- I-cultivar / Uhlobo: Uhlobo lwesi-Yúnnán olunamahlamvu amakhulu Camellia sinensis var. assamica (云南大叶种, Yúnnán dàyè zhǒng). Emithambekeni ye-Wúliàng Shān kukhula kokubili amasimu atshaliwe kanye nezihlahla zetiye ezingaphandle nasendle (古树, gǔshù; 野生, yěshēng) ezineminyaka esukela emashumini ambalwa kuya emakhulwini ambalwa. 4. Indawo kanye Nezici Zokulima:
- Isifunda: Izintaba ze-Wúliàng Shān zisukela enyakatho ziye eningizimu cishe amakhilomitha angu-83, zihlukanisa imifula i-Láncāng Jiāng (Mekong) ne-Bājiāng (把边江). Lena indawo yokuhlangana kwezindawo ezishisayo nezifudumele enezindawo eziphakeme ezihlukene.

- Inhlabathi: Inhlabathi ene-acidic ebomvu-ephuzi (红黄壤, hóng huáng rǎng) ene-pH engu-5.0–5.5 kanye neqophelo eliphezulu le-humus (≥ 4%). Kukhona ukuba khona kwe-selenium (kufinyelela ku-0.24 mg/kg). Iqophelo eliphezulu lama-polyphenols ezintweni ezingavuthiwe zaseYúnnán ezinehlamvu elikhulu liqinisekisa ukwakhiwa okukhulu kwama-theaflavins nama-thearubigins. Izinga le-oxidation emaqoqweni ase-Wúliàng Shān lingafinyelela ku-80–85% ngama-catechins, okuphakeme kunesilinganiso se-Diānhóng futhi kwakha iphrofayela elicindezelwe kakhudlwana, “eligcwele”.
- Ukomisa (干燥, gānzào / 烘干, hōnggān): Ukomisa okushisayo okujwayelekile (烘干) ukuze kulungiswe iphrofayela. Ezinye izindawo zokusebenzela zenza izilingo ngokomisa ngelanga (晒干, shàigān), zikhiqiza lokho okubizwa ngokuthi “shàihóng” (晒红) — itiye elibomvu elinamandla okuguga, kodwa i-Wúliàng Hóng Chá yendabuko iwukona “hōnggān” (烘干), elinambitheka lihlanzekile, elizinzile.
- Ukuhlukanisa (精制, jīngzhì): Ukuhlukanisa ngezingxenye, ukukhetha amabanga amahlumela nawo wonke amaqabunga aphelele.
6. Izici Zezitho Zenhliziyo:

- Iphunga lotshwala: Emachazelweni okuqala — amanothi agqamile ezimbali noju. - Ukunambitheka: Kugcwele, kunamafutha, ‘nobukhulu’ obugqamile (ukungqina). Ubumnandi bemvelo — uju-caramel, obungakhungathekisi. Isakhiwo esinesilinganiso se-tannin esingaguquki ekubeni ubabayo obudabukisayo. Ukunambitheka okusemsileni kude, kufudumeza, kunamanothi ezithelo ezomisiwe kanye nobuncane bamaminerali. - Umbala wotshwala: Obomvu-osawolintshi, ogqamile futhi ojulile, ‘nomphetho osagolide’ oyingqayizivele (金圈, jīn quān) ezindongeni zenkomishi — okubonisa izinga eliphezulu lama-theaflavins. Ezindongeni ezigxilisiwe kungenzeka umkhuba we-«lěnghòuhún» (冷后浑, “ukufiphala ngemuva kokuphola”) — uphawu lwezinga eliphezulu letiye elibomvu.
- Isisekelo setiye (iqabunga elenziwe): Amaqabunga amakhulu, anwebekayo anombala we-copper obomvu. Amahlumela aphelele avuleka ngokugcwele, ekhombisa ukuthamba nobuhle bezinto ezingavuthiwe.
7. Isakhiwo Samakhemikhali:
- Ama-Polyphenols: Ingqikithi eqoqweni lama-polyphenols eqabungeni elisha — 28–38% (elinye lamazinga aphezulu kakhulu emazweni etiye omhlaba ngenxa yohlobo lwe-assamica olunamahlamvu amakhulu). Etini elibomvu eliqediwe, ama-theaflavins (TF, ~0.8–1.5%) nama-thearubigins (TR, ~8–14%) ayabusa. Izinga eliphezulu lama-polyphenols libangela umbala ogcwele kanye ‘nobukhulu’ botshwala.
- Ama-Amino Acids: i-L-theanine — cishe 1.2–2.0 mg/g. Iqophelo lama-amino acids liphansi kunasemacultivars “aluhlaza” anamahlamvu amancane, kodwa lanele ukwakha ukunambitheka okumnandi okungemva nokusebenzisana ne-caffeine.
- Ama-Alkaloids: I-Caffeine — cishe 3.0–3.5% (ikhuphuke uma iqhathaniswa namatiye abomvu anamahlamvu amancane). I-Theobromine ne-theophylline — ngamanani amancane.

- Izinhlanganisela ezinuka kamnandi eziguqukayo: I-Linalool nama-oxide ayo (amanothi ezimbali), i-geraniol (amathoni erozi), i-methyl salicylate (umthunzi “oluhlaza wasebusika”), i-furfural (amanothi e-caramel). Inothi eliyingqayizivele “lamazambane amnandi” (薯香) lihlobene nokwakheka kwe-maltol ne-cyclotene ngesikhathi sokomisa izinto ezingavuthiwe ezinamahlamvu amakhulu.
- Isici Esikhethekile: Izinto ezingamanzi ezikhishwayo zamatiye aseYúnnán anamahlamvu amakhulu zifinyelela ku-46–50%, okuphakeme kakhulu kunamatiye abomvu anamahlamvu amancane (38–42%). Lokhu kuqinisekisa ukwehlisa okuningi nokukhuthazela kwetiye.

9. Ukwenza Itiye:
- Izinga lokushisa lamanzi: 90–95°C. Amanzi abilayo (100°C) afanele amaqoqo aminyene asekwindla; kumagreyidi amahlumela asentwasahlobo athambile, kungcono ukusebenzisa 88–92°C.
- Ubuningi betiye: 5–7 g ku-100–150 ml (indlela ye-gōngfu chá); 3–4 g ku-200–300 ml (isitayela saseYurophu).
- Izitsha: I-gàiwǎn (盖碗) — ukuze kwembulwe ngokugcwele amaphuzu amahle ephunga. I-porcelain teapot — ukuthola iphrofayela ethambile, “eyindilinga”. I-Yíxīng teapot (宜兴紫砂壶) — ukuze kuqiniswe “ubukhulu” nokujula.
- Inqubo:
- Shisisa izitsha ngamanzi ashisayo.

10. Ukugcinwa:
- Iziqukathi: Ezivalekayo, ezingabonisi — amathini ensimbi, izikhwama ze-vacuum ezinocingo, iziqukathi ze-ceramic.
- Izimo: Indawo eyomile emnyama, 15–25°C, umswakama ongadluli ku-60%. Gwema ukuhlala eduze kwemikhiqizo enephunga elinamandla.
- Isikhathi sokuphila: I-Diānhóng ejwayelekile (hōnggān) ingcono ukuphuzwa phakathi kwezinyanga ezingu-12–24. Amaqoqo asezingeni “ayindilinga” ngemva kweminyaka emi-2–3 yokugcinwa okufanele, ethola amanothi agqamile we-caramel kanye nokhokela. Izinguqulo ze-shàihóng (晒红, ukomiswa ngelanga) zinamandla okuguga isikhathi eside (3–5+ iminyaka), ngokufana ne-shēng pǔ’ěr.

- Ungabaza izimangalo zezinto ezingavuthiwe “zesihlahla” ngentengo yetiye lamasimu — imakethe ye-“gǔshù” yetiye elibomvu ihlaselwa kakhulu ukukhwabanisa.
12. Amaqiniso Athakazelisayo:
- Izintaba ze-Wúliàng Shān ziyingxenye yendawo lapho u-Fán Chuò (樊绰), isazi seTang, ngo-863 aqopha khona okokuqala ukukhulunywa ngetiye laseYúnnán emsebenzini wakhe othi «Mánshū»: “Itiye lizalwa ezintabeni ezizungeze idolobha lase Yínshēng” (茶出银生城界诸山). Lobu ubufakazi bokubhalwa obudala kunabo bonke bokukhulunywa ngetiye eYúnnán.
- Ezintabeni ze-Wúliàng Shān kusakhula isihlahla setiye sasendle esineminyaka engaba ngu-2700 — esinye sezibonelo ezindala kakhulu ezaziwayo zetiye emhlabeni kanye nobufakazi obuyisisekelo bokuthi iYúnnán iyisizinda semvelaphi yesihlahla setiye.
- U-Féng Shàoqiú, umsunguli wokuchwepheshe be-Diānhóng, ngesikhathi esuka e Dàlǐ eya e Fèngqìng ngo-1938 weqa izintaba ze-Wúliàng Shān ngezinyawo — uhambo lwezinsuku eziyishumi ngeNdlela Yamahhashi Yetiye Yakudala. - Iphunga eliyingqayizivele le-“shǔ xiāng” (薯香, “amazambane amnandi”) le-Diānhóng yaseYúnnán — isici esiyingqayizivele esingekho kumatiye abomvu aseMpumalanga China. 13. Ukuqhathaniswa Namanye Amatiye Abomvu:
- I-Diānhóng yase-Fèngqìng (凤庆滇红, Fèngqìng Diānhóng): I-Diānhóng yendabuko “eyisilinganiso”. Ikhiqizwa ezindaweni eziphansi (1200–1600 m), ikakhulukazi ngezinto ezingavuthiwe zamasimu. “Inamandla” kakhudlwana, ne-“shǔ xiāng” (薯香) egqamile namanothi kashokoledi nopelepele. I-Wúliàng Hóng Chá — ihle kakhudlwana, inokuphakama okuningi kwezimbali kanye namaminerali endawo yezintaba eziphakeme.
- I-Jīnjùnméi (金骏眉, Jīnjùnméi): Itiye elibomvu lamahlumela laseFújiàn elivela e Tóngmù (桐木关). Lihle ngokwedlulele, lilula, linamahlumela ezimbali noju. “Linciphile” kakhulu ngomzimba. I-Wúliàng Hóng Chá — “inobukhulu” kakhudlwana futhi inamafutha ngenxa yezinto ezingavuthiwe ze-assamica ezinamahlamvu amakhulu.
- I-Qímén Hóngchá (祁门红茶, Qímén Hóngchá): I-gōngfu hóngchá enamahlamvu amancane yase-Ānhuī enephunga eliyingqayizivele “le-orchid”. Ilula, intofontofo, inesakhiwo se-tannin esihle kakhudlwana. I-Wúliàng Hóng Chá — iyaphikisana “ngesigaba sesisindo”: icindezelwe, igcwele, “eyaseningizimu” ngokwemvelo.
- I-Shàihóng yase-Jǐnggǔ (景谷晒红, Jǐnggǔ Shàihóng): Itiye elibomvu elomiswe ngelanga elivela esifundeni esingumakhelwane, elinamandla okuguga. Alibiliswa ngokuphelele (70–80%), linamathoni “aluhlaza” kancane, amuncu kancane. I-Wúliàng Hóng Chá (hōnggān) — iyinto “yendabuko” kakhudlwana, izinzile futhi inokuvumelana.
- I-Ānshùn Pùbù Hóngchá (安顺瀑布红茶): I-gōngfu hóngchá yaseGuìzhōu enezinto ezingavuthiwe ezinamahlamvu aphakathi nendawo. Ilula kakhudlwana, intofontofo, inamaminerali e-karst. I-Wúliàng Hóng Chá — “isindayo” kakhudlwana futhi imnandi, “inamandla” aseYúnnán avela eqabungeni le-assam.
14. Izimo Ezingaba Khona Zokungahambisani:
- Ukungahambisani komuntu siqu nezingxenye zetiye.
- Iqophelo eliphezulu le-caffeine (≈ 3.0–3.5%) kufanele licatshangelwe ngabantu abanokuzwela kwi-caffeine, umfutho wegazi ophakeme, ukushaya kwenhliziyo okusheshayo (tachycardia), izinkinga zokukhathazeka kanye nokuphazamiseka kokulala. Akunconywa ukuphuza i-Diānhóng eqinile ebusuku.
- Iqophelo eliphezulu lama-tannins lingadala ukungakhululeki kubantu abane-Irritable Bowel Syndrome noma i-gastritis uma bephuza ngesisu esingenalutho.
- Akunconywa ukuphuza itiye eliqinile ngesikhathi sokukhulelwa noma lapho uncelisa ngaphandle kokubonisana nodokotela.

Ekuphetheni:
I-Yúnnán Wúliàng Hóngchá — itiye elibomvu elazalwa lapho kuhlangana khona umlando weminyaka eyinkulungwane wasendle kanye nobuchwepheshe be-Diānhōng beminyaka engamashumi ayisishiyagalombili. Izintaba “Ezingenakulinganiswa” ziyingxenye yesizinda sesihlahla setiye somhlaba, izwe lapho itiye lalikhona khona esikhathini eside ngaphambi kokuba umuntu afunde ukulicubungula. Indawo yezintaba eziphakeme ye-Wúliàng Shān, izinto ezingavuthiwe ze-assamica ezinamahlamvu amakhulu kanye nokubuna okuthambile, “okupholile” kwakha itiye elibomvu “elinobukhulu” obugqamile kanye kanyekanye nobuhle bezimbali — enye indlela ehlukile ephucukile kune-Diānhóng yase-Fèngqìng kulabo ababalisa ukulingana kwamandla nomusa enkomishini. Leli itiye lezikhathi zokuphuza itiye ezingaphuthumiyo, eliklomelisa ukunaka ngephrofayela eliyinkimbinkimbi, eliguqukayo lisuka kokunye liya kokunye.
