  • Ubucwepheshe bezolimo: I-Wuyi ingumqalisi wokulinywa kwetiye eliphilayo eChina. 5. Ubuchwepheshe Bokukhiqiza:

  • Ukushiswa kokugcina-ukwenza iphunga (提香 — tíxiāng): Ukushiswa okufushane ngezinga lokushisa elimaphakathi ukuze “kuphakanyiswe” iphunga futhi kugxilwe iphrofayili ye-castnut nezimbali. Yilesi sigaba lapho kudalwa inothi yephunga eliphakeme, “elindizayo” eliwuphawu luka-Chunyu.

6. Izimpawu Zomqondo:

7. Ukuhlelwa Kwamakhemikhali:

  • Ama-Polyphenol (茶多酚): Izinga elijwayelekile lamatiye aluhlaza asezintabeni eziphakeme zaseZhejiang — 18–25%. Ukuqukethwe okuncane kwama-polyphenol (kuqhathaniswa namatiye asezindaweni eziphansi) kuchaza ukuthambile kanye nokubabukana okuncane.
  • Ama-Amino acid (氨基酸): Ukuqukethwe okwandisiwe (4–5%) — okuwumphumela wemvelaphi yasezintabeni eziphakeme, usuku olufushane lokukhanya kanye nobusuku obubandayo. I-L-theanine — iyona amino acid evelele, ebhekele “umami” kanye nomphumela wokuthoba.
  • Ama-Catechin (儿茶素): Izingxenye eziyinhloko — i-EGCG, i-EGC, i-ECG, i-EC. Ukuqukethwe okuphelele — 80–110 mg/g (okujwayelekile kumatiye aluhlaza asezintabeni eziphakeme).
  • Ama-Alkaloid: I-caffeine — 2–4% wesisindo esomile. I-Theobromine, i-theophylline — amanani amancane.
  • Amavithamini: Uvithamini C (ukuqukethwe okwandisiwe esivunweni sasentwasahlobo), amavithamini eqembu B (B₁, B₂), uvithamini E, i-β-carotene.
  • Amaminerali: I-Potassium, i-magnesium, i-manganese, i-zinc, i-selenium, i-fluoride, i-phosphorus.
  • Amafutha abalulekile: I-Linalool, i-geraniol, i-β-ionone, i-nonanal, i-cis-jasmone, i-benzaldehyde, i-phenylethanol — akha ibhukhethi eliyinkimbinkimbi le-castnut-nezimbali-nezithelo.
  • Izici: I-phenol-amino acid ratio ephansi (< 5). Ukuqukethwe okuphezulu kwezinto ezincibilikayo zoshukela kunomthelela kubumnandi “obunamafutha” obuwuphawu.

8. Izakhiwo Ezinempilo:

9. Ukuphuza:

  • Izinga lokushisa lamanzi: 80–85°C. Ngezinga eliphezulu (ihlumela elilodwa) — 75–80°C.

  • Inani le tiye: 3–4 g nge-150–200 ml (ukuphuza ngengilazi); 5 g nge-100–120 ml (gaiwan).

  • Izitsha: Ingilazi yengilazi — ilungele ukubuka umphumela “wemvula yasentwasahlobo” (izinalithi zimi zibheke phezulu bese zehla kancane, zifana namaconsi emvula); i-gaiwan ye-porcelain — yendlela elawulekayo kakhudlwana; iketela le-porcelain — lephuzo letiye lansuku zonke.

  • Inqubo (ukuphuza ngengilazi):

  1. Shisisa ingilazi yengilazi ngamanzi abilayo, uyilahle.
  2. Thela 3–4 g wetiye elomile.
  3. Thela amanzi ngo-80–85°C engxenyeni engu-1/3 yomthamo. Vumela iqabunga “livuke” imizuzwana engama-30, ubuke ukuthi izinalithi zima zibheke phezulu kanjani.

  4. Ulwelo lwesibili nolwesithathu: imizuzwana engama-20–30.
  5. Okulandelayo: yandisa ngemizuzwana eyi-10–15.
  6. Inani lolwelo: 4–5.

10. Ukugcinwa:

  • Isitsha: Isikhwama se-aluminium foil esivaleke ngci, esinokukhipha umoya, esifakwe ethini noma ethinini.
  • Izinga lokushisa: Okuhle kakhulu — 0–5°C (isiqandisi). Ukuze kugcinwe isikhathi esifushane (amaviki ama-2–4), kuvunyelwe endaweni epholile emnyama ngezinga lokushisa legumbi.
