1. Ukuhlukaniswa Nomsuka:

2. Umlando Nokubaluleka Kwamasiko:
- Umlando: I-Zhenge iyindawo endala yetiye enyakatho yeFujian. Emithonjeni yesifunda, imvamisa kugcizelelwa ukuxhumana kwesifunda nokuthunyelwa kwemigwaqo futhi nokuqashelwa komthetho wezihenyane. Okubalulekile ukuthi: isiko lanamuhla letiye elimhlophe lapha lakhula kanye nokukhula kwamasiko asekhaya amakhulu amaqabunga nokushintshwa kwendlela yokuphela kwamanzi evumelana nesimo sezulu esibandayo nesinomswakama wasezintabeni.
- Igama:

- Okuzwakala enkomishini: kumatii aphumelelayo kuvame ukuvela imbali ebonakalayo, futhi ekuvuthweni — ukujula okumnene okunamakha nezitshalo.
5. Ubuchwepheshe Bokukhiqiza:

- Ukomisa (干燥): ngokwemvelo noma ngezinga lokushisa eliphansi. Ukushisa ngokweqile kunikeza amanothi okuthosiwe nokonakala.
- Ukuhlunga/ukukala: kubaluleke kakhulu ezigabeni zamahlumela.
- Ukucindezela (uma kudingeka): ingxenye yetiye elimhlophe lesifunda ikhishwa icindezelwe — lokhu kulungele ukugcinwa nokuvuthwa.
6. Izimpawu Zokuzwa (Oganoleptiki):
- Iqabunga elomile: ezigabeni zamahlumela — izinaliti ezinesiliva ezinoboya; ku-Bai Mu Dan — amaqabunga amabili acophelelayo; ku-Shou Mei — iqabunga elikhulu neziqu.
- Iphunga: kuvame ukuba yimbali kakhudlwana (izimbali ezimhlophe, umkhakhasi), nemibala yoju ne-fresh hay; ekuvuthweni — izitshalo ezomile, ubumnandi boju.
- Ukunambitha: kumnene futhi kuyindilinga, ngokuvamile kunomuzwa wokuthi “kuqinile” uma kuqhathaniswa nezindleko eziphezulu zaseFuding ezilula. Ubumuncu buvela lapho amanzi eshisa kakhulu noma uma itiye liwele isikhathi eside.
- Umhluzo: usuka kolumhlophe ofana notshani uye kokusagolide, ekuvuthweni — usayinaphi.
- Ukunambitheka ngemuva: kuhlala isikhathi eside, kumnandi, nobucayi obuncane obunamaminerali.
7. Ukwakheka Kwamakhemikhali:
Itiye elimhlophe linconywa ngenxa yokwaphulwa ngobuchule: impahla eluhlaza ayiphathwa kabi futhi ayithintwa ukushisa, ngakho-ke emhluzweni kugcinwa kahle izakhi zendalo zeqabunga.
- Polyphenols (kuhlanganise nama-catechin): kwakha umthamo we-antioxidant nobucayi obuncane.
- Amino acids (kuhlanganisa no-L-theanine): zibhekelela ubumnandi, ubumnene nomsindo “we-umami”.
- I-Caffeine: imvamisa isebenza kancane kunasezinyemi eziluhlaza nasemnyama, kodwa izinga lincike engxenyeni yamahlumela nobusha beqabunga.
- Amakhemikhali anamakha: etiyeni elincane anikeza imibala yezimbali zasendle, i-hay entsha, i-apula eliluhlaza; ekuvuthweni ashintsha abe uju, izithelo ezomile nezitshalo.
- Ama-pektin noshukela oncibilikayo ngamanzi: andisa “ubushelelezi” nokuzungeza kokunambitha (ikakhulukazi ezinhlobonhlobo ezinengxenye enkulu yamaqabunga neziqu).
8. Izinzuzo Zezempilo:
Itiye elimhlophe ngokwesiko lithathwa njengeziphuzo ezithulisa umzimba ngobuncane ezinomthamo omkhulu we-antioxidant. Ngesikhathi esifanayo, itiye aliyona muthi, futhi noma yiziphi “izithako zokwelapha” ezichazwa emibhalweni yokumaketha kufanele zibhekwe ngokuhlolisisa.

- Ukwesekwa kwe-antioxidant: ama-polyphenols asiza ukunciphisa ukucindezeleka kwe-oxidative.

- Umlomo: ukuphuza itiye njalo kungasiza ukugcina inhlanzeko ngenxa yesakhiwo se-polyphenol.
Izithiyo:
- uma uzwelana ne-caffeine kungcono ungaphuzi itiye elimhlophe ebusuku kakhulu;
- ngezifo zesisu kanye nokukhulelwa kubalulekile ukuhlela isikhathi sokusebenzisa nodokotela.
9. Ukuphisa:

Izinga lokushisa lamanzi: 75–90 °C (lapho amahlumela anobumnene obuningi — izinga lokushisa liba phansi).

Imithamo: 4–6 g ku-150–200 ml we-gaiwan / iketela; ngenkomishi kungenziwa 2–3 g ku-200–250 ml.

Imvamisa yokuphuza: qala ngemizuzwana eyi-10–20, bese wandise isikhathi kancane. Itiye elimhlophe elisezingeni eliphezulu likwazi ukumelana nemivamisa engu-5–8.

Izitsha: i-porcelain / ingilazi. Ingilazi ilula uma ufuna ukubuka ukuvuleka kweqabunga.

Indlela ebalulekile: itiye elimhlophe “lithanda umoya” — ungesabi ukuphefumula itiye elimisiwe endishini eshisi kusenesikhathi ngaphambi komvamisa wokuqala.
**Indlela ebalulekile yamatiya ase-Zhenge:** ngenxa yeqabunga "elinzima" nokujwayela ukuvuleka okujulile, amanye amatiya enza kahle kuma-85–90 °C noma ezigabeni ze-Bai Mu Dan.
10. Ukugcinwa:
Itiye elimhlophe liyazizwela ngomswakama namaphunga angqamileyo.

Izitsha: ezivaleka ngokuphelele (ibhodlela, isikhwama esine-zip-lock / isikhwama esiyifoyili), ngaphandle kwezinto “ezinamakha”.

Isimo: kome, kuphole, kumnyama, ngaphandle kokushintsha kwezinga lokushisa.

Indawo enikwe yona: hlukanise nezikhalazo, ikhofi, izinsimbi.

I-Fridge: kungenzeka kumatii amnene kakhulu (ikakhulukazi anamahlumela amaningi), kodwa kuphela lapho kuvalekile kahle, uma kungenjalo itiye lizothatha amaphunga nomswakama ngokushesha.
**Ukuvuthwa:** itiye elimhlophe lase-Zhenghe futhi livuthwa kahle; kuyathakazelisa ukubona indlela amanothi ezimbali ashintsha abe isimo soju nezipayisi.
11. Intengo Nokwakhiwa Okungamanga:
Entengweni yetiye elimhlophe okunomthelela omkhulu kakhulu izinga lempahla eluhlaza, ukuqoqa ngezandla, izimo zesimo sezulu zesizini, udumo lomkhiqizi nobumsulwa bomvelaphi (idolobhana / intaba ethile).
Ubungozi obujwayelekile:
- ukushintshwa kwempahla eluhlaza (ngokwesibonelo, “izinaliti ezinesiliva” ezivela emahlumelweni amabi noma esifundeni esahlukile);
- ukufakwa kwamakha (uma itiye linuka “njengamakha”, i-vanilini noma izithelo ezigqamile — kuyisigaba sokuhlola);
- ukomiswa ngokweqile / ukuthoswa ngokweqile (kufihla ukulimala kwempahla eluhlaza, kunikeza amanothi okuthosiwe nokonakala);
- izinganekwane zokumaketha esikhundleni semininingwane ecacile: unyaka wokuqoqa, isifunda, uhlobo lwesihlahla, ubuchwepheshe.
Okusizayo ekukhetheni:
- imininingwane ekhanyayo ngempahla eluhlaza nesifunda;
- iqabunga elomile liphelele, ngaphandle kothuli namaqoshi;
- iphunga elimsulwa ngaphandle kokubola ne-”yaphendle” (ngokwamatiya avuthiwe — amanothi anzima okhuni-nezitshalo amukelwa, kodwa hhayi isikhunta).
12. Amaqiniso Athakazelisayo:
- Isilinganiso semvelaphi yendawo se-Zhenge (GB/T 22109-2008) sibeka imiqondo, ukuhlukaniswa kanye nezidingo — lokhu kuyisiqondiso esibalulekile sokuhlonza ubungcweti.
- Emivivinyweni yokunambitha kuvame ukuqhathaniswa izithwathwa Fuding vs Zhenghe: amatiya aseFuding avame ukuthathwa njengabambala futhi amnandi, kanti amatiya ase-Zhenghe — njengabambala futhi aqinile. Lokhu akuwona umthetho, kodwa umkhuba, oxhomeke kakhulu enyakeni nasemthethweni.
- Kwabaqalayo, indawo enhle yokuqala kuvame ukuba yi-Bai Mu Dan: ikhombisa isitayela sesifunda, ilingana futhi icacile.
13. Ukuqhathaniswa nesikole setiye elimhlophe saseFuding:
Ukuqhathaniswa kwamaphuzu amabili amakhulu etiye elimhlophe e-Fujian kulula ukwakha ngezindlela ezintathu:
- Indawo: I-Fuding ivame ukutholakala njengoba inothile kakhulu, i-Zhenge — inesihlabathi esiningi.
- Amakha: e-Fuding (ikakhulukazi kumatii amancane amahlumela) kuvame ukuba nobumnandi obumsulwa nezitshalo ezikhanyayo; e-Zhenge kuvame ukuba nezimbali nobujululi boju.
- Ubujamo: izimpahla zase-Zhenghe zinganikeza umhluzo oqinile, ikakhulukazi ku-Bai Mu Dan nasezinhlobeni ezivuthiwe.
Kuhle kakhulu ukuqhathanisa unyaka owodwa kanye nesigaba esifanayo (ngokwesibonelo, i-Bai Mu Dan yesizini efanayo kanye nezinga lempahla eluhlaza).
14. Amaphutha Ekuphisweni Nasekugcinweni:
Kungakhathalekile ukuthi itiye elimhlophe lisezingeni eliphezulu, lingenziwa libe yinhliziyo ngezandla ezimbi.
- Amanzi ashisa kakhulu ezinhlobeni ezimnene: amatiya angamahlumela (ikakhulukazi i-Yin Zhen) asemanzethini ashisa kakhulu alahlekelwa imbalo futhi anikeza ubumuncu obunamandla.
- Umvamisa wokuqala omude: itiye elimhlophe liyavuleka kancane; kungcono ukwenza imivamisa emifishane nokwandisa isikhathi.
- Ukungashisisi kahle kumatii avuthiwe nacindezelwe: ngakolunye uhlangothi, itiye elimhlophe elidala nokucindezela okuqinile kuvame ukudinga u-95–100 °C, uma kungenjalo ukunambitha kuba yinto engenalutho.
- Ukugcinwa eduze kwamaphunga: itiye elimhlophe lithatha “umoya” wekhikhini, iziqholo kanye nezinto ezihlanzayo ngokushesha.
- Ukudideka kokuthi “okusha vs okuvuthiwe”: ukulindela “izitshalo zentwasahlobo” etiyeni elidala kuyiphutha; inani lalo likujusi, izithelo ezomile nobunzima obumnene.
Uma ukunambitha kubonakala kungenalutho — zama:
- ukwandisa umthamo ngo-1–2 g;
- ukukhuphula izinga lokushisa ngo-5 °C (noma, ngakolunye uhlangothi, ukwehlisa amatiya amahlumela);
- ukunciphisa isikhathi somvamisa wokuqala nokwenza imivamisa eminingi elandelanayo.
15. Ukucindezela Nokuvuthwa:
Itiye elimhlophe lingenye yamatiya ambalwa ase-China atholakala kakhulu futhi engenamuntu futhi ecindezelwe (amakhekhe, izitini).
Kungani kucindezelwa itiye elimhlophe
- Ukulandeleka kokugcina nokuthutha: umthamo omncane, amaqoshi amancane.
- Ukuvuthwa okuhleleke ngendlela efanayo: ekucindezelweni itiye liguga kancane futhi imvamisa “lihlangene” ngokwengeziwe, ngoba iqabunga alithintani kangako nomoya.
- Ukunambitha: ekucindezelweni kuvame ukuba nokuqina okungathi “yi-compote” nokuncipha kwamanothi aphezulu acijile.
Ayinamuntu vs acindezelwe — okumele kukhethwe
- Ayinamuntu ilungile uma ufuna ukunambitha okuningi manje (ikakhulukazi amatiya angamahlumela nasafresh).
- Acindezelwe kulula uma uhlela ukugcina, ukuvuthwa, ukupheka noma ukuphuza itiye njalo ngezindlela ezinkulu.
Indlela yokuhlukanisa itiye ekhekheni ngendlela efanele
- sebenzisa ithuluzi lomese we-chaiji omncane / umkhele futhi usebenze ngeendlalelo, ungakwazi ukuguqula itiye libe wuthuli;
- uma ukucindezela kuqinile kakhulu, vumela liphefumule “ukuphumula” ngemuva kokuvula iphakheji izinsuku ezi-1–2 endaweni engenamswakama nethezekile — iqabunga lizoba nolwazi;
- zama ukugcina izingcezu ezinkulu: kanjalo ukunambitha kuzoba sekucacile futhi kube mnene.
Kubalulekile: ukucindezela akwenzeki ngokuzenzakalelayo “kwenza itiye libe ngcono”. Uma impahla eluhlaza noma ukugcinwa kuyimbi, ikhekhe elinezindela lizogcina inkinga nje.
16. Itiye lishintsha kanjani ngokuhamba kwesikhathi:
Ukuvuthwa kwetiye elimhlophe akudingeki kube “amashumi eminyaka”. Ngisho nasezimeni zasekhaya izinguquko ziyaqapheleka kusenesikhathi.
0–12 izinyanga (okuthiwa “Xin Cha”)
- kuhlasela izimbali, utshani obusha, i-hay;
- umhluzo ukhanyile;
- kungcono izinga lokushisa eliphephile nemivamisa emifishane (ikakhulukazi nge-Yin Zhen).
1–3 iminyaka
- ukuhlazeka kusha kuba kuncane;
- kuvela uju, ikhasi lezithelo;
- ukunambitha kugcwala, kuncipha ubumuncu obuqhakile.
3–7 iminyaka (okuvamise ukuthi imakethi ikubize ngokuthi “Lao Cha”)
- umhluzo ufiphala ngokubonakalayo ube usagolide-oluhlaza;
- kukhula umugqa wezithelo ezomile, kuvela amanothi ezitshalo nezipayisi;
- izigaba zamaqabunga (Shou Mei) ziba yinto “enjenge-compote” ikakhulukazi.
7+ iminyaka
- isimo siba sesishisayo futhi sijulile: izitshalo ezomile, ukuhamba kwekhuni, idate / i-raisin;
- itiye livame ukuba lilungele ukuphekwa.
Isimo esisodwa: ukugcinwa okomile nokungabikho kwamaphunga. Ekugcinweni okumanzi, “iminyaka” iguqula ibe iphutha (isikhunta / i-acidi).
17. Ungazikhetha kanjani izimpahla ezisezingeni eliphezulu:
Ekukhetheni itiye elimhlophe kuyasiza ukuqonda kusengaphambili, yisiphi isitayela osifunayo: “ubumsulwa bentwasahlobo” (Xin Cha) noma ubujululi boju nezithelo ezomile (okuvuthiwe). Emva kwalokho — hlola izimpahla njengomkhiqizo onemvelaphi, hhayi njengenganekwane enhle.
1) Hlola imininingwane yokuqala
- Unyaka nesizini: itiye elimhlophe liyisiphuzo sesizini. “Intwasahlobo” kuvame ukuthi iphunga lincane, “ihlobo / ikwindla” — likhulu futhi linesitshalo.
- Isifunda nomkhiqizi: kwi-classic yaseFujian kubalulekile i-Fuding / Zhenge kanye nedolobhana / idolobhana elithile. Ezifundeni ezintsha — indawo ethile yokutshala.
- Isigaba sempahla eluhlaza: I-Yin Zhen / Bai Mu Dan / Gong Mei / Shou Mei (noma okufana nako). Lokhu kuyiqiniso ngaphezu kwento efana “ne-premium”.
2) Hlola iqabunga elomile
- Ukuqina: amaqoshi awincane nothuli, ingxenye encane ehlelekile.
- Ukufana: usayizi nombala olinganayo kungumkhwa wokuhlunga okuzinzile.
- Iphunga: limsulwa, ngaphandle “kwephansi”, umswakama, amakhemikhali, namakha acijile.
3) Ukuhlola okusheshayo emhluzweni
- Ukukhazimula komhluzo: itiye elimhlophe elihle livame ukunika umhluzo omsulwa, ongadidekile.
- Ukunambitheka ngemuva: kufanele kube mnandi futhi kuhlale isikhathi, ngaphandle kwe-acidi emibi “nokungcola”.
4) Ngamatiya amhlophe avuthiwe (Lao Cha)
- buza / ubuke ukuthi itiye beligcinwe kanjani (komile, ngaphandle kwamaphunga);
- gwema izimpahla ezinesikhunta, i-acidi, ukubola — lokhu akuyona “inothi yokwelapha”, kodwa iphutha lokugcina.
Umgomo omkhulu: kungcono ukukhetha itiye elinendabuko ecacile nephunga elimsulwa, kunetiye “elidala kakhulu” elinendaba efiphele.
18. Amanzi Nezitsha:
Izinga lamanzi nezitsha kubonakala ngokukhethekile etiyeni elimhlophe: lithambile, futhi noma yiziphi izinto ezingadingekile zivela ngokushesha.
Amanzi
- Amanzi athambile noma anomthamo omaphakathi wezinto zomzimba ngokuvamile asebenza kahle kakhulu. Amanzi aqine kakhulu “abopha” ubumnandi futhi enza umhluzo ube mnene ngokweqile, futhi amanzi antula izinto zomzimba kakhulu anganikeza “ubuthaka”.

3) Isikhathi
- qala ngemizuzwana eyi-10–20, bese wandisa;

4) Lapho ukupheka kufanele
