Umlando wetiyela waseTóngbǎi uneminyaka engaphezu kwenkulungwane. Ngokwe-«Táng Shū · Dìlǐ Zhì» (《唐書·地理志》): «Imikhiqizo yethelo yase [sifundeni] Yìyáng ihlanganisa itiyela» (義陽土貢品有茶); iYìyáng yasendulo (義陽) iyindawo ehlanganisa iTóngbǎi yanamuhla.

Umlando wetiyela waseTóngbǎi uneminyaka engaphezu kwenkulungwane. Ngokwe-«Táng Shū · Dìlǐ Zhì» (《唐書·地理志》): «Imikhiqizo yethelo yase [sifundeni] Yìyáng ihlanganisa itiyela» (義陽土貢品有茶); iYìyáng yasendulo (義陽) iyindawo ehlanganisa iTóngbǎi yanamuhla. Kwi-«Chá Jīng» (《茶經》) uLù Yǔ wahluza izinga letiyela elisuka «esifundeni sasendulo saseYìyáng» (古義陽郡). 4. I-Terroir Nezici Zokutshalwa:

Isikhathi sokungabi nasithwathwa ~ izinsuku ezingama-220.
- Umhlabathi: I-acidic (pH 4.5–6.0), inhlabathi yezintaba ephuzi nebrown, evundlekile, evuseleleka kahle, enothile ngezinto eziphilayo (ikakhulukazi ezindaweni zezinsimu ezinyamalala).
- Imvelo: Ubume bezintaba, amahlathi amaningi, ukuqhela ezindaweni zezimboni. Izinsimu eziningi zisesifundeni sendawo yesizwe yemvelo eqokiwe ethi «Tóngbǎi — Tàibái Dǐng». Ngo-2023 amabhizinisi amabili esifunda athola isikhundla se-«National Ecological Low-Carbon Tea Enterprise» (全國首批生態低碳茶認證企業). 5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-«Tóngbǎi Hóng» bathuthukiswa ngo-2010 ngokubambisana neHénán Agricultural University futhi kamuva bathuthukiswa ngokuhlanganyela ne-Tea Research Institute ye-Chinese Academy of Agricultural Sciences.
- Ukuvuna (采摘): Ngesandla, inhlumela eyodwa + amaqabunga angalodwa noma amabili.
- Ukuhlunga / Ukuhlukanisa (分級): Izinto zokusetshenziswa zihlukaniswa ngosayizi nokuvuthwa ngaphambi kokuqala ukucutshungulwa.
- Ukubuna (萎凋): Ngokwemvelo noma ekamelweni elinomoya; amahora angu-12–18. Amaqabunga alahlekelwa umswakama ongu-55–65%.
- Ukusonga (揉捻): Ngomshini, ukwakheka kwamacembe aminyene, asongeke aqine.
- Ukuvuthwa / Oksijini (發酵): amahora angu-4–6, ku-25–28°C, umswakama olawulwayo. Ukuvuthwa okugcwele.
- Ukomisa (烘乾): Ngezigaba eziningi — kokuqala kusetshenziswa izinga lokushisa eliphezulu (ukumisa ukuvuthwa), bese kugcina ngezinga eliphansi (ukuqinisa iphunga nomswakama).
- Ukuhlunga kokugcina nokupakisha.
6. Izici Zenzwa:
- Ukubukeka kweqabunga elomile: Amacembe asongeke aqine (條索緊結), amnyama anokukhanya okunamafutha (烏潤), anezihloko ezisagolide ezibonakalayo (顯金毫).
- Iphunga leqabunga elomile: Loju (蜜香), elinamathoni e-cashadi ebhakiwe kanye nokuphunga kwezimbali okuncane.
- Iphunga lomhluzo: Iphunga loju eliqinile (蜜香持久) — ibhizinisi yase-«Tóngbǎi Hóng». Ezinye izinqwaba zibonisa «huāguǒxiāng» (花果香 — iphunga lezimbali nezithelo), «shǔxiāng» (薯香 — «ubhatata», okuphawuleka kumatayela abomvu aseHénán) noma «mìxiāng» (蜜香 — uju oluhlanzekile).
- Ukunambitheka: Kuminyene futhi kuthambile (醇厚, chún hòu), nobumnandi obugqamile nokunambitheka okuhlala isikhathi eside. Ubumuncu buncane kakhulu. I-resonance yomphimbo (喉韻) iyezwakala kuzinqwaba ezingcono kakhulu.
- Umbala womhluzo: Unsundu osagolide (金黃), osemisweni, okhanyayo. Ithoni ilula kakhudlwana futhi «inosagolide» kunamatiyela abomvu aseningizimu — uphawu olujwayelekile lwama-hóngchá aseHénán asuselwa ezintweni zokusetshenziswa ezinamacembe amancane. Lo mbala uwumphumela oqondile webhalansi ye-theaflavins (ephathelene «negolide» nokukhanya) kanye nama-thearubigins (anika «ubomvu» nokuminyana): ezintweni zokusetshenziswa zaseTóngbǎi ezinamacembe amancane, ingxenye yama-theaflavins iphakeme uma iqhathaniswa namatiyela aseningizimu anamacembe amakhulu, okudala ithoni «elanga» ephawulekayo yomhluzo. Kumuntu onolwazi lwetiye, lokhu kuyinkomba ebonakalayo: uma itiyela elibomvu laseTóngbǎi linikeza umhluzo obomvu omnyama, hhayi onsundu osagolide — lokhu kuyisizathu sokungabaza ubuqiniso.

7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol: 15–22% esisindo esomile. Lapho kuvuthwa ngokugcwele, ama-catechin aguqulwa abe yi-theaflavins nama-thearubigins.
- Ama-Amino acid: 3–4% — okuphakeme ngenxa yezinto zokusetshenziswa ezinamaqabunga amancane kanye nesikhathi eside sokuphumula ebusika. Ngempela izinga eliphezulu lama-amino acid (ikakhulu i-L-theanine) lakha «ubumnandi boju» nokuthamba kwe-«Tóngbǎi Hóng».
- I-Caffeine: 2.5–3.5%.
- Ama-Aromatic compounds: Iphrofayela incike enqwabeni: ezikahle (linalool, geraniol), ezezimbali (nerolidol), ezibhakiwe (pyrazines — lapho ukoma kokugcina kugcizelelwa).
- Amaminerali: I-Selenium (Se) — iTóngbǎishān iyingxenye yendawo ecebile nge-selenium (富硒帶), okwandisa amandla e-antioxidant yetiyela.
8. Izinzuzo Zezempilo:
- Ukuqabula okuthambile: Ukuqukethwe okulingene kwe-caffeine kuhlangene nezinga eliphezulu le-L-theanine kunikeza umfutho «othulile».
- Ukuvikela i-Antioxidant: Ama-Theaflavin, ama-thearubigin ne-selenium — uhlelo lwe-antioxidant oluphindwe kathathu.
- Umphumela wokufudumeza: Isimo «esifudumele» ngokwe-TCM, silungele ubusika obubandayo baseCentral China.
- Ukusekela ukugaya: Kuyasiza ngemva kokudla okunamafutha; ngokwesiko kunconywa nokudla kwaseHénán.
- Umphumela wokulwa nengcindezi: Izinga eliphezulu le-L-theanine lisiza ukuzwana nokugxila okuthulile.
9. Ukuphisa:
- Izinga lokushisa lamanzi: 90–95°C.
- Ubungako betiye: amagremu angu-4–5 ku-100–120 ml (gōngfū); amagremu angu-3 ku-200–250 ml (ukugxilisa).
- Isitsha: I-gàiwǎn yobumba noma inkomishi yengilazi (ukuhlola umbala osagolide womhluzo).
- Inqubo:
- Ukufudumeza isitsha.
- Ukufaka itiyela.
- Ukuwasha — uma uthanda.
- Ukumunca kokuqala: imizuzwana engu-10–15 (gōngfū) noma imizuzu emi-3 (ukugxilisa).
- Ukumunca okungu-5–7, kwandise isikhathi ngemizuzwana engu-5–10.
- Okunaka: I-«Tóngbǎi Hóng» iphinde ilungele isimo sasehhovisi: amagremu angu-3 engilazini engu-300 ml, ukugxilisa imizuzu engu-3–5. Yile ndlela ephuzwa ngayo emhlanganweni wesiShayamthetho sesifundazwe saseHénán, lapho i-«Tóngbǎi Hóng» isiphenduke «itiyela lephalamende» elingekho emthethweni. Umbala osagolide womhluzo, ubumnandi obuthambile kanye nephunga loju eliqinile kuyenza ilungele ukuphisa isikhathi eside engilazini — ayimuncu futhi ayibabi noma ishiywe isikhathi eside, okuyenza ihluke kakhulu kumatayela abomvu aseningizimu «anolaka» kakhulu.
- Indlela yaseYurophu: Amagremu angu-3 ngenkomishi engu-200–250 ml, imizuzu emi-3–4. Ilungele ukujwayelana kokuqala netiyela elibomvu laseHénán.
10. Ukugcinwa:
- Isitsha: Esivaleka kahle, esingaboniyo.
- Izimo: 10–25°C, umswakama kufika ku-60%.
- Isikhathi sokuphila: izinyanga eziyi-12–24.
11. Intengo Namanga:
I-«Tóngbǎi Hóng» ejwayelekile — 200–600 yuan/500 g; izinqwaba ezisezingeni eliphezulu (zasentwasahlobo, ezenziwe ngesandla) — 800–2 000 yuan; itiyela lenkomishi (ama-cup portioned) — 3–5 yuan/nkomishi (ifomethi yeningi).
Ungawagwema kanjani amanga: Hlola imvelaphi (isifunda saseTóngbǎi, isigodi saseNányáng, eHénán). I-«Tóngbǎi Hóng» inomhluzo osagolide, hhayi obomvu omnyama; «ubumnyama» obunzima nokungabacaci kuyizimpawu zokushintshwa.
12. Amaqiniso Athakazelisayo:
- Itiyela «elinempilo amabili»: Kuze kube ngu-2010 wonke amaqabunga aseTóngbǎi ayeqondiswa etiyeleni eliluhlaza; izinto zokusetshenziswa zasehlobo nasekwindla zazilahlekile. Ukwakhiwa kwe-«Tóngbǎi Hóng» kwaphinda kabili imali engenayo yabalimi betiyela, kwaguqula «udoti» waba umkhiqizo osezingeni eliphezulu.
- Umpetha weHong Kong: Ngo-2018 i-«Tóngbǎi Hóng» yazuza izicoco ze-«Champion» ne-«Best Aroma» esigabeni samatiyela abomvu embukisweni wesi-6 weHong Kong International Tea Fair.
- Usolwazi ongumeluleki: U-Liú Zhòng Huá (劉仲華) — ongomunye wamalungu amabili e-Chinese Academy of Engineering emkhakheni wetiyela — uhlela mathupha ukuthuthukiswa kwe-«Tóngbǎi Hóng». Indawo yakhe yokusebenzela itholakala esifundeni saseTóngbǎi.

13. Ukuhlaziya Kokuqhathanisa:
