- Ukubumba / “lǐ tiáo” (理条 — lǐ tiáo): Ngokushesha ngemva kwe-shā qīng, lapho amaqabunga esashisa, ingcweti ilula ngesandla ihlumela ngalinye, iliqondisa futhi lakhe ubunjalo obuphawulekayo “bamaqabunga amabili agone umqumbe” (两叶抱一芽, liǎng yè bào yī yá). - Ukuhlukanisa (分级 — fēnjí): Itiye eliphelelisiwe lihlanzwa ngesandla ngokosayizi, ukuma nekhwalithi.
6. Izimpawu Zezitho Zomzimba (Organoleptic):
- Ukubukeka kweqabunga elomile: Kukhulu kakhulu (5–7 cm, amaqabunga athile afinyelela ku-10 cm), isicaba, kuqondile, amaqabunga aphelele anokuma “kwamaqabunga amabili agone umqumbe.” Isiqubulo esiyingqayizivele: “U-Hóu Kuí ucije emikhawulweni yomibili, awuhlali phansi, awugobi, awusonti emaphethelweni” (猴魁两头尖,不散不翘不卷边). - Iphunga leqabunga elomile: Linamandla, lisha, linamanothi agqamile e-orchid (兰花香, lánhuā xiāng), i-chestnut ethosiwe kanye nohlaza olusha. Izinkinobho ezicashile zezimbali zasendle kanye noju.
- Iphunga lokugxilisa: Iphunga le-orchid elihlanzekile, eliphakeme (兰香高爽, lán xiāng gāo shuǎng) — uphawu lwetiye oluyinkomba. Iphunga lihlala njalo: ngisho noma indebe isipholile, ligcina ukucaca futhi alilahlekelwa ukuphakama. Iphunga elicashile, “eliyisipoki” (幽香, yōu xiāng) lizwakala ngisho nangemva kokugxilisa kwesithathu noma kwesine.
- Ukunambitheka: Kusha futhi kukhanya (鲜爽, xiān shuǎng) ngenxa yokuqukethwe okuphezulu kwama-amino acid. Kugcwele futhi kuminyene (醇厚, chún hòu), kodwa ngesikhathi esifanayo kuthambile, akunasihluku — “kunothile ngaphandle kokubaba, kuminyene ngesimilo” (浓而不苦,醇而有味). - Umbala wokugxilisa: Uluhlaza obuthambile, uhlanzekile, usobala, futhi ucwebezelayo (清绿明澈, qīng lǜ míng chè). Ngokomthunzi ufana ne-apula eliluhlaza. Umbala uzinzile, awuphuzi futhi awubomvu uma uphola.
