5. Ubuchwepheshe Bokukhiqiza:

  • Ukufudumala kokugcina — ukufudumeza ngomoya (烘焙 — hōngbèi): Itiye liphiliswa ngomoya oshisayo ngezinga lokushisa elilawulwayo kuze kufinyelele kumswakama osalayo ozinzile (≤6.5%). Lokhu kufudumeza kuqinisa iphunga futhi kuqinisekisa ukuzinza ngesikhathi sokugcinwa.

  • Ukukhetha nokuhlukanisa (拣剔 — jiǎntī): Ukususwa kwamacembe anezinkinga, iziqu, imizwa. Itiye eliqediwe lihlukaniswa ngamabanga.

6. Izimpawu Zokuhlangenwe nakho ngezitho zomzimba:

Kuzwakala kahle ingxenye ye-umami, ngenxa yamazinga aphezulu ama-amino acid. Ukunambitheka kwangemva (回甘, huígān) — kuhlala isikhathi eside, nobunoshukela obuhlanzekile obubuyayo nomkhondo oqabulayo.
  • Umbala wokuphisa: Uluhlaza ngobumnene, ogqamile, ocacile, onomthunzi omncane ophuzi (嫩绿明亮).
  • Indawo yetiye (iqabunga eliphekiwe): Amagqumba namaqabunga alinganayo, athambile, aphelele; umbala uluhlaza ngokukhanya ogqamile. Lapho evuleka emanzini, amagqumba avuleka “njengezimbali” (芽匀嫩成朵).

7. Ukwakheka Kwamakhemikhali:

  • Ama-polyphenol (茶多酚): Cishe engxenyeni eyi-32.87% yesomisi. Izingxenye eziyinhloko ama-catechin (i-epigallocatechin gallate / EGCG, i-epicatechin gallate / ECG phakathi kokunye), ahlinzeka ngomsebenzi wokulwa nama-oxidant futhi anquma ukuvutshelwa kwesiphuzo.
  • Ama-amino acid (氨基酸): 3.5–5.23% — isilinganiso esingaphezulu kwesamacha amaningi asezingeni eliphezulu: ngokuqhathanisa, i-Long Jing esezingeni eliphezulu icishe ibe ngu-3.4–4.0%. I-amino acid evelele yi-L-theanine, ebangela umlingiswa wokunambitheka we-umami kanye nebhalansi yokuphumula nokuvuselela.
  • Ama-alkaloid (生物碱): I-caffeine — cishe ngu-4.43%. Kukhona futhi i-theobromine ne-theophylline ngamanani amancane.

9. Ukwenza Itiye (Ukuliphisa):
