5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-Zijin Hóngchá ngokuvamile buhambisana nesikimu esijwayelekile se-gongfu hongcha, ngokuhlukahluka okubangelwa ukusetshenziswa kwezinhlobo zase-Taiwan kanye nezinto zokusetshenziswa ze-“chancha”.
- Ukuqoqwa (采摘): Kwenziwa ngesandla, ihlumela elilodwa + amaqabunga amabili. Okwe-“chancha” — ukuqoqwa okuhlosiwe kwamahlumela alinyazwe inkumbi (kubonakala ngokubuna okuyisici nokugoqa kwemiphetho yeqabunga).

- I-Fermentation / I-Oxidation (發酵): Amahora angu-3–5, ngo-25–28°C. I-fermentation egcwele. Okwe-“chancha” — i-fermentation iqala ngaphambi kwesikhathi ngenxa yama-enzyme afakwe inkumbi; lokhu kuholela ekungeneni okubushelelezi, “okungenazihibe” kwe-oxidation ngokukhiqizwa okwandayo kwezinhlanganisela ezinukelelayo zobusi nezithelo.
- Ukwomisa (烘乾): Ukusha okuphakeme, okuvamile ematiyeni abomvu ase-Guangdong. Izinga lokushisa elingu-100–110°C; limisa i-fermentation futhi “likhuphule” iphunga. Abanye abakhiqizi bahlola ukufudumeza ngamalahle (炭焙, tàn bèi), okunikeza uketshezi ukujula okwengeziwe “kwesinkwa”.

6. Izici Ze-Organoleptic:
- Ukubukeka kweqabunga elomile: Amacembe aqinile, alinganayo, anombala omnyama onsundu oya komnyama. Kwe-“chancha” — kunezindikimba ezimhlophe-ziphuzi eziyisici. Ukucwebezela okunamafutha.
- Iphunga leqabunga elomile: Lobusi, elinamanothi ezithelo ezomile ne-caramel. Kwe-“chancha” — kunephunga “lobusi” elicacile (蜜香), elikhumbuza i-Dongfang Meiren yase-Taiwan: izithelo ezivuthiwe, ubusi, i-nutmeg.
- Iphunga loketshezi: Eliqhakazile, elihlala isikhathi eside. Ubusi, izithelo ezivuthiwe (i-lychee, i-longan), izimbali. Kwe-“chancha” — kukhona “ukunukela” okukhethekile nokujula, okukhiqizwa ama-metabolite okuvikela eqabungeni letiye. Lapho uketshezi luphola, amanothi aphezulu “obusi” anikeza indawo kumanothi afudumele “njenge-caramel” “njengesinkwa”. Iphunga limelana nokuchithwa okungu-5–7 ngaphandle kokulahlekelwa okukhulu kwamandla.
- Ukunambitheka: Kucinene, kumnandi, kuyindilinga. Ubusi obumnandi obucacile (甜潤, tián rùn), ukuphuma okuncane okuthambile, “ukugeleza komphimbo” okuhle (喉韻回甘). Kwe-“chancha” — ubumnandi obuphakeme futhi akukho munyu nhlobo. I-cultivar i-Jin Xuan iletha inothi “lobisi” eliyisici, elibonakala kakhulu ekuchitheni kokuqala okubili noma kuthathu. Ukunambitheka okungemva kuhlala isikhathi eside, nobumnandi obukhulayo kanye “ne-citrus” ekugcineni.
- Umbala woketshezi: Obomvu ogqamile, ohlanzekile, obonisa ngale (紅亮, hóng liàng). “Nendandatho yegolide” emaphethelweni enkomishi emikhiqizweni ehamba phambili.
- Isigaxa setiye elingaphansi: Amaqabunga athambile, anwebekayo, anombala onsundu obomvu olinganayo.
7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol: 15–25% wesisindo esomileyo. Ama-catechin aguqulwe abe ama-theaflavin nama-thearubigin — enza umbala obomvu nokuthamba.
- Ama-Amino acid: 2–4%. I-cultivar i-Jin Xuan iphawuleka ngezinga eliphakeme lama-amino acid, okuqinisekisa ubumnandi obucacile.
- I-Caffeine: 2.5–4%.
- Izinhlanganisela ezinukelelayo (ze-“chancha”): Izinga eliphakeme lezinhlanganisela ze-terpenoid ne-indole — imikhiqizo yokusabela kokuzivikela ekulunyweni yinkumbi. Kuhlanganisa i-linalool, i-nerol, i-geraniol, i-(E)-nerolidol, i-indole kanye nochungechunge lwe-C₁₃-norisoprenoid. Yile nhlanganisela edala iphrofayili eyingqayizivele “yobusi”.
- Ushukela oncibilikayo: 3–5% — amanye aphezulu kunawo wonke phakathi kwamatiye abomvu, ikakhulukazi ezingxenyeni ze-“chancha”. Izinga eliphezulu likashukela libangelwa izici ezimbili: okokuqala, i-cultivar i-Jin Xuan ngokofuzo ithambekele ekubeni mnandi kakhulu; okwesibili, ukusabela kokuzivikela ekulunyweni yinkumbi kubandakanya ukwakhiwa okwandisiwe koshukela njengengxenye yendlela “yokwelapha isilonda” seqabunga. 8. Izakhiwo Ezinomthelela Kwezempilo:
- Ukugcwalisa amandla ngobumnene: Izinga elilinganiselwe le-caffeine lihlangene ne-L-theanine linikeza ithoni epholile, engenalo ulaka.
- Ukuvikela nge-Antioxidant: Ama-Theaflavin nama-thearubigin angama-antioxidant asebenzayo.
- Umphumela wokufudumeza: Imvelo “efudumele” ngokwe-TCM, ifanele inkathi yasentwasahlobo-yasebusika.

9. Ukuphisa:
- Izinga lokushisa kwamanzi: 90–95°C.
- Inani letiye: 4–5 g nge-100–120 ml (gongfu); 3 g nge-200–250 ml (ukugcwalisa).
- Izitsha: I-gaiwan yobumba noma iketela; ingilazi ukuze ujabulele umbala woketshezi ngokubuka.
- Inqubo:
- Ukufudumeza izitsha.
- Ukufaka itiye.
- Ukuwahlanza — ngokuthanda (ukuchitha okusheshayo imizuzwana engu-2–3).
- Ukuchitha kokuqala: imizuzwana engu-10–15.
- Ukuphinda: ukuchitha okungu-5–7, unyuse isikhathi ngemizuzwana engu-5–10.
- Ukuphawula: I-“chancha” muhle nangendlela “yase-Europe”: 3 g ngenkomishi enkulu, imizuzu engu-3–4 yokugcwalisa. Ubumnandi bobusi bubonakala ngokugcwele uma kuhlala isikhathi eside emanzini. Futhi i-Zijin Hóngchá ifaneleka kakhulu ekuphiseni okubandayo (冷泡, lěng pào): 3–4 g ngama-500 ml amanzi okushisa kwegumbi, amahora angu-4–6 esiqandisini. Umphumela — uketshezi oluqabulayo, olushelelayo olunobumnandi bobusi nobunci obuncane. Okwe-“chancha” namazinga ayo aphezulu ezinhlanganisela ezinukelelayo, ukuphisa okubandayo kuhle kakhulu: izinga lokushisa eliphansi linciphisa ukukhishwa kwama-tannin, kodwa kugcine iphunga “lobusi”.
10. Ukugcinwa:
- Isitsha: Esivalwa kahle, esingabonisi. Ikhanisithini yesigubhu, isikhwama esine-foil.
- Izimo: 10–25°C, umswakama kufinyelele ku-60%, kude nephunga.
- Isikhathi sokuphila: Izinyanga ezingaba ngu-12–24 ukunambitheka okuhle kakhulu.
- Ibhulukwe akudingekile inqobo nje uma kuvalwe kahle.
11. Intengo Nokugwema Imikhiqizo Yomgunyathi:
I-Zijin Hóngchá iyitiyi esigabeni esiphakathi nendawo noma esiphezulu e-Guangdong. Okuvamile — 200–600 yuan/500 g; i-“chancha” yeprimiyamu — 800–2,000 yuan; amalothi aqoqwayo avela emapulazini adumile (Wudunshan, Chenglongzhang) — kufinyelele ku-3,000+ yuan.

12. Amaqiniso Athakazelisayo:
