- Izici ze-ikhosistimu yezolimo: Amasimu etiye ngokwesintu ahlanganiswa nokutshalwa kwe-tung yamafutha (油桐树, yóutóng shù), okudala ukufiphala kwemvelo. 5. Ubuchwepheshe Bokukhiqiza:
Itiye lase-Zhengzhai esimeni salo esiyinhloko se-ulong lihlanganisa izici zezikole zase-Fujian ezisenyakatho nezaseningizimu, ngokuthambekela okucacile esikweni lase-Minyan. - Ukuvunwa / 采摘 — cǎizhāi: Amahlumela avunwa ngendlela “yeqabunga elivulekile” (开面采, kāimiàn cǎi) ngesikhathi se-Guyu (谷雨), lapho ihlumela eliphezulu selivuleke ngokuphelele. Ukuvunwa kwenziwa ngesandla, izinto ezingavuthiwe zilethwa efemini ngamabhasikidi oqalo, kugwenywa ukucindezelwa nokushisa ngokweqile.
- Ukubuna / 萎凋 — wěidiāo (晒青 — shàiqīng + 凉青 — liángqīng): Iqabunga lendlalwa ngongqimba omncane kumathreyi oqalo (竹帘, zhúlián). Isigaba sokuqala — ukubunisa elangeni (晒青, shàiqīng), okuqala ukuphelelwa amandla kwamanzi futhi kusebenze ama-enzyme. Iqabunga libe selihanjiswa liye ekamelweni elinomoya opholile “ukuphumula okupholile” (凉青, liángqīng). Esimeni sezulu esiguqubele kuvumeleke ukubunisa okufudumele (加温萎凋, jiāwēn wěidiāo).
- Ukwenza i-qing / 做青 — zuòqīng (摇青 — yáoqīng + 凉青 — liángqīng): Isigaba esiyinhloko, esakha umlingiswa wohlelo. - Ukumisa / 杀青 — shāqīng: Ukufudumeza e-wok aphindwe kabili (双锅, shuāng guō) ngezinga lokushisa elingu-180–200°C. - Ukusonteka nokujikijela / 包揉造型 — bāoróu zàoxíng: Ubuciko obuyingqayizivele “bokusonteka okufudumele ngokuhlanganiswa” (温包揉, wēn bāoróu): iqabunga lihlanganiswa ngendwangu kakotini (棉布, miánbù) bese kwenziwa izinhlamvu eziqinile ngokusonteka nokucindezela okuphindaphindiwe. 6. Izimpawu Zokunambitha Nokuhogela:
Ikhadi lokuhlonza le-Zhengzhai Chá — ifomyula ethi “okuluhlaza kathathu, ukuphelela okune” (三绿四绝, sān lǜ sì jué): ukubonakala kwangaphandle — okuluhlaza okusamahlumela, umhluzo — okuluhlaza okunjenge-jade, isisekelo setiye — okuluhlaza okuyimbali; ukuphelela okune: iphunga eliphakeme, ukunambitheka okugcwele, umbala we-jade kanye nokuqina ekuphindaphindweni kokuphisa.
- Ukubonakala kwangaphandle kweqabunga elomile: Uhlobo lwe-ulong — amacembe amakhulu, anenyama, asonteke ngokuqina abe isimo esiyi-spiral, anombala ophilayo omnyama ohlaza okotshani. Uhlobo oluluhlaza — amahlumela aqinile aqondile. Phezu kweqabunga kubonakala ukucwebezela okuncane, okufana nosilika (叶面似”绸缎面”, yèmiàn sì “chóuduàn miàn”).
- Iphunga leqabunga elomile: Inothi eliyinhloko — i-orchid (兰花香, lánhuā xiāng), ehlanzekile, ephakeme futhi ehlabayo. Amathoni angaphansi e-pitshi-nectarine (水蜜桃, shuǐmìtáo) kanye ne-longan (桂圆, guìyuán). Ngokuguga isikhathi eside kuvela amathoni e-honey nestili sezihlahla zokwelapha (蜜香, mìxiāng; 药香, yàoxiāng).

- Umbala womhluzo: Uhlobo lwe-ulong — umbala ogqamile we-amber (金黄清澈, jīnhuáng qīngchè), okhanyelayo futhi okhanyayo. Uhlobo oluluhlaza — oluhlaza okotshani njenge-jade (碧绿明亮, bìlǜ míngliàng).
- Isisekelo setiye (iqabunga eliphisiwe): Amacembe anenyama, abuthakathaka, avuleke ngokuphelele anomphetho obomvu ocacile emaphethelweni (红边明显, hóngbiān míngxiǎn). Ukuthungwa kuthambile, kucwebezela. Umbala usuka ekuluhlaza okusamahlumela kuye ekuphuzi kothusi kuya ngezinga le-oxidation nokushiswa.
7. Ukwakheka Kwamakhemikhali:
Itiye lase-Zhengzhai lehluka phakathi kwama-ulong ngokuqukethwe okuphakeme ngokwedlulele kwama-polyphenolic compound, okuhlobene ngqo nendawo yalo: inhlabathi ebomvu nephuzi yasezintabeni ecebile nge-ayini ne-zinc, ubufu obude kanye nokwehluka okukhulu kwezinga lokushisa phakathi kobusuku nemini.
- Ama-Polyphenol: Ukuqukethwe ama-polyphenol etiye (茶多酚, chá duōfēn) ezintweni ezingavuthiwe zasentwasahlobo kufinyelele ku-37.04% — okuyizinga elirekhodiwe phakathi kwama-ulong. Ingxube isekelwe ama-catechin: i-epigallocatechin gallate (EGCG), i-epicatechin gallate (ECG), i-epigallocatechin (EGC) ne-epicatechin (EC).
