    2006 — “Ubunye Obuyisithupha.” Kwasungulwa i-Yīngshān Yúnwùchá Industry Association (英山云雾茶产业协会), eyasebenzisa uhlelo lwe-“ubunye obuyisithupha” (六统一): ukukhethwa kwezithombo ezifanayo, imithetho yokutshala efanayo, ubuchwepheshe bokucutshungula obufanayo, amazinga obuchwepheshe afanayo, izidingo zomkhiqizo ezifanayo, ukupakishwa nokumakwa okufanayo.

    2009 — uphawu lwendawo. Ngo-December 2009, i-General Administration of Quality Supervision ye-PRC yagunyaza uphawu lwendawo lwe-“Yīngshān Yúnwùchá”. Ngawo lowo nyaka kwabhaliswa uphawu lokuhweba oluhlanganyelwe.

    2022–2024 — ukwandiswa.     • “Yīngshān” (英山, Yīngshān) — “Intaba Yobuqhawe” — igama lesifunda. Uhlamvu “yīng” (英) lusho “ubuqhawe, okuvelele”, “shān” (山) lusho “intaba”.
    • “Yúnwù” (云雾, Yúnwù) — “inkungu enamafu” — okukhomba isimo samafu esijwayelekile e-Dàbiéshān: izinsuku ezingaphezu kuka-200 unyaka wonke ezinamafu, ezidala izimo ezifanele zetiyela.
    • “Chá” (茶, Chá) — itiyela.
    • Ekuqaleni, igama lalihlotshaniswa ne-Tiāntáng Zhài (天堂寨, Tiāntáng Zhài — “Inqaba Yezulu”), isiqongo esikhulu se-Dàbiéshān (1,729 m), lapho izingadi zetiyela eziphakeme zitholakala khona emaweni ayo.

Itiyela lidlala indima ebalulekile emnothweni wesifunda: ingxenye eyodwa kwezintathu yabantu isemsebenzini ngqo embonini yetiyela, enye ingxenye — ngokungaqondile. Isisho sendawo sithi: “Isihlahla setiyela — kusukela ekhanda kuya ezinyaweni siyigugu”: amaqabunga amancane asetshenziselwa itiyela elinomkhiqizo oqanjwe, amahhabhula — i-zhūchá (珠茶, itiyela leperela), amagatsha agundiwe — itiyela lezitina, kanti izimbewu — izithombo namafutha etiyela.

3. Incazelo Yezitshalo Nempahla Engavuthiwe:

  • Uhlobo / Cultivar: Okuyinhloko — Yīngshān Qúntǐzhǒng (英山群体种, Yīngshān Qúntǐzhǒng) — uhlobo lwendawo oluhlanganisiwe, oluneminyaka eyikhulu, olunamacembe aphakathi nendawo namancane (Camellia sinensis var. sinensis). Lubonakala ngokuzivumelanisa okukhulu nobusika obubandayo base-Dàbiéshān, ukuphaphama kwamabhonsi okuphezulu (萌芽力强) kanye nesikhathi esandisiwe “sokugcina ubumnene” (持嫩性) — eside ngezinsuku ezingu-7-10 kunezinye izinhlobo ezijwayelekile. Eminye imihlobo eyengeziwe eyethulwe ngaphansi kohlelo lokuthuthukisa: È Chá 1 (鄂茶1号, È Chá 1 Hào), È Chá 5 (鄂茶5号, È Chá 5 Hào), Báiháozǎo (白毫早, Báiháo Zǎo — “Izicubu Ezimhlophe Zangaphambi Kwesikhathi”), Bìxiāngzǎo (碧香早, Bìxiāng Zǎo — “Inephro Yejade Esheshayo”), Fúdǐng Dàbái Chá (福鼎大白茶, Fúdǐng Dàbái Chá) — wonke abonakala ngokuhluma kusenesikhathi, isivuno esihle kanye nokuqukethwe okuphezulu kwama-amino acid. Iminyaka yezihlahla eziningi ingaphezu kwengu-30. Isisindo sama-buds angu-100 cishe singu-45 g.

  • Ukuvuna namazinga: Ukuvuna kuhlukaniswe ngokwezindlela ezinhlanu zomkhiqizo:

    • Chūnsǔn (春笋, “Ihlumela Lasentwasahlobo”): Ibhonsi elilodwa. Umsebenzi ophelele wezandla. Isimo setiyela eseliphelele — “ihlumela lika-bamboo” eliqondile elinezicubu eziningi ezisiliva. Izinga eliphezulu (特级).

    • Bìjiàn (碧剑, “Inkemba Ye-Jade”): Ibhonsi elilodwa, isimo esiyisicaba, ukucindezelwa ngomshini okufana no-Lóngjǐng.
    • Lóngtè (龙特, “Udrako Okhethekile”): Ibhonsi elilodwa + amaqabunga amabili, isimo somugqa, ukucutshungulwa okungomshini okuphelele.

4. I-Terroir Nezici Zokutshala:

  • Isimo sezulu: I-Yīngshān itholakala e-“Gold Belt at 30° North Latitude” (北纬30°黄金产茶带), endaweni enesimo sezulu se-subtropical monsoon, esijwayele izintaba zase-Dàbiéshān. Izinga lokushisa lonyaka eliphakathi nendawo — 16.4°C. Imvula — cishe u-1,400 mm ngonyaka. Inani lezinsuku ezinamafu — ngaphezu kwe-200 ngonyaka. Ukuhlukana kwezinga lokushisa phakathi kosuku nobusuku ngenkathi yokukhula — kungaphezu kwe-10°C, okusiza ekwandiseni ama-amino acid noshukela eqabungeni letiyela. Ukuba khona okukhulu kwemisebe ehlukanisiwe (diffuse) ngenxa yamafu ahlala ekhona kusiza ekwakhekeni kwe-chlorophyll ne-L-theanine. Inani lezinsuku ezinomoya ohlanzekile — ngaphezu kwe-300 ngonyaka.

  • Ukuphakama: Izingadi zetiyela zitholakala endaweni ephakeme ukusuka kumamitha angu-300 kuya kwangu-1,400 ngaphezu kogu lolwandle. Inhliziyo yokukhiqiza okusezingeni eliphezulu — amadolobhana ase-Léijiādiàn (雷家店镇, Léijiādiàn Zhèn — “Idolobhana Lokuqala Letiyela Lase-Dàbiéshān”), Nánhé (南河镇), Hóngshān (红山镇) kanye ne-Wēnquán (温泉镇) — ephakeme ngamamitha angama-600–1,400. Indawo ephakeme kakhulu esifundeni — i-Tiāntángzhài (天堂寨, 1,729 m).

  • Inhlabathi: Inhlabathi ephuzi-nsundu (黄棕壤, huáng zōng rǎng), ehlanganisa u-86.97% wendawo yesifunda. I-acidic (pH 4.5–6.5), esekelwe kumadwala ayingxenye ye-granite-gneiss. Inothile nge-zinc (Zn) ne-selenium (Se). Amachibi amane amakhulu aqinisekisa amanzi ahlanzekile ebanga lokuqala.

  • I-ecologi: Ukumbozwa kwehlathi — 72–87.6% kuye ngendawo. Okuqukethwe yion-i-negative emoyeni — kungokuphakeme ngokuphindwe izikhathi ezingu-50–100 kunezindawo zasemadolobheni. Isifunda sigunyazwe njenge-“China Natural Oxygen Bar” (中国天然氧吧). Ezinye izingadi zithole isitifiketi se-European organic. Engadini yetiyela kusetshenziswa izicupho ezinamandla okunamathela eziphuzi nezibani ze-ultraviolet ekulweni nezinambuzane ngokomzimba esikhundleni sokubulala izinambuzane. 5. Ubuchwepheshe Bokukhiqiza:

Ubuchwepheshe buhlukaniswe ngokwezindlela ezinhlanu zomkhiqizo. Ngezansi kuchazwa inqubo ejwayelekile enezici ezihlukile ezikhombisa ukuhlukahluka kwesimo ngasinye.

  • Ukwaneka (摊放, tānfàng): Iqabunga elisanda kuvunwa lanekwa ngendwangu encanyana ezisefeni zikahlamvu egunjini elinomoya omuhle amahora angu-4-6. Kwenzeka ukuhwamuka komswakama okuyingxenye kanye nokuqala kokukhula kwephunga.

  • “Ukubulala Ukuluhlaza” (杀青, shāqīng): Kwemikhiqizo ye-“Chūnsǔn” ne-“Chūnruǐ” (amazinga aphezulu) — ukugazinga ngesandla e-wokini ekhethekile: inqwaba ngayinye — 150–200 g, izinga lokushisa lokuqala — 100–110°C, bese kwehla kancane kuye ku-60–70°C. Indlela — “kuqala kube ukunyakazisa, bese kuba ukubilisa, kuhlanganiswe” (先抖炒,后闷炒,抖闷结合). Isikhathi — cishe imizuzu engu-7. Kwemikhiqizo yobuningi — isigubhu esigijimayo esingu-180–200°C.

  • Ukusonta (揉捻, róuniǎn): Indlela enezigaba ezintathu ethi “ilula → inamandla → ilula” (轻—重—轻三段). Kwe-“Chūnruǐ” ne-“Chūnmíng” — ukusonta okuyisiphethu okwakha amaqhuqhuva abonakalayo. Kwe-“Bìjiàn” — ukucindezelwa okuyisicaba.

  • Ukugazinga Kabusha (炒二青 / 炒三青, chǎo èr qīng / chǎo sān qīng): Kwe-“Chūnsǔn”: ngemuva kokuqala “kokubulala ukuluhlaza”, kwenziwa izigaba ezimbili ezengeziwe zokugazinga — “okuluhlaza kwesibili” (炒二青, ku-90°C, ~imizuzu engu-8, ngokuhlikihla nokusonta “搓条”) kanye “nokuluhlaza kwesithathu” (炒三青, ku-70°C → 50°C, ~imizuzu engu-8, “ngokuphakamisa izicubu” 提毫 kuze kuvele izicubu ezimhlophe). Lesi yisigaba esibalulekile esakha isimo esibonakalayo se-“bamboo” nezicubu ezisiliva ze-“Hlumela Lasentwasahlobo”.

  • Ukwakha (做形, zuòxíng): Kuya ngomugqa womkhiqizo. Kwesimo esisontwayo — “ukucindezela umucu” (紧条, jǐntiáo). Kwe-“Chūnsǔn” — “ukuhlikihla nokusonta ngesandla nokuphakamisa izicubu” (手工搓揉提毫, shǒugōng cuōróu tíháo), umsebenzi ophelele wezandla.

  • Ukomisa (烘干, hōnggān): Izinga lokushisa — cishe 80°C. Okuqukethwe komswakama ekugcineni — kungabi ngaphezu kwe-6.5%.

  • Ukukhetha nokuhlunga (精选, jīngxuǎn): Isigaba sokugcina — ukususa amaqabunga angalingani, iziqu nezintuli.

6. Izimpawu Ze-Organoleptic:

  • Ukubukeka kweqabunga elomile: Kwehluka ngokwemikhiqizo. Okuyisiphethu (春蕊/春茗): amaqhuqhuva amancane, amahle, aluhlaza okwebhulawu anokucwazimula okunamafutha nezicubu ezisiliva (细秀蜷曲、翠绿油润显银毫). Okuyisicaba (碧剑): liqondile, licijile, lifana ne-Lóngjǐng, linendawo ebushelelezi. Ihlumela (春笋): liqondile, njengehlumela lika-bamboo, linezicubu eziningi ezimhlophe, lihlangene futhi lihle. Umugqa (龙特): imichilo ecinene, elinganayo.

  • Iphunga leqabunga elomile: Iphunga le-chestnut elenzeka ngokucacile (栗香, lìxiāng) — okuyinothi eyinhloko neqashelwa kakhulu ye-Yīngshān Yúnwùchá. Emazingeni aphezulu okuvuna entwasahlobo, kukhona futhi amathoni okuhlanzeka okumsulwa (清香, qīngxiāng) kanye nephunga elincane lembali (花香, huāxiāng).

  • Iphunga lomhluzi: Iphunga le-chestnut livuleka ngokugcwele, liba nokufudumala futhi liyamemeza. Inothi yembali iba namandla ngokwengeziwe ekumngameleni kwesibili nokwesithathu. Iphunga lihlala likhona — liyagcinwa ngisho nasenkomishini esipholile.

  • Ukunambitheka: Okusha (鲜爽, xiānshuǎng) — ngenxa yokuqukethwe okuphezulu kwama-amino acid (≥3.32%). Okusongwayo nokugcwele (醇厚, chúnhòu), nge-“viscosity” (粘稠感) ebonakalayo — umphumela wezinga eliphezulu lezinto ezikhishwa emanzini (≥45%). Ukubuya kobumnandi (回甘, huígān) — kuhlala isikhathi eside futhi kujulile. Ukunambitheka kwangemuva — kuhlanzekile, nokufudumala kwe-chestnut.

  • Umbala womhluzi: Uluhlaza ngobumnene, uyakhazimula futhi uyabonakala (嫩绿明亮, nèn lǜ míng liàng). Emazingeni aphezulu — unombala ophuzi kancane.
