá (cishe u-25–40 mg/g ekhasi elomile). Kukhona ne-theobromine ne-theophylline ngamanani amancane.
- Amavithamini: Uvithamini C (okuncane okonakaliswa ngesikhathi sokufakwa komoya-mpilo, kodwa osalokhu egcinwe ngamanani abonakalayo), amavithamini eqembu B (B1, B2), uvithamini E.
- Amaminerali: I-potassium, i-magnesium, i-calcium, i-phosphorus, i-zinc, i-manganese. Isici esiyisipesheli se-terroir yase-Guìzhōu — izinga eliphakeme le-selenium (硒, xī) ne-zinc (锌, xīn) enhlabathini, okubonakala ephrofayilini yamaminerali yetiye.
- Amafutha Abalulekile: I-linalool, i-geraniol, i-cis-3-hexenol, namanye ama-terpenoid akha iphunga eliyisipesheli lezimbali nezithelo.
- Izinkomba zomzimba namakhemikhali (ngokwezinga le-GI): Umswakama ≤6.0%; izinto ezikhiphekayo ezincibilikayo emanzini ≥34.0%.
8. Izinzuzo Zempilo:

9. Ukwenza Itiye:
- Izinga lokushisa lamanzi: 90–95°C. Emabangeni aphezulu anenqwaba yamathiphu amnene — 85–90°C, ukuvimbela ukubaba nokwambula ubumnandi.
- Inani letiye: 4–5 g ku-100–120 ml (indlela ye-gōngfū); 2–3 g ku-200–250 ml (ukunithisa okweYurophu).
- Izitsha: I-gàiwǎn (盖碗, gàiwǎn) ye-porcelain enomthamo ongu-100–120 ml — iyona nto engcono kakhulu: izinto ezingathathi hlangothi zivumela ukuhlola ngokunembile iphunga nokunambitheka. I-porcelain noma i-teapot yengilazi ifanele ukuphuzwa kweqembu. Emikhiqizweni eminyene enamahlamvu amakhulu, kuvumelekile i-teapot ye-Yíxīng (紫砂壶) eyenziwe ngobumba olukhanyayo.
- Inqubo:
- Fudumeza izitsha ngamanzi abilayo bese uwakhipha.
- Thela itiye elomile bese uphefumula iphunga lekhasi elifudunyeziwe.
- Ukugeza (uma uthanda): ukucima ngokushesha imizuzwana engu-1–2 — kubaluleke kakhulu emikhiqizweni eminyene; emabangeni amnene anama-tips, kungadlulwa.
- Ukunithisa kokuqala: 5–8 ngemizuzwana.
- Ukunithisa okulandelayo: yandisa isikhathi ngemizuzwana engu-3–5 ngakunye ukunithisa.
- Inani lokunithisa: 6–8, imikhiqizo esezingeni eliphezulu ingakwazi ukumelana nokunithisa oku-10.
10. Ukugcinwa:
