6. Izici Zesitho Somzimba:

10. Ukugcinwa:
- Izimo: Ukupakishwa okuqinile (i-vacuum noma isikhwama se-zip esine-foil), ukuvikelwa emswakama, amaphunga angajwayelekile, ukukhanya okuqondile nokushisa. Izinga lokushisa elifanele — ikamelo elibandayo nelomile (elingaphezu kuka-25 °C).
- Isikhathi: Izinhlobo ezigazwe ngamalahle zigcinwa isikhathi eside kunezilula (kuze kufike eminyakeni engu-2-3 ngaphandle kokulahlekelwa okukhulu kwekhwalithi uma zigcinwe kahle). Amaqhubhu e-«qingxiang» (清香, qīngxiāng) alula kufanele aphuzwe phakathi nezinyanga eziyi-6–12.
- Isici esikhethekile: Ngemva kokuvulwa kwephakheji, itiye linconywa ukuthi liphuzwe phakathi kwezinsuku eziyi-7, ngoba izithako eziphunga eziphaphathekayo ziyaphela ngokushesha. Ukupakishwa kwephepha kwendabuko kwe-Zhangzhou Factory (iphepha le-bamboo elimhlophe + i-kraft) kunikeza ukumuncwa komoya okulingene, okufanele itiye elihloselwe ukuphuzwa ngokushesha.
- Izitha zetiye: Umswakama, izinga lokushisa eliphezulu, amaphunga angajwayelekile, ukukhanya kwelanga okuqondile.
11. Intengo Nezinganekwane:
- Isigaba sentengo: Ngokomlando, i-Sè Zhǒng ibekwe njenge-oolong yansuku zonke efinyeleleka kalula — «intengo yabantu ngokwekhwalithi yobungcweti». Izindleko ziyahlukahluka kuye ngebanga (kusukela kwelesithathu kuya kwelikhethekile), isikhathi sokuvunwa, unyaka wokukhiqizwa kanye nomkhiqizo wemboni. Intengo yemikhiqizo yokuqala yemboni ihlala iphakathi uma iqhathaniswa nama-oolong ohlobo olulodwa esigabeni se-«premium» (i-Tieguanyin yamabanga aphezulu, ama-Wuyishan yan cha).
- Indlela yokugwema izinganekwane:
- Thenga kubathengisi abakwazi ukuqinisekisa umdabu: uphawu lwemboni, ikhodi yokuthekelisa yochungechunge oluthi «S2xx», ubukhona bophawu lokuhweba oluthi «Zhishan» (芝山牌) noma «Xiazhang» (霞漳牌).
- Hlola ukufana kweqabunga elomile: i-Sè Zhǒng esezingeni eliphakeme ibonakala ngokulinganisa ngokulinganayo kanye nombala ohlaza njengesihlabathi olinganayo; ukungafani ngobukhulu nombala kukhombisa impahla eluhlaza yezinga eliphansi.

- I-Zhangzhou Tea Factory yayingenye yezinhlangano ezintathu kuphela e-Shayina eyayine-«nombolo yokumaka» yokuthekelisa (唛号, mà hào) yama-oolong — ilungelo elilinganiswa nalezo zezimboni ze-puer e-Menghai ne-Xia Guan.
- Ukupakishwa kwesandla kwendabuko kwe-Sè Zhǒng nge-liang eyodwa (50 g) ephepheni kusagcinwa nanamuhla: abasebenzi besifazane abathathu kuya kwabane, behleli etafuleni, bagoqa iphakethe ngalinye ngemizuzwana engamashumi amathathu — isigqi esingashintshanga iminyaka engaphezu kwengxenye yekhulu.

13. Izinhlobo Namabanga e-Zhāngzhōu Sè Zhǒng:
I-Sè Zhǒng ihlukaniswa ngezizathu ezimbili: ngokwe-cultivar evelele enhlanganisela kanye nangebanga lomkhiqizo oqediwe.
Ngokwe-cultivar:
- U-Huangjingui / Huangdan (黄金桂 / 黄旦): Ama-spiral asongwe kahle, iphunga elinobumnene elifana nezimbali zesihlahla se-cinnamon (桂花, guìhuā), ukunambitheka okusha nokuvuselelayo.
- U-Maoxie (毛蟹): Amahlumela aminyene anezinwele ezimhlophe ezibonakalayo (白毫, báiháo), iphunga le-jasmine elinethunge elincane lesithelo, ubumunyu obuncane obujabulisayo.
- U-Benshan (本山): Amahlumela aqinile, ngokuma afana nezindondo ze-bamboo, iphunga eliseduze ne-Tieguanyin, kodwa elinobumnene obukhulu.
- U-Qilan (奇兰): Amahlumela amancane acijile, iphunga elihlanzekile nelephakeme le-orchid, umzimba olula.
- U-Meizhan (梅占): Amahlumela aqinile futhi akhulile, iphunga elijiyile elinenothi leziqhumiso eziwumugqa (线香香, xiànxiāng xiāng), ukunambitheka okugcwele nokunothile.
Ngokwebanga (ngokusho kwe-DB35/T 943‑2009, izinkomba zesitho somzimba):
- Ibanga Elikhethekile (特级, tèjí): Amahlumela asongwe aqine, asesimweni se-spiral; umbala uluhlaza njengesihlabathi unokucwebezela okunamafutha. Iphunga elihlanzekile, eliphakeme, eline-orchid egqamile. Ukunambitheka okusha, 醇厚 (chunhou), okumnandi nokuvuselelayo.
- Ibanga Lokuqala (一级, yījí): Amahlumela asongwe aqine, aluhlaza njengesihlabathi. Iphunga elihlanzekile. Ukunambitheka okugcwele emzimbeni ngokwanele.
- Ibanga Lesibili (二级, èrjí): Amahlumela asongwe ngokulingene, anethungi eliluhlaza elincane. Iphunga elilingene, elingelide kangako. Ukunambitheka okulinganayo.
- Ibanga Lesithathu (三级, sānjí): Amahlumela asongwe, ansundu ngokucwebezela. Iphunga elincane. Ukunambitheka okusenothile, kodwa nokunokhahlo oluncane.
14. Ukuqhathaniswa Namanye Ama-Oolong Ase-Minnan:
- I-Anxi Tieguanyin (安溪铁观音, Ānxī Tiěguānyīn): I-oolong yohlobo olulodwa evela e-Anxi ene-«guanyin yun» (观音韵) yokuqaphela. I-Sè Zhǒng iwumkhiqizo oyinhlanganisela ovela e-Zhangzhou, ohlanganisa ama-cultivar ahlukile kune-Tieguanyin. Ukunambitheka kwe-Sè Zhǒng kunobuningi ngenxa yokuhlanganiswa, kodwa akumhlophe kangako ngokomqondo wohlobo olulodwa.
- I-Yongchun Foshou (永春佛手, Yǒngchūn Fóshǒu): I-oolong enamacembe amakhulu evela e-Yongchun enephrofayili ye-citrus-bergamot. Ngokungafani nayo, i-Sè Zhǒng incike esixheni sezimbali nezithelo sezinhlobo eziningana futhi inesimo esi-«linganayo» ngokwengeziwe.
- I-Pinghe Bai Ya Qilan (平和白芽奇兰, Pínghé Bái Yá Qílán): I-Qilan yohlobo olulodwa evela e-Pinghe, enye yezingxenye zenhlanganisela ye-Sè Zhǒng. Njengetiye elizimele, ikhombisa iphunga elimsulwa le-orchid; kusakhiwo se-Sè Zhǒng, isimo sayo siyanezelelwa futhi si-«ncindezelwe» amanye ama-cultivar.
- I-Liu Xiang (流香, Liú Xiāng): Umkhiqizo «ongudadewabo» we-Zhangzhou Factory efanayo. Njengokujwayelekile, ubekwe esigabeni sentengo ephezulu futhi ungaba nezabelo zenhlanganisela ezahlukile, kepha isisekelo sobuchwepheshe siyefana.
- I-Yi Zhi Chun (一枝春, Yī Zhī Chūn): Umhlanganyeli wesithathu wabathathu bendabuko base-Zhangzhou. Ihluke ngeresiphi yayo yenhlanganisela; ngesitayela iseduze ne-Sè Zhǒng, kodwa ingagqamile ngokugxilwa okwehlukile kwephunga.
Ekuphetheni:
I-Zhāngzhōu Sè Zhǒng — itiye lapho ubungcweti bomhlanganisi bulingana nendawo (terroir) ne-cultivar. Ayilweli ukuhlaba umxhwele ngobumsulwa bokuhlobo olulodwa, njenge-Tieguanyin, futhi ayifuni irekhodi lendali — ukufaneleka kwayo kukwenye indawo: iyi-oolong eqotho, ezinzile, enobuningi, lapho enkomishini ngayinye kuzwakala ikhorasi lamatiye amaningana ase-Fujian, ahlanganiswe ngesandla sochwepheshe wobuchwepheshe. Umpelekezi o-orenji-ophuzi onephunga lezimbali elihlanzekile, ukunambitheka okugcwele emzimbeni nokumnandi okubuyayo — ungumngane ofanelekile wokuphuzwa kwe-gongfu cha okunganeme. Kulabo abafuna i-oolong yangempela yase-Minnan ngaphandle kokukhokha ngokweqile ngegama elikhulu, i-Sè Zhǒng isalokhu ingenye yezinto ezivulwayo ezingcono kakhulu emhlabeni wetiye lase-China.
