Ukuchichima kokukhanya okuhlakazekile kusiza ukunqwabelana kwama-amino acid.
- Imvula: Cishe amamilimitha ayi-1,800 ngonyaka, kanye nesilinganiso esiphezulu entwasahlobo nasekuqaleni kwehlobo.
- Inhlabathi: Kugcwele inhlabathi ebomvu-ophuzi (红黄壤, hóng huáng rǎng) ene-pH engu-4.5–6.5, enongqimba olujulile lwe-humus, okuqukethwe okuphezulu kwezinto eziphilayo namandla amahle okukhipha amanzi. Cishe ama-90% enhlabathi yezingadi zetiye angalolu hlobo.

5. Ubuchwepheshe Bokukhiqiza:
I-Wùyuán Xiān Zhī — ingummeli ojwayelekile wesikole sase-Huīzhōu setiye eliluhlaza eligazingiwe (炒青, chǎoqīng). Ubuchwepheshe buhlanganisa lezi zigaba ezilandelayo:

6. Izici Zokunambitha:
- Ukubukeka kwehlamvu elomile: Amahlamvu etiye amancane, aqondile, asongwe ngokuqinile, afana nezinaliti zikaphayini noma amagatshana. Umbala — uluhlaza okotshani omnyama ocacile (翠绿, cuìlǜ) nokucwebezela okunamafutha. Izintambo ezimhlophe (uboya obumhlophe, 白毫, báiháo) ziyabonakala phezulu, ikakhulukazi ezisekelweni zamahlumela.

- Iphunga lokuphisa: Lizinzile futhi lihlanzekile. Kugqama i-cast nut eyosiwe (板栗香, bǎnlì xiāng), ehambisana nethoni ecashile ye-orchid (兰花香, lánhuā xiāng). Iphunga lihlala likhona phakathi nokuphisa okuningana.
- Ukunambitheka: Okusha (鲜爽, xiānshuǎng), okuthambile, nobumnandi obugqamile nomzimba oqinile. Ukunambitheka kwangemuva kukhona isikhathi eside, nobumnandi obukhulayo (回甘, huígān) nomuzwa wokuhlanzeka.
- Umbala wokuphisa: Uhlanzekile, ukhanyayo, kusuka kokuluhlaza okukhanyayo kuya kokuluhlaza okuphuzi (碧绿清澈明亮). Ukukhanya kwamanzi kuphezulu.

7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol (茶多酚): Okuqukethwe — ngokwesilinganiso cishe ama-20–27% wesisindo esomile (kuyisici samatiiye aluhlaza asezintabeni eziphakeme zase-Jiāngxī). Ingxenye eyinhloko — ama-catechin (EGCG, EGC, ECG), anikeza ithoni ebambekayo namandla okulwa nama-oxidant.
- Ama-Amino acid (氨基酸): Okuqukethwe okukhuphukile — imininingwane ye-Chinese Academy of Agricultural Sciences Tea Research Institute (中国农业科学院茶叶研究所, 2005) ikhombise ukuthi kumatiiye aluhlaza ase-Wùyuán inkomba ye-catechin — ingelinye lamazinga aphezulu kakhulu ezweni lonke, kanti okuqukethwe kwezinto ezincibilika emanzini ezikhiphekayo kudlula kakhulu izinga likazwelonke (水浸出物 ≥ 36.0%). - Amaminerali: I-Potassium, i-manganese, i-fluoride, i-zinc, i-selenium (ngamanani ancane, kuncike enhlabathini).
- Amafutha abalulekile nezinhlanganisela eziguqukayo: I-Linalool, i-geraniol, i-nerolidol, i-methyl salicylate — zibhekene namathoni e-cast nut nezimbali ephungeni.
- Isici esivelele: Ngokwemiphumela yokuhlolwa, amatiiye aluhlaza ase-Wùyuán abonakala ngokuqukethwe okukhethekile okuphezulu kwezinto ezincibilika emanzini ezikhiphekayo ngokuphakathi kwama-polyphenol, okwakha iphrofayili yokunambitheka “egcwele, kodwa ethambile”.
8. Izinzuzo Eziwusizo:

9. Ukwenza Itiye:
- Izinga lokushisa lamanzi: 75–85 °C. Ezingxenyeni ezithambile zasekuqaleni kwentwasahlobo — 75–80 °C; ezintweni ezingavuthiwe ezivuthiwe kakhudlwana — kufika ku-85 °C.
- Inani letiye: Amagremu ama-3 kumamililitha ayi-150 (ngengilazi yengilazi) noma amagremu ama-5 nge-gàiwǎn yamamililitha ayi-150.
- Izitsha: Ingilazi yengilazi esobala enezindonga eziqondile (ilungele ukubuka ukuvuleka kwamagatshana etiye), i-gàiwǎn ye-porcelain noma i-teapot ye-porcelain enezindonga ezincane.
- Inqubo:
- Fudumeza isitsha ngamanzi abilayo bese uwachitha amanzi.
- Thela ihlamvu elomile; liyeke “livuke” esitsheni esifudumele imizuzwana eli-15–20, uphefumule iphunga lehlamvu elifudunyeziwe.

10. Ukugcinwa:
- Isitsha: Esivaleka kahle, esingabonisi — kungcono amakani kathayela anezembozo eziqinile noma izikhwama ze-vacuum ze-foil. Akwamukelekile ukuhlangana namaphunga angaphandle.
- Izinga lokushisa: Okuhle kakhulu — esiqandisini, 0–5 °C, emaphaketheni avaliwe. Uma singekho isiqandisi — endaweni epholile neyomile (hhayi ngaphezu kuka-10 °C).

11. Intengo Nobuqili:

12. Amaqiniso Athakazelisayo:
- Igama elithi «Xiān Zhī» lineminyaka engaphezu kwengama-500 yobudala bamadokhumenti: libhalwe phansi ku-Míng «Hóngzhì Huīzhōu fǔ zhì» (弘治徽州府志, ukuphela kwekhulu le-15) ohlwini lwamatiiye ayisishiyagalombili adumile esifunda sase-Huīzhōu.
- Indodana edumile yase-Wùyuán — u-Zhū Xī (朱熹, 1130–1200), insika ye-Neo-Confucianism, — wayengumthandi wamandla wetiye. Lapho ebuya e-Fújiàn ezweni lakubo, wafika nezithombo zetiye lamatshe ase-Wǔyán futhi wazitshala egcekeni lokhokho, waqamba kabusha indlu yomndeni ngokuthi “Igceke Letiye” (茶院, cháyuàn).

13. Ukuqhathaniswa namanye amatiiye aluhlaza:
- Wùyuán Míngméi (婺源茗眉, Wùyuán Míngméi): Ifulegi lomkhankaso wetiye lase-Wùyuán. - Huángshān Máofēng (黄山毛峰, Huángshān Máofēng): Itiye eliluhlaza lase-Ānhuī elidumile elivela esifundeni esingumakhelwane. Isimo — sigobile kancane, sifana nolimi lwenkonjane. Iphunga — linuka izimbali ngobumnene futhi linoshukela, ngaphandle kwamathoni e-cast nut. I-Máofēng — i-bèi-qīng (烘青, hōngqīng — yomiswa ngokushisa), kanti i-Xiān Zhī — i-chǎoqīng (炒青 — igazingiwe).
- Xìnyáng Máojiān (信阳毛尖, Xìnyáng Máojiān): Itiye eliluhlaza lase-Hénán elinoboya obumhlophe obunamandla nokunambitheka okumunyu futhi okuqinile. Uma kuqhathaniswa ne-Xiān Zhī — linamandla futhi “lisenyakatho” ngesimo; i-Xiān Zhī ithambile futhi inomzimba obushelelezi.
- Lúshān Yún Wù (庐山云雾, Lúshān Yún Wù): Omunye umbangi wase-Jiāngxī. Ngokwemibandela, ihlamvu “elikhudlwana” ngokungathi, ukunambitheka okunamandla nokugcwele. I-Xiān Zhī — inhle futhi eyomile ngokwesitayela.
Ekuphetheni:
I-Wùyuán Xiān Zhī — yitiye elinohlu lozalo lweminyaka engaphezu kwenkulungwane, elikhula phakathi kwazo lezo zintaba nenkungu, okwakhuthaza u-Zhū Xī nabathengisi base-Huīzhōu. Akulona “umuntu othulile” lapho kuqhathaniswa namagama amakhulu afana no-Lóngjǐng noma i-Máofēng — yitiye “elizwakalayo” ngempela: eliqondile, elithembekile, elinemfudumalo yamantongomane ephungeni nobumnandi obumsulwa ekunambithekeni.
