Ukubukeka kwalo — «okumnyama nokumhlophe»: uhlangothi olumnyama lwangaphandle lweqabunga kanye nohlangothi lwangaphakathi olusiliva — enye yezimpawu zalo ezibonakalayo.
1. Ukuhlukaniswa Nemvelaphi:
- Uhlobo: Itiye lohlobo olumhlophe (elibilayo kancane). Kumkhakha wobungcweti, ngokuvamile luhlukaniswa njengamatiye amhlophe aseYunnan, nakuba ngezinye izikhathi kugcizelelwa ukuthi yona «indlela yaseYunnan» ephakathi kokumhlophe namasiko endawo.
- Isigaba: Amatiye amhlophe aseYunnan (云南白茶, Yúnnán Báichá); futhi kutholakala igama «Yue Guang Mei Ren» (月光美人) — «Umuhle Wenyanga».
- Imvelaphi: I-China, isifundazwe saseYunnan (云南, Yúnnán). Ukukhiqizwa kwenzeka ezifundeni ezahlukene (ngokuvamile kukhulunywa ngePu’er nezindawo eziseduze), lapho kutholakala khona izinto zokusetshenziswa ezinamaqabunga amakhulu.

4. I-Terroir Nezici Zokutshala:

5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-Yueguang Bai bufana netiye elihlobana nokumhlophe, kodwa izici ezincane zibangelwa amahlamvu amakhulu kanye nesimo sezulu.
- Ukuvuna: ngokucophelela, kungcono uma kusemfuleni owomile.
- Ukubuna: ngokuvamile emthunzini/endlini lapho kungenwa umoya omuhle, ngezinye izikhathi kunesigaba esifushane selanga esithambile. Inhloso — ukwehlisa umswakama ngobumnene nokwakha iphunga elimnandi ngaphandle kokushisa ngokweqile.
- Ukomiswa: okunobumnene, ukuze kugcinwe ukuhluka kweqabunga kanye nokuhlanzeka kwephunga elimnandi.
- Ukuhlunga: ukuhlela ngokwezilinganiso.
- Ukucindezela (okungakhethwa): I-Yueguang Bai ivame ukucindezelwa ibe amaqebelengwane — lokhu kulula ukuze kugcinwe nokuvuthwa. Ekucindezeleni, ukunambitheka kuba mnandi futhi kufane «necompote».
6. Izici Zokuzwa:

7. Ukwakheka Kwamakhemikhali:
I-Yueguang Bai ihlanganisa izici ezivamile zetiye elimhlophe nezici ezikhethekile zezinto zokusetshenziswa zaseYunnan ezinamahlamvu amakhulu.
* **Ama-polyphenol nezinhlanganisela ezinukele kahle:** anikeza ubunzima bezithelo nezinyosi.
* **Ama-amino acid:** asekela ukuthamba nobumnandi.
* **I-caffeine:** izwakala ngokuthamba, kodwa ezintweni zokusetshenziswa zaseYunnan «amandla» esiphuzo angaba sobala kakhulu, ikakhulukazi uma kusetshenziswa umthamo ophezulu namanzi ashisayo.
Itiye elimhlophe likalwa ngenxa **yokucutshungulwa kwalo ngokucophelela**: izinto zokusetshenziswa azicishe zibe nomthelela wokusebenza ngomshini noma ukushisa, ngakho-ke izakhi zemvelo zeqabunga zilondolozwa kahle kanzima.
- Ama-polyphenol (kuhlanganise nama-catechin): akha amandla okulwa nokugqwala kanye nobukhazikhazi obulula.
- Ama-amino acid (kuhlanganise ne-L-theanine): abhekene nobumnandi, ukuthamba kanye nomuzwa «we-umami».
- I-caffeine: ngokuvamile isebenza ngokuthamba kakhulu kunasematiyeni aluhlaza nasebomvu, kodwa ileveli incike enanini lezimbali nasebuncaneni beqabunga.
- Izinhlanganisela ezinukele kahle: etiyeni elincane zinikeza imibala yezimbali zasemaphethelweni, utshani obusha, apula eliluhlaza; lapho zivuthiwe, ziguqukela ezinyosi, izithelo ezomisiwe nasemakhambi.
- Ama-pectin noshukela onyibilikayo emanzini: akhulisa «ubushelelezi» nokuyindilinga kokunambitheka (ikakhulukazi ezinhlobonhlobo ezinenani elikhulu lamahlamvu nezinhlanga).
8. Izinzuzo Zempilo:
Itiye elimhlophe ngokwesiko lihlanganiswa neziphuzo ezinomphumela wokuvuselela ngobumnene kanye namazinga aphezulu ama-antioxidant. Kuyasho ukuthi itiye akusilo ikhambi, futhi noma yimiphi «imiphumela yokwelapha» evela ezincazelweni zokumaketha kufanele ibhekwe ngokuhlolayo.

- ngezifo zamathumbu kanye nokukhulelwa, kufanele kuhlolwe indlela yokusetshenziswa nodokotela.
9. Ukuhlunga:
- Izinga lokushisa lamanzi: 85–95 °C (i-Yueguang Bai ivame ukubekezelela amanzi ashisayo kahle).
- Umthamo: amagremu ayi-4-6 kumamililitha ayi-150-200.
- Ukugaywa: imizuzwana eyi-10-20 kokuqala, bese kukhuliswa; ukugaywa okuyi-6-10 kuya ngezinto zokusetshenziswa kanye nokucindezela.
- Izitsha: i-gaiwan/ i-teapot yezitsha zobumba ezimhlophe noma yobumba obumbaxa obuncane; ukuze «kubonwe» ingilazi ingasebenza.
- Ukubilisa: kungenzeka kumandwangu avuthiwe nacindezelwe — kunikeza «i-compote» nobumnandi obuminyene.
Isici esincane: uma ufuna ukugqamisa ubumnandi bezithelo, gcina izinga lokushisa liseduze nama-85-90 °C; uma ufuna ukuminyana — khuphuka uye kuma-95 °C.
10. Ukugcinwa:
Itiye elimhlophe lizwela emswakameni nasemaphungeni angaphandle.

Isitsha: esingangeni umoya (ibhodlela, isikhwama esine-zip-lock/isikhwama esinamafoyili), ngaphandle kwezinto «ezinukele kahle».

Indawo: eyomile, epholile, emnyama, ngaphandle kwezinguquko zokushisa.
-
Ubangani: bukude nezinongo, ikhofi, izinto ezishaya umoya omnandi.
-
Ifriji: ingenzeka emandangwini athambe kakhulu (ikakhulukazi anezimbali eziningi), kodwa kuphela lapho kungangeni umoya ngokuphelele, ngaphandle kwalokho itiye lizothatha amaphunga nomswakama ngokushesha.
**Amandla okuvuthwa:** I-Yueguang Bai ivame ukukhula ngomdlandla iminyaka eyi-2-7: isuka ekushayweni okusha kwezimbali iye ezinyosi, ezithelweni ezomisiwe, nasezinongweni ezithambile. Ukuze ivuthwe, amafomethi anamahlamvu nacindezelwe alunge kakhulu.
11. Intengo Nokukhohlisa:
Enye yezinto eziba nomthelela omkhulu enanini letiye elihlobene nokumhlophe izinga lezinto zokusetshenziswa, ukuvuna ngesandla, izimo zezulu zesizini, isithunzi somkhiqizi kanye «nokuhlanzeka» kwemvelaphi (umzana othize/ intaba).
Izingozi ezijwayelekile:
- ukushintshwa kwezinto zokusebenzisa (ngokwesibonelo, «izinaliti zesiliva» ezivela ezimbalini ezimahhadla noma ezivela kwenye indawo);
- ukwengeza amakha (uma itiye linuka «ipafumu», i-vanillin noma izithelo ezikhanyayo — lokhu kuyisizathu sokuqapha);
- ukomiswa ngokweqile/ukushiswa ngokweqile (kufihla amaphutha ezinto zokusetshenziswa, kunikeza amanothi okubhaka kanye nokubola);
- izinganekwane zokumaketha esikhundleni semininingwane eqondakalayo: unyaka wesivuno, isifunda, uhlobo lwesihlahla, ubuchwepheshe.
Okusiza lapho ukhetha:
- imininingwane ecacile ngezinto zokusetshenziswa nesifunda;
- iqabunga elomile liphelele, lingenalo uthuli nezimpuphu;
- iphunga elimnandi elihlanzekile ngaphandle kokukhunta kanye «nogodli» (kumadwangu avuthiwe — amanothi athambile ezinkuni-khotshani angavumeleka, kodwa hhayi isikhunta).
12. Amaqiniso Athakazelisayo:
- Iqabunga le-Yueguang Bai elinombala embaxambili — akulona «udayi» futhi akulona ikha, kodwa umphumela wezinto zokusetshenziswa nokucutshungulwa okunobumnene.
- E-Yunnan, leli tiye livame ukubekwa njenge «bhuloho» phakathi kwamatiye amhlophe kanye nesiko le-pu’er: liyavuthwa, liyacindezelwa futhi ngezinye izikhathi lihlungwa ngokubiliswa.
- Uma itiye linentuthu ehlabayo, iphunga eliqine elishisiwe noma ukukhunta — lokhu kungenzeka kube iphutha lokucutshungulwa/ukugcinwa, hhayi isitayela se-Yueguang Bai.
13. Amaphutha Lapho Kuhlungwa Nokugcinwa:
Ngisho netiye elihlobene nokumhlophe elisezingeni eliphezulu lingenziwa «lingamnamandla» ngobuchwepheshe.
- Amanzi ashisayo kakhulu ezinhlobonhlobo ezithambe kakhulu: amatiye ezimbali (ikakhulukazi i-Yin Zhen) emanzini abilayo alahlekelwa ubumnandi bezimbali futhi anikeze ubukhazikhazi obuqinile.
- Ukuhlunga kokuqala okude: itiye elihlobene nokumhlophe liyembula kancane kancane; kungcono ukwenza ukugaywa okufushane bese kukhuliswa isikhathi.
- Ukungashisi kahle kumatiye avuthiwe nacindezelwe: ngokuhlukile, itiye elidala elihlobene nokumhlophe nokucindezela okuminyene kuvame ukudinga ama-95–100 °C, ngaphandle kwalokho ukunambitheka kuzoba flat.
- Ukugcinwa eduze kwamaphunga: itiye elihlobene nokumhlophe lithatha «ikhishi», izinongo kanye namakhemikhali asendlini ngokushesha.
- Ukudideka «elisha vs elivuthiwe»: ukulindela ukuthi itiye elidala elihlobene nokumhlophe libe «nokuluhlaza kwasentwasahlobo» — yiphutha; inani likhona ezinyosi, izithelo ezomisiwe kanye nokuminyana okuthambile.
Uma ukunambitheka kuzwakala kungenalutho — zama:
- ukukhulisa umthamo ngamagremu ayi-1-2;
- ukukhuphula izinga lokushisa ngama-5 °C (noma, ngokuphambene, ukwehlisa kumatiye ezimbali);
- ukufinyeza isikhathi sokugaya kokuqala bese unikeza ukugaywa okuningi ngokulandelana.
14. Ukucindezela Nokuvuthwa:
Itiye elihlobene nokumhlophe — lingelinye lamatiye ambalwa ase-China atholakala ngobuningi nangendlela engacindezelwe (amaqebelengwane, izitini).
Kungani itiye elimhlophe licindezelwa
- Ubulula bokugcinwa nokuhanjiswa: umthamo omncane, izimpuphu ezincane.
- Ukuvuthwa okulinganayo: ekucindezelweni, itiye liguga kancane futhi ngokuvamile ngendlela «eqoqene kakhudlwana», ngoba iqabunga lithintana nomoya kancane.
- Ukunambitheka: ekucindezelweni kuvame ukuba nokuminyana okuningi «kwe-compote» kanye namanothi amancane angaphezulu abukhali.
Okungacindezelwe vs okucindezelwe — okumele kukhethwe
- Okungacindezelwe kungcono uma ufuna iphunga elimnandi elikhulu manje nje (ikakhulukazi kumatiye ezimbali nasematini amasha).
- Okucindezelwe kulula uma uhlela ukugcina, ukuvuthwa, ukubilisa noma ukuphuza itiye njalo ngamanani amakhulu.
Indlela efanele yokuhlukanisa itiye eqebelengwaneni
- sebenzisa ummese wetiye omncane/ insipho futhi usebenze ngezendlalelo, ungaguquli itiye libe uthuli;
- uma ukucindezela kuminyene kakhulu, ungakunika «ukuphumula» ngemuva kokuvula iphakheji izinsuku eziyi-1-2 endaweni engenamakha eyomile — iqabunga lizoba lula ukuphathwa;
- zama ukugcina izingxenye ezinkulu: ngale ndlela ukunambitheka kuzoba mnandi futhi kuthambe kakhudlwana.
Kubalulekile: ukucindezela akuyenzi «itiye libe ngcono» ngokuzenzekelayo. Uma izinto zokusetshenziswa zokuqala noma ukugcinwa kubi, iqebelengwane lizomane liyigcine le nkinga.
15. Itiye Lishintsha Kanjani Ngokuhamba Kwesikhathi:
Ukuvuthwa kwetiye elihlobene nokumhlophe akudingeki kube «amashumi eminyaka». Ngisho nasezimeni zasendlini, izinguquko ziyabonakala ngokushesha.
Izinyanga eziyi-0–12 (ngokuvamile «Xin Cha»)
- kugcwele izimbali, utshani obusha, utshani;
- isiphuzo sikhanyayo;
- izinga lokushisa elinobumnene nokugaywa okufushane kuhamba phambili (ikakhulukazi kwi-Yin Zhen).
Iminyaka eyi-1–3
- ukuhlaza okusha kuba nokuthula;
- kuvela izinyosi eziningi, ikhasi lesithelo;
- ukunambitheka kuyindilinga, ubukhazikhazi obukhali buyehla.

- umugqa wezithelo ezomisiwe uyakhula, kuvela imibala yamakhambi nezinongo;
- izigaba zamahlamvu (Shou Mei) ikakhulukazi ziba «yi-compote».
Iminyaka eyi-7+
- iphrofayili iba mnene futhi ijule: utshani obomile, ubunjalo bezinkuni, idethi/i-raisin;
- itiye livame ukuba lihle kakhulu ukuze libiliswe.
Isimo esisodwa: ukugcinwa okomile nokungabi namaphunga. Ngokugcinwa okuhlala kumanzi, «ubudala» buguqukela ephutheni (isikhunta/i-asidi).
16. Indlela Yokukhetha Indwangu Yekhwalithi:
Lapho ukhetha itiye elihlobene nokumhlophe, kuyasiza ukuqonda kusengaphambili, isiphi isitayela osifunayo: «ukukhanyela kwasentwasahlobo» (Xin Cha) noma ukujula kwezinyosi-nezithelo ezomisiwe (ukuvuthwa). Ngemva kwalokho — hlola indwangu njengomkhiqizo ovela endaweni yemvelaphi, hhayi njengenganekwane enhle.
1) Hlola imininingwane yokuqala
- Unyaka nesizini: itiye elihlobene nokumhlophe — isiphuzo sesizini. «Intwasahlobo» ngokuvamile incanyana ngephunga elimnandi, «ihlobo/ ikwindla» — iminyene futhi inamanothi otshani.
- Isifunda nomkhiqizi: eklasikini laseFujian, kubalulekile u-Fuding/Zhenghe kanye nomzana/umzana othize. Ezifundeni ezintsha — indawo ethize yokutshala.
- Isigaba sezinto zokusetshenziswa: i-Yin Zhen / Bai Mu Dan / Gong Mei / Shou Mei (noma okufanayo). Lokhu kunokwethembeka kune-abstract «premium».
2) Hlola iqabunga elomile
- Ukuphelela: izimpuphu nothuli okuncane, izingxenye ezihlelekile.
- Ukufana: usayizi nombala olinganayo — uphawu lokuhlungwa okuzinzile.
- Iphunga elimnandi: elihlanzekile, ngaphandle «kwasegumbini elingaphansi», umswakama, amakhemikhali kanye nephunga elinamandla lepakfumu.
3) Ukuhlolwa ngokushesha esiphuzweni
- Ukubonakala kwesiphuzo: itiye elihle elihlobene nokumhlophe ngokuvamile linikeza isiphuzo esihlanzekile, esingenazo izinsiza.
- Ukunambitheka kwangemva: kufanele kube mnandi futhi kuhlale isikhathi eside, ngaphandle kwe-asidi engemnandi kanye «nobudaka».
4) Kweletiye elivuthiwe elihlobene nokumhlophe (Lao Cha)
- buza/ bheka, ukuthi itiye laligcinwe kanjani (elomile, lingenamaphunga);
- gwema amandwangu anesikhunta, ukumuncu, ukukhunta — lokhu akuyona «inothi yezokwelapha», kodwa iphutha lokugcinwa.
Umgomo omkhulu: kungcono ukukhetha itiye elinomvelaphi oqondakalayo nephunga elimnandi elihlanzekile, kunetiye «elidala kakhulu» elinomlando ongaqondakali.
17. Amanzi Nezitsha:
Ikhwalithi yamanzi nezitsha ibonakala kakhulu etiyeni elihlobene nokumhlophe: liyathamba, futhi noma yikuphi ukunambitheka «okungadingekile» kuvela ngokushesha.
Amanzi
- Amanzi athambe noma anamaminerali amancane ngokuvamile asebenza kahle kakhulu. Amanzi aqine kakhulu «abhunqa» ubumnandi futhi enza isiphuzo sibe sibi kakhudlwana, kanti amanzi angenawo amaminerali anganikeza «ukungabibikho».
- Uma kungekho ndlela yokukala amaminerali, landela umgomo olula: amanzi okuphuza amnandi ngokwawo, ngokuvamile alungile nasetiyeni.
- Amaphunga okuhogela (i-chlorine, «iplastiki», insimbi) yasho isiphuzo ngokushesha. Isihlungi noma ukugcinwa emanzini kuvame ukuxazulula inkinga.
