2. Umlando kanye Nokubaluleka Kwezamasiko:

3. Incazelo Yezitshalo kanye Nezinto Ezisetshenziswayo:
- Uhlobo / I-cultivar: I-Bā Xiān Chá (八仙茶, Bāxiān chá) — i-cultivar yohlobo lwe-clone ye-Camellia sinensis var. sinensis, uhlobo “isihlahla esincane, amaqabunga amakhulu” (小乔木大叶类, xiǎo qiáomù dàyè lèi). I-cultivar kazwelonke ye-wulong, ikhodi GS1302-1994. Ifakwe “eNcwadini Yezinhlobo Zezitshalo Zetiye ZaseChina” (《中国茶树品种志》). Izici zezitshalo: isitshalo side, sinesimiso sezimpande esinamandla; sihluma kusenesikhathi entwasahlobo, singena ebuthongweni sekwephuze ebusika; siyakwazi ukukhiqiza kakhulu amagatsha, amagatsha akhula ngokushesha, izindawana eziphakathi kwamagatsha zinde. Ubulembu obusezimpumputheni bufushane futhi buzinzele, izimpumputhe zincane uma kuqhathaniswa, iziqu zezimpumputhe zincane. - Ukuvuna: Izikhathi eziyinhloko — intwasahlobo (Ephreli–Meyi) kanye nekwindla (Septemba–Oktoba). Izivuno zasehlobo (Juni–Julayi) kanye nasekupheleni kwekwindla/“ukusikwa kwasebusika” (冬片, dōngpiàn) nakho kuyenziwa; itiye lasehlobo nelasebusika linconywa ngephunga elimnandi kakhulu. Ngenxa yokuvuka kusenesikhathi kwe-cultivar, ukuvuna kwentwasahlobo kuqala ngaphambi kwesikhathi kunasezityeni eziningi ze-wulong zaseFujian.
- Izinga lokuvuna: Ihlumela eli “nobuso obuvulekile obuphakathi nendawo” (中开面, zhōng kāimiàn) — kusukela kumpumputhe wesiqongo esesigabeni sokuphumula kanye namaqabunga amabili ukuya kwamane avulekile (一芽二叶至三叶, yī yá èr yè zhì sān yè, kuze kufike eqabungeni lesine ukuze kube nomzimba ogcwele).
- Izidingo zezinto ezisetshenziswayo: Ihlumela eliphelele elinamaqabunga avuthwe ngokulinganayo, ngaphandle kokulimala kwemishini, iphunga elingalungile noma ubugqinsi obeqile. Okuqukethwe yi-polyphenol yetiye ezintweni ezisetshenziswayo zasentwasahlobo — okungenani u-25%, ama-amino acid — okungenani u-4.0%.
4. Indawo Yendawo Nezinto Ezikhethekile Zokutshala:
- Isifunda nokuma komhlaba: Isifunda sase-Zhao’an siseningizimu impela ye-Fujian, ekuhlanganeni nesifunda sase-Raoping (饶平, Guangdong). Ukuma komhlaba kunzima: kusukela ezintabeni eziwuchungechunge enyakatho-ntshonalanga (indawo ephakeme kakhulu — isiqongo se-Longshandong (龙伞岽), 1,152 m) kuya endaweni enezingqungqulu ephakathi nendawo kuye ethafeni elisogwini eningizimu-mpumalanga, elibheke e-Zhao’an Bay. Izintaba ezingaphezu kuka-1,000 m zifaka phakathi i-Wushan (乌山), i-Baxianzuoshan (八仙座山), i-Xishanyan (西山岩) nezinye. - Inhlabathi: Ikakhulukazi inhlabathi ebomvu-ophuzi ye-laterite (红黄壤, hóng huáng rǎng), pH 4.5–6.0, okuqukethwe yizinto eziphilayo ≥ 6.01%. Isici esibaluleke kakhulu se-Zhao’an — ukunotha kwenhlabathi nge-selenium: cishe u-78% wezindawo uqukethe u-0.15–0.35 mg/kg we-selenium, okuvumela isifunda ukuthi sibe nesicoco “I-Selenium Capital of the Strait” (中国海峡硒都). 5. Ubuchwepheshe Bokukhiqiza:
I-Zhàoān Bā Xiān ikhiqizwa ngobuchwepheshe be-wulong yase-Minyingnan ngezinto ezihambele ezimweni eziqondile ezenzelwe izici ze-cultivar enamacembe amakhulu. - Ukuvuna / 采摘 — cǎizhāi: Kuvunwa amahlumela avuthwe ngokuphakathi (中开面) — amaqabunga amabili kuya kwamane kusukela kumpumputhe wesiqongo. Izinto ezisetshenziswayo zihanjiswa ngokushesha endaweni yokusebenzela, kugwenywa ukushisa ngokweqile nokulimala kwemishini.
- Ukufinyela elangeni / 晒青 — shàiqīng: Iqabunga lendlalwa ngokulinganayo ngongqimba oluwubisi phezu kwamathileyi omhlanga noma indwangu ekhethekile. Isikhathi sokwenza imizuzu engu-15–30; izinga lokushisa lomhlaba weqabunga akufanele lidlule ku-35 °C. Iqabunga lilahlekelwa ingxenye enkulu yomswakama (ukulahleka kwesisindo 10–15%), libe nokunwebeka, umsebenzi we-enzyme uqalwe. Kwi-Bā Xiān kusetshenziswa indlela yokufinyela “kanzima” (重晒青, zhòng shàiqīng) — eqine kakhulu kunandlela ejwayelekile ye-Tiě Guānyīn, ehlomisa isisekelo se-enzyme sokwakheka kwephunga kamuva.
- Ukunyakazisa nokuphumula / 做青 — zuòqīng (摇青 — yáoqīng + 晾青 — liàngqīng): Ukushintshanisa okungu-3–5 emjikelezweni wokunyakazisa kweqabunga ngomshini kanye nezikhathi zokuphumula esikhathini esingamahora angu-14–18. - Ukuqinisekisa / 杀青 — shāqīng: Ukushisa emgqonyeni ojikelezayo emazingeni okushisa angu-240–280 °C isikhathi esiyimizuzu engu-6–8. Kuyekisa izinqubo ze-enzyme, kuqinise indlela yephunga. Iqabunga liba nombala oluhlaza omnyama, libe lithambile, isiqu asiphuki lapho sigoqwa, kuvele iphunga eli “liphekwe” (熟香, shú xiāng).
- Ukusonga / 揉捻 — róuniǎn: Ukusonga isikhathi esiyimizuzu engu-5–6 ngokwenyusa umfutho kancane kancane. Iqabunga lisonga libe yizintambo ezinzima, izinga lokusonga okungenani lingu-90%. Ukucekelwa kwesakhiwo samaseli kukhulisa ukukhishwa.
- Ukumisa kokuqala / 初烘 — chūhōng: Izinga lokushisa 120–140 °C, isikhathi esiyimizuzu engu-6–8, ubukhulu bongqimba cishe bu-1 cm. 6. Izici Zezitho Zomzimba:
- Ukubukeka kweqabunga elomile: Imixhumo esonge ngokuqinile, enesisindo esinzima (条索紧结重实, tiáosuǒ jǐnjié zhòngshí) — ukusonga okubheke ubude, okuyinto ejwayelekile kumawulungu ase-Minyingnan; umbala umnyama-olivi onokukhanya okunamafutha nokukhanya okuphuzi okuncane okunjengoju (乌褐油润带蜜黄). - Iphunga leqabunga elomile: Liphakeme, lihlaba futhi liqinile (高锐持久, gāo ruì chíjiǔ). Kugqama iphunga elikhanyayo lobunjalo besihlahla (品种香), elihambisana ne-orchid note (兰花香, lánhuā xiāng) emabangeni aphezulu, kanye namanotsi okusanda kuhluma nohlaza ohlanzekile okumnandi. - Iphunga lomunyu: Livuleka ngegagasi elinamandla lephunga lobunjalo besihlahla, elishintshela ku-orchid-floral register; ekuphiseni okulandelayo ubumnandi boju bukhuphuka. Ezinhlotsheni ezigazingwe ngamalahle — ama-overtones amantongomane ne-caramel, kwezivuthiwe — amanotsi ezithelo ezomile.
- Ukunambitheka: Kuminyene futhi kunothile (浓厚, nóng hòu), nokugcwala okuhloniphayo (粘稠感, niánchóugǎn). Ithoni entsha, ekhuthazayo (鲜爽, xiānshuǎng) inikezwa wukuqukethwe okuphezulu kwama-amino acid. Ukunambitheka okubuyela emuva okukhanyayo (回甘, huígān) nobumnandi obufana noshukela womhlanga, buhlala isikhathi eside. Isici se-cultivar — ubuhlungwana obuncane emizuzwini yokuqala, obuguquka ngokushesha bube ubumnandi (微苦速化, wēi kǔ sùhuà). 7. Ukwakheka Kwamakhemikhali:
- Ama-polyphenols: Okuqukethwe yi-polyphenol yetiye ezintweni ezisetshenziswayo ezintsha zasentwasahlobo — okungenani u-25% (ngokwezinga GH/T 1236-2018). Ingxenye eyinhloko — ama-catechin (EGCG, ECG, EGC, EC); enqubweni yokufaka i-oxygen okuncane, ingxenye yama-catechin ishintsha ibe yi-theaflavin ne-thearubigin, yakha inhlanganisela yokusha nobujalo ejwayelekile kumawulungu.
