- Ukuvunwa: Ukuvunwa kwasentwasahlobo (u-March–April) — kubalulekile kumaqoqo asezingeni eliphezulu, lapho umbala we-anthocyanin ubukhali kakhulu. Iqabunga lasehlobo-ekwindla lisetshenziselwa itiye elibomvu kanye namaqoqo axubile. Ukuvunwa kwasebusika nakho kungenzeka (冬片, dōngpiàn) kumaqoqo athambile anomkhawulo.

4. I-Terroir kanye Nezici Zokutshalwa:

- Ubunzululwazi bezolimo: Izinhlobo ezinamacembe ansomi zizwela kakhulu ekucindezelekeni (ukomiswa ngokweqile, imimoya enamandla, ukukhanya kwelanga okuqondile), ngakho ezindaweni ezisezingeni eliphezulu kusetshenziswa ukutshala okuvikelayo (izihlahla zomthunzi), ukumboza ngezinto eziphilayo, nokuthena okulawuliwe. Inkampani i-«Xiāohè Gǔdào» isebenzisa amazinga okukhiqiza ahlanzekile ngokwemvelo; ububanzi bezivande zetiye eziluhlaza nezokuphila e-Hezhou bufinyelela ku-9.58 万亩 (≈6 387 ha).
5. Ubuchwepheshe Bokukhiqiza:
Ukubaluleka kwe-Hèzhōu Zǐchá kuse-«kwimvelo ephindwe kabili»: ngakolunye uhlangothi — ukusha nobumsulwa besitayela esiluhlaza, ngakolunye — ukujula okuyi-berry-fruity kwesibomvu. Ubuchwepheshe bukhethelwa iphrofayili yesitayela efiselekayo.
5.1. Isitayela esiluhlaza (绿茶工艺, lǜchá gōngyì)

5.2. Isitayela esibomvu (红茶工艺, hóngchá gōngyì)

- Ukomiswa (干燥, gānzào): Ngokuthamba, emazingeni okushisa angu-90–100 °C, ukuze kuqiniswe iphunga futhi kumiswe i-oxidation.
5.3. Isitayela esimhlophe (itiye elimhlophe, 白茶工艺, báichá gōngyì)
Amaqoqo alinganiselwe: ukubuna ngokunonotshisisa emini/emthunzini (amahora angu-48-72) ngaphandle kwe-shaqing noma ukusongwa, ukomiswa kokugcina emazingeni okushisa aphansi. 6. Izici Ze-Organoleptic:
6.1. Isitayela esiluhlaza
- Ukubukeka kweqabunga elomile: Imicu esongekile enombala oluhlaza okotshani omnyama enokucwazimula okunsomi okubonakalayo; ekukhanyeni okuthile kubonakala ukucwazimula okufana ne-«plum».
- Iphunga leqabunga elomile: Izimbali (okuhlotshaniswa ne-orchid, i-lilac), nenothi elincane le-berry kanye nobusha be-green pea.
- Umbala wotshwala: Kusuka koluhlaza okotshani okuncane kuye koluhlaza okotshani okusagolide; kwamanye amaqoqo kungabonakala ukucwazimula okuncane okubomvana emaphethelweni enkomishi — uphawu olubonakalayo lwezinto zokusetshenziswa ze-anthocyanin.
- Umnandi: Umusha, onomsoco, nobumnandi obuthambile kanye nobukrakra obuncane, obudlula ngokushesha. Ingxenye ye-umami igqama ngenxa yamazinga aphezulu e-L-theanine.
- I-aftertaste (回甘, huígān): Yinde, inenkumbulo ye-«berry» noma ye-«flower», umuzwa wobumsulwa obusha emlonyeni.
6.2. Isitayela esibomvu
- Ukubukeka: Imicu emnyama esongeke ngokuqinile enokucwazimula okuthusi; iqabunga likhulu kunohlobo oluhlaza.
- Iphunga: Uju, izithelo ezomisiwe (i-apricot eyomisiwe, i-prune), ubumnandi be-caramel, isinongo esincane.
- Umbala wotshwala: I-amber, ejulile futhi ekhanyelayo.
- Umnandi: Oqinile, onesizinda soju nezithelo, ubumnandi obuthambile, kanye nokwakheka okuvelvety.
- I-aftertaste: Yinde, inamaphunga e-apula elibhakiwe ne-caramel.
6.3. Isitayela esimhlophe
- Otshwala: Ophuzi okhanyayo onokucwazimula okuncane okubomvana.
- Umnandi: Omnene, o-«creamy», nobumnandi bezimbali kanye nokwakheka okungenasindo.
7. Ukwakhiwa Kwamakhemikhali:
Iphrofayili yamakhemikhali ye-Hèzhōu Zǐchá inqunywa ngokuyinhloko amazinga aphezulu ngokungajwayelekile ama-anthocyanins, okuhlukanisa kumatiye ajwayelekile aluhlaza nabomvu.
- Ama-Anthocyanins (花青素, huāqīngsù): Uphawu olubalulekile lwamatiye ansomi. 8. Izakhiwo Eziwusizo:
- Ukusebenza kwe-Antioxidant: Ama-Anthocyanins anekhono elibonakalayo lokudambisa ama-radicals akhululekile (izinhlobo ze-oxygen ezisebenzayo). 9. Ukugcweliswa Kwezitsha:
Kunconywa amanzi athambile anamaminerali alinganiselayo (i-TDS 50–150 mg/l), ukuze kugqame amaphunga amnene e-floral-berry.
9.1. I-Gongfu (ngoprolu, 功夫泡法)
- Ukufudumeza izitsha ngamanzi abilayo.
- Ukulayisha: 5–6 g nge-100 ml (isitayela esiluhlaza) noma 5–7 g nge-100 ml (isitayela esibomvu).

9.2. Ukugcweliswa kwezitsha nge-teapot/nge-mug (大壶泡法)
- 2–3 g nge-200–250 ml, 80–85 °C (isitayela esiluhlaza) / 90 °C (isitayela esibomvu), imizuzu emi-2–3.
- Ungagcwalisi ngokweqile: ubukrakra obubangelwa ukuhlala isikhathi eside bufihla iphrofayili encane ye-berry.
9.3. Ukugcwalisa ngamanzi abandayo (冷泡法, lěng pào fǎ)
- 5 g nge-500 ml amanzi abandayo (ezinga lokushisa legumbi noma avela esiqandisini), amahora ama-4–8. Kwenza kuvele kahle amaphunga ezimbali nezithelo, futhi kunikeza otshwala obumangalisayo obunokucwazimula okubomvana.
