5. Ubuchwepheshe Bokukhiqiza:

  • Ukwakhiwa kwesampula yokuqhathanisa / 人工拼样 — réngōng pīnyàng: Ingcweti yakha ngesandla isampula yokulawula enquma isitayela seqoqo.
  • Ukusefa ngesandla / 手工筛分 — shǒugōng shāifēn: Ukuhlukanisa amacembe ngosayizi nangokuma.
  • Ukulahla / 拣剔 — jiǎntī: Ukukhipha iziqu, imithambo namacezu anezici.
  • Ukuhlanganisa (guandui) / 官堆 — guānduī: Isigaba esibalulekile. 6. Izici Zokuzwa:

Ukushiswa ngamalahle kusiza ukusabela kwe-Maillard kanye nokucaramelization, kukhiqize izinhlanganisela ze-furan, i-pyrazine ne-pyrrole, ezinesibopho “senothi lomlilo”. Ama-terpene alcohols asalayo (i-linalool, i-nerol, i-geraniol) anikeza isendlalalo samakha ezimbali.

9. Ukuphisa:

  • Izinga lokushisa lamanzi: 95–100 °C. Amanzi ashisayo adingeka ukuze kwembulwe ngokugcwele iphunga “lomlilo” nomzimba ogcwele we-oolong eshisiwe. Akunconywa amanzi abilayo ngaphezu kuka-100 °C — lokhu kungonakalisa ama-oberton amancane okushiswa ngamalahle.

  • Inani letiye: 5–8 g ku-100 ml (indlela ye-gongfu), noma 3–4 g ku-200–250 ml (indlela yaseYurophu).

  • Izitsha: I-gaiwan (盖碗, gàiwǎn) eyenziwe nge-porcelain noma itiye lezitsha zobumba lase-Yixing (紫砂壶, zǐshā hú). Itiye lezitsha zobumba linconywa ikakhulukazi ezinguqulweni ezindala (陈年, chénnián) zika-Liu Xiang — isakhiwo sezimbotshana zobumba sikhulisa ukuvezwa “kwephunga elidala” futhi sinikeze umxube ubuvelveti obengeziwe.

  • Inqubo:

    6. Izidlede eziphindaphindwayo: 6–10 okuphisa. Ngaso sonke isidlede khulisa ubude besikhathi ngemizuzwana engu-5–10. Izinhlobo eziphakeme ziba nezidlede eziphelele ezingu-8–10.
  • Qaphela: Itiye elisanda kushiswa linconywa ukuthi ligcinwe endaweni emnyama izinsuku ezingaba ngu-15 ngaphambi kokuphuzwa, ukuze kuphele “ukushisa komlilo” okweqile (火气, huǒqì). 10. Ukugcinwa:

  • Izimo: Ukupakishwa okuvaleka ngokuphelele, indawo eyomile nemnyama, kude nemithombo yokushisa namaphunga angajwayelekile. Izinga lokushisa elifanele lokugcina liyi-15–25 °C, umswakama — ungabi ngaphezu kuka-60 %.
  • Isitsha: Ibhodlela likathayela elinesivalo esiqinile, isikhwama se-vacuum noma ukupakishwa kwasekuqaleni kwephepha kwefemu. Iziqukathi zobumba (陶罐, táoguàn) nazo ziyakwazi.
  • Izitha zetiye: Umswakama, izinga lokushisa eliphezulu, amaphunga angajwayelekile, ukukhanya okuqondile, umoya-mpilo.
  • Isikhathi sokugcina: Ama-oolong ashisiwe angolunye lwezinhlobo zetiye eziqinile kakhulu. Uma kugcinwe kahle, i-Liu Xiang igcina ikhwalithi iminyaka engu-2–3, kanti izinguqulo ezindala (陈年, chénnián) ngeminyaka zizuza amanothi angeziwe “ephunga elidala”, uma nje kwenziwa ukushisa kabusha ngezikhathi ezithile.

11. Intengo Nemikhiqizo Engamampunge:

    • Intengo ephansi kakhulu lapho kuthiwa izinga liphakeme kufanele ikuxwayise.

12. Amaqiniso Anentshisekelo:

  • Ifemu Letiye LaseZhangzhou iwukuphela kwefemu emine emikhulu kahulumeni yama-oolong yaseFujian eyasinda kuze kube namuhla. Amanye amathathu avaliwa ngesikhathi sezinguquko zemakethe.

13. Ukuqhathanisa Namanye Ama-Oolong:

  • I-Wuyi Shuixian (武夷水仙, Wǔyí Shuǐxiān): I-oolong yamadwala enengxenye eyodwa evela kulona hlanganisela, kodwa ngaphandle kokuhlanganiswa nokwengezwa kweMinnan.
