4. I-Terroir Nezici Zokulinywa:

  • IsiQhingi iJūnshān (君山岛): Isiqhingi esincane esinendawo engamakhilomitha-skwele angu-0.96 kuphela engxenyeni esentshonalanga yeChibi iDòngtíng, esinendawo ephakeme kakhulu engamamitha angu-63.5 ngaphezu kogu lolwandle. 5. Ubuchwepheshe Bokukhiqiza:

I-Yuèyáng Huáng Yá ikhiqizwa ngobuchwepheshe obuyingqayizivele ‘bokubila kabili nokomiswa okuqondisiwe’ (双闷黄 + 定向烘焙, shuāng mèn huáng + dìngxiàng hōngbèi), okuyinto entsha yabalimi betiye base-Yuèyáng futhi ethathwa njengohlelo lokuqala eShayina lokubiliswa okulawulwayo kwezigaba ezimbili kwetiye eliphuzi. Umjikelezo ophelele uchazwa ngefomula ‘ukubila kathathu — ukoma kathathu’ (三闷三烘, sān mèn sān hōng). Isikhathi esiphelele sokulungiswa sibalelwa emahoreni angaba ngu-72.

  • Ukukhandwa (杀青, shā qīng): ‘Ukubulala uhlaza’ — ukushisa ebhodweni ku-180–220°C ukuze kungasebenzi ama-enzyme futhi kumiswe ukuvela kwe-oxidation. Amagula athola umbala oluhlaza ngokumnyama, athambe futhi aqale ukuncipha.
  • Ukubila kokuqala / i-mèn huáng (初闷, chū mèn): Isigaba esiyinhloko.   • Ukuhlukanisa ngokwezigaba (分级, fēnjí): Itiye eselilungile lihlukaniswa ngosayizi, ukumila, nombala wamagula. Isilinganiso sithathwa njengamagula amakhulu, aqondile, aphuzi ngokulinganayo anoboya obuningi.

  • Ukubukeka kweqabunga elomile: Isimo ‘samagula egolide asemngceleni we-jade’ (金芽玉叶, jīn yá yù yè): amagula makhulu, aqondile, aqinile, ambozwe kakhulu uboya begolide (金毫密披).   • Umbala woketshezi: I-xìng huáng (杏黄) — ‘ophuzi okwamabhilikosi’, osobala, onokubengezela kwe-amber, ofana noju oluwuketshezi uma ukhanya. Ukhanya kakhulu futhi uhlanzekile kunalowo wetiye eliphuzi elijwayelekile lase-Yuèyáng (olihluka ukusuka kokuphuzi okwamabhilikosi kuye kokuphuzi okusawolintshi).
  • Isisekelo setiye (iqabunga eliphekiwe): Liphuzi ngokuthathelisa, likhanya ngokulinganayo (嫩黄匀亮). Amagula avuleka ahlangane abe ‘yizimbali’ ezincane, ezifana nezimbali ze-magnolia (芽叶成朵如玉兰). Ku-Yuèyáng Huáng Yá, isisekelo setiye sithambile kakhulu futhi ‘siqoshwe kahle’ kunasetiyeni eliphuzi elijwayelekile lase-Yuèyáng, lapho amaqabunga akha inqwaba eyisicaba.

7. Ukwakheka Kwamakhemikhali:

  • Ama-amino acid: Okuqukethwe kungu-≥ 4.2% wesisindo esomile — kuphakeme kakhulu kunesilinganiso setiye eliphuzi lase-Yuèyáng (3.8%). I-L-theanine iyingxenye ehamba phambili, enikeza ubumnandi, i-umami, nomphumela wokuphumula othambile. Izinga eliphezulu libangelwa ukwanda kokukhanya okusabalalisiwe (>80% okuvela ebusweni bechibi), okucindezela ukuguqulwa kwe-theanine ibe ngama-catechin nge-photosynthesis.
