1. Ukuhlukaniswa kanye Nemvelaphi:
- Uhlobo: Itiye elimhlophe (elibilisiwe kancane).
- Izinga: Itiye elimhlophe leqabunga (ekuhlukanisweni kwetiye elimhlophe livame ukubhekwa njengeqoqo ‘lesivuno sakamuva’ kanye neqabunga elivuthiwe kakhulu).
- Imvelaphi: I-China, ngokuyinhloko i-Fujian (i-Fuding / i-Zhenghe njengezikhungo zakudala zetiye elimhlophe). I-Shòu Méi iyenziwa nakwezinye izifunda, kodwa isitayela esijwayelekile ngokuvamile sihlotshaniswa ne-Fujian.

- Ukucindezela: kuvamile ku-Shòu Méi; ‘okusha’ kungaphuzwa kugqashukile, kanti ingxenye yomkhiqizo ivame ukuya ekucindezelweni ukuze ivuthwe.
6. Izimpawu Zokunambitha:
- Iqabunga elomile: iqabunga elikhulu, iziqu ezibonakalayo; umbala osuka empunga-luhlaza uye kumncane wamafutha omnqumo.
- Iphunga: utshani obusha, utshani, ubusi lula, ngezinye izikhathi iphunga lekhasi le-apula.
- Ukunambitha: kuminyene, kumnandi, kunomsoco omncane lapho kushaywa isikhathi eside.
- Umhluzi: osagolide.
- Ukunambithwa ngemuva: okude, okumnandi, nomkhondo wezitshalo eziluhlaza.
7. Ubunjalo Bamakhemikhali:
Ku-Shòu Méi ingxenye enkulu yamaqabunga neziqu, ngakho kumhluzi ngokuvamile kubonakala kakhulu ama-pectin noshukela oncibilikayo emanzini, okunikeza ukuthungwa ‘okuqephuzayo’ (ikakhulukazi ngamanzi ashisayo nangokubilisa).
Itiye elimhlophe lihlonishwa ngenxa **yokucubungula ngobumnene**: izithako azicishe zithinteke ngomshini nangokushisa, ngakho kumhluzi kugcinwa kahle izingxenye zemvelo zeqabunga.
- Ama-polyphenol (okuhlanganisa nama-catechin): akha amandla okulwa ne-oxidation kanye nomsoco omncane.
- Ama-amino acid (kufaka phakathi i-L-theanine): abhekene nobumnandi, ukuthamba kanye nomuzwa ‘wokunambitheka okujulile’.

- Ama-pectin noshukela oncibilikayo emanzini: akhulisa ‘ubumnene’ nokujikeleza kokunambitheka (ikakhulukazi ezinhlotsheni ezinengxenye enkulu yamaqabunga neziqu).
8. Izinzuzo Zempilo:
Itiye elimhlophe ngokwesiko libhekwa njengesiphuzo esinamandla okugqugquzela amandla kanye nokuqukethwe okukhulu kwama-antioxidant. Ngesikhathi esifanayo, itiye akulona ikhambi, futhi noma yimiphi ‘imiphumela yokwelapha’ ezincazelweni zokukhangisa kufanele ibonwe ngokugxeka.
Izinzuzo ezingase zibe khona (ngaphakathi kwesikhathi sokuphuza ngokuhluzekile):
- Ukusekela kokulwa ne-oxidation: ama-polyphenol asiza ukwehlisa ukucindezeleka kwe-oxidative.
- Amandla amnene ngaphandle ‘kokushisa ngokweqile’: inhlanganisela ye-caffeine ne-theanine kubaningi inikeza ukugxila okuhle.
- Ukusekela ukugaya ukudla: umhluzi ofudumele uvame ukubonwa njengokhululekile ngemuva kokudla (ikakhulukazi amatiye amhlophe avuthiwe).
- Umlomo: ukuphuza itiye njalo kungase kusekele ukuhlanzeka ngenxa yephrofayili ye-polyphenol.
Imikhawulo:
- uma uzwela ku-caffeine kungcono ungaphuzi itiye elimhlophe ebusuku kakhulu;
- ngezifo zomgudu wokugaya nokukhulelwa, kunconywa ukuhlela indlela yokuphuza nodokotela.
9. Ukudlisa:
- Izinga lokushisa lamanzi: 90–100 °C (i-Shòu Méi imelana kahle namanzi abilayo).
- Umthamo: 5–7 g ku-150–200 ml.
- Ukuphuza ngokuchitheka: 15–25 sec kwabokuqala, bese kukhuliswa; ukuphuza okungu-6–10.
- Ukuphuza enkomishini/ku-thermos: 2–3 g ku-300–500 ml, imizuzu engu-10–20 (lungisa ngokunambitha).
- Ukubilisa: kokusha — uma uthanda, kodwa kuvela kakhulu ekuvuthweni.
10. Ukugcinwa:
Itiye elimhlophe lizwelisa umswakama nephunga langaphandle.

Isitsha: esivalekile (ibhodwe, isikhwama esivalekayo/ isikhwama esimboziwe), ngaphandle kwempahla ‘enephunga elimnandi’.

Indawo: eyomile, epholile, emnyama, ngaphandle kokushintshashintsha kwezinga lokushisa.

Indawo engomakhelwane: ehlukene kuziqholo, ikhofi, amakha.

Isiqandisi: kungenzeka emikhiqizweni emihle kakhulu (ikakhulukazi enezimbali eziningi), kodwa kuphela uma kuvaliwe ngokuphelele, uma kungenjalo itiye lizothatha iphunga nomswakama ngokushesha.
**Amandla okuvuthwa:** ngisho ne-Shòu Méi entsha ingabekwa iminyaka eyi-1–3: umugqa wezitshalo uyaphela, kuvele ubusi nezithelo ezomisiwe.
11. Intengo kanye Nokukhohlisa:
I-Shòu Méi ngokuvamile ifinyeleleka kakhulu kunamanye amatiye amhlophe ezimbali, kodwa imikhiqizo ehamba phambili yasezintabeni ‘nehlanzekile’ ibiza kakhulu.
Intengo yetiye elimhlophe ithonywa kakhulu **izinga lezithako**, ukuvunwa ngesandla, izimo zesimo sezulu zesizini, idumela lomkhiqizi kanye 'nokuhlanzeka' kwemvelaphi (isigodi / intaba ethile).
Izingcuphe ezijwayelekile:
- ukushintsha izithako (isibonelo, ‘izinaliti ezisiliva’ ezivela ezimpini ezimbi noma kusuka kwesinye isifunda);
- ukufakwa kwephunga (uma itiye linuka ‘njengeparfum’, i-vanillin noma izithelo ezikhanyayo — kuyisizathu sokucaphuna);
- ukomiswa ngokweqile/ukushiswa ngokweqile (kufihla amaphutha ezithako, kunikeza amanothi okubhaka nokuphuka kalula);
- izinganekwane zokukhangisa esikhundleni semininingwane eqondakalayo: unyaka wokuvunwa, isifunda, uhlobo lomuthi, ubuchwepheshe.
Okusizayo ekukhethweni:
- ulwazi olukhanyayo ngezithako nesifunda;
- iqabunga elomile liphelele, ngaphandle kothuli nezinsalela;
- iphunga elihlanzekile ngaphandle kokuphunga noma ‘iphasi’ (kwamanye avuthiwe — kuvunyelwe inothi elincane lezinkuni nezitshalo, kodwa hhayi isikhunta).
12. Amaqiniso Athakazelisayo:
- I-Shòu Méi ingenye yamanye amatiye amhlophe alungele ukuphuza nsuku zonke: izinzile, iminyene futhi ixolela amaphutha.
- Ku-Shòu Méi entsha kuvamile ukubona okuningi ‘kwezitshalo’ ‘notshani’ — la manothi avame ukubonwa njengengxenye yesitayela.
- Uma ufuna ukuqala ukuvuthwa kwetiye elimhlophe ekhaya, i-Shòu Méi ingenye yabangenele abasebenziseka kakhulu (ngaphansi kokugcinwa okomile).
13. Ukuqhathanisa: I-Shòu Méi entsha ne-Bái Mǔ Dān entsha:
- I-Shòu Méi: iminyene, inezitshalo eziningi, imelana kangcono namanzi abilayo, ivame ukufanele i-thermos.
- I-Bái Mǔ Dān: inezimbali futhi icacile, ‘iphezulu’ ngokwephunga, ingcono ku-80–90 °C.

14. Amaphutha Ekuphuzeni nasekugcineni:
Ngisho itiye elimhlophe elihamba phambili kungenzeka ‘lingenzi limnandi’ ngobuchwepheshe.
- Amanzi ashisayo ngokweqile ezinhlotsheni ezintekenteke: amatiye ezimbali (ikakhulukazi i-Yín Zhēn) ngamanzi abilayo alahlekelwa ubuhle bezimbali futhi anikeza umsoco oqinile.
- Ukuphuza okokuqala okude: itiye elimhlophe livela kancane kancane; kungcono ukwenza ukuphuza okufushane bese kukhuliswa isikhathi.
- Ukungashisi ngokwanele amatiye avuthiwe nacindezelwe: kunalokho, itiye endala nokucindezela okuminyene kuvame ukudinga u-95–100 °C, uma kungenjalo ukunambitha kuzoba yicize.
- Ukugcinwa eduze kwamakha: itiye elimhlophe ‘lithatha’ ikhishi, iziqholo namakhemikhali asekhaya ngokushesha.
- Ukudideka ‘okusha vs okudala’: ukulindela ‘ukuluhlaza kwasentwasahlobo’ etiyeni elidala kuyiphutha; ukubaluleka kwalo kukobusi, izithelo ezomisiwe nokugcwaliswa okumnene.
Uma ukunambitha kubonakala kungekho lutho — zama:
- ukukhulisa umthamo nge-1–2 g;
- ukukhulisa izinga lokushisa ngo-5 °C (noma, ngokuphambene, ukwehlela amatiye ezimbali);
- ukwehlisa isikhathi sokuphuza okokuqala bese unikeza ukuphuza okuningi okulandelanayo.
15. Ukucindezela kanye Nokuvuthwa:
Itiye elimhlophe lingelinye lamatiye ambalwa ase-China akhona ngobuningi ekugqashukeni nasekucindezelweni (izinkwa, izitini).
Kungani itiye elimhlophe licindezelwa
- Ukugcinwa okulula nokuthutha: umthamo omncane, izinsalela ezincane.
- Ukuvuthwa okulinganayo: ekucindezelweni itiye liguga kancane futhi livame ‘ukuqoqeka’ kakhulu, ngoba iqabunga lihlangana nomoya omncane.
- Ukunambitha: ukucindezela kuvame ukuba nokugcwala ‘kweqephu’ kanye namanothi amancane aphezulu.
Ukugqashuka vs ukucindezelwa — yini ongayikhetha
- Okugqashukile kungcono uma ufuna inqwaba yephunga manje (ikakhulukazi amatiye ezimbali nasha).
- Okucindezelwe kulula uma uhlela ukugcina, ukuvuthwa, ukubilisa noma ukuphuza itiye kaningi ngobuningi.
Ungalikhipha kanjani itiye esinkwa ngendlela efanele
- sebenzisa ummese wetiye omncane/isibhamu bese usebenza ngokwezingqimba, ungaguquli itiye libe uthuli;
- uma ukucindezela kuminyene kakhulu, ungalivumela ‘liphumule’ ngemuva kokuvula iphakethe izinsuku ezi-1–2 endaweni engathathi hlangothi eyomile — iqabunga lizoba noblesi;
- zama ukugcina izingcezu ezinkulu: ngale ndlela ukunambitha kuzoba mhlophe futhi kuthambe.
Kubalulekile: ukucindezela ‘akwenzi itiye libe ngcono’ ngokuzenzakalela. Uma izithako zokuqala noma ukugcinwa kukubi, isinkwa sizomane sigcine inkinga.
16. Itiye lishintsha kanjani ngokuhamba kwesikhathi:
Ukuvuthwa kwetiye elimhlophe akudingekile kube ‘yiminyaka eyishumi’. Ngisho nasezindaweni zasekhaya izinguquko zibonakala ngokushesha.
0–12 izinyanga (okubizwa ngokuthi ‘Xīn Chá’)
- kuphayi izimbali, utshani obusha, utshani;
- umhluzi ukhanya;
- kungcono amazinga okushisa anobumnene nokuphuza okufushane (ikakhulukazi i-Yín Zhēn).
1–3 iminyaka
- ukuluhlaza okusha kuba mnene;
- kuvela ubisi oluningi, ikhasi lezithelo;
- ukunambitha kujikeleza, kuncishiswa umsoco omkhulu.
3–7 iminyaka (imvamisa okubizwa ngokuthi ‘Lǎo Chá’)
- umhluzi uba mnyama kakhulu ubheke egolideni-amber;
- umugqa wezithelo ezomisiwe uyakhula, kuvela amathunzi ezitshalo nokukhala;
- izigaba zamaqabunga (i-Shòu Méi) ziba ‘qephu’ kakhulu.
7+ iminyaka
- iphrofayili iba efudumele futhi ejulile: izitshalo ezomile, ubukhuni, usuku/omisiwe;
- itiye lihle kakhulu ekubiliseni.
Umbandela owodwa: ukugcinwa okomile nokungabikho kwamakha. Uma kugcinwe kumanzi ‘ubudala’ buba yiphutha (isikhunta/ikhwa).
17. Ungakhetha kanjani umkhiqizo osezingeni eliphezulu:
Uma ukhetha itiye elimhlophe, kuwusizo ukuqonda kusengaphambili, isiphi isitayela osifunayo: ‘ukukhanya kwasentwasahlobo’ (Xīn Chá) noma ukujula kobusi nezithelo ezomisiwe (okuvuthiwe). Ngemuva kwalokho — hlola umkhiqizo njengomkhiqizo wemvelaphi, hhayi njengenganekwane enhle.
1) Hlola imininingwane yokuqala
- Unyaka nesizini: itiye elimhlophe yisiphuzo sesizini. ‘Intwasahlobo’ ivame ukuba mncane ngokwephunga, ‘ihlobo/ikwindla’ — iminyene futhi inezitshalo.
- Isifunda nomkhiqizi: okwe-Fujian classical kubalulekile i-Fuding / i-Zhenghe kanye nomuzi/isigodi esithile. Ezifundeni ezintsha — indawo yokutshala ethile.
- Izinga lezithako: i-Yín Zhēn / i-Bái Mǔ Dān / i-Gōng Méi / i-Shòu Méi (noma okufanayo). Lokhu kuthembeke kakhulu kune-‘premium’ engaqondakali.
2) Hlola iqabunga elomile
- Ukuphelela: okuncane okugcwele nezinsalela, isigaba esihle.
- Ukufana: ubukhulu obulinganayo nombala — uphawu lokuhlunga okuzinzile.
- Iphunga: elihlanzekile, ngaphandle ‘kwephasi’, ukumanzi, amakhemikhali noma iphunga elinamandla.
3) Ukuhlolwa okusheshayo kumhluzi
- Ukucaca komhluzi: itiye elimhlophe elihle ngokuvamile linikeza umhluzi ohlanzekile, ongaphazamiseki.
- Ukunambithwa ngemuva: kufanele kube mnandi futhi kube kude, ngaphandle kwe-asidi embi kanye ‘nokungcola’.
4) Kwezidala ezimhlophe (Lǎo Chá)
- buza/ubheke, ukuthi itiye ligcinwe kanjani (omile, ngaphandle kwephunga);
- gwema imikhiqizo enesikhunta, i-asidi, amanzi — lokhu akulona ‘inothi lokwelapha’, kodwa kuyiphutha lokugcinwa.
Umthetho oyinhloko: kungcono ukukhetha itiye elinomlandu oqondakalayo nephunga elihlanzekile, kune ‘dadala kakhulu’ elinomlando ongacacile.
18. Amanzi Nezitsha:
Izinga lamanzi nezitsha libonakala ikakhulukazi etiyeni elimhlophe: linokuhle, futhi noma yikuphi ‘ukunambitha okungekho emthethweni’ kuvela ngokushesha.
Amanzi
- Amanzi athambile noma anamanzi aphakathi ngokuvamile asebenza kangcono. Amanzi aqine kakhulu ‘avalela’ ubumnandi futhi enze umhluzi ube mabi, kanti amanzi angenazo izimbiwa ngokwanele anganikeza ‘ukungabi nalutho’.
- Uma ungenalo ithuba lokulinganisa izimbiwa, sebenzisa umthetho olula: amanzi okuphuza amnandi wona ngokwawo, ngokuvamile afanele netiye.
- Iphunga lamanzi (i-chlorine, ‘ipulasitiki’, insimbi) lidlulela kumhluzi ngokushesha. I-filter noma ukuma kuvame ukuxazulula inkinga.
Izitsha
- Kumatiye amasha amhlophe (Xīn Chá) kuhle kakhulu i-porcelain noma ingilazi: aziphawuli futhi ‘awebeli’ iphunga.
- Kumatiye avuthiwe amhlophe (Lǎo Chá) kuhle i-porcelain, kanye ne-ceramics eminyene. Igumbi lobumba kungenzeka, kodwa kufanele libe ngaphakathi futhi lihlanzwe kahle — itiye elimhlophe lithatha iphunga langaphandle kalula.
- Ingilazi ilusizo uma ufuna ukubona ukuvuleka kweqabunga nokulawula umbala womhluzi.
Imininingwane emincane yezobuchwepheshe eshintsha ngempela ukunambitha
- shisisa i-gaiwan/igama etiyeni elivuthiwe (kokusha ukushisa kancane);
- ungalishiyi itiye ‘lintanta’ emanzini phakathi kokuphuza;
- uma itiye licindezelwe — linike isikhathi sokuqhekeka bese ungacindezeli isigaxa ngommese sibe uthuli: izinsalela ziphuza kabi kakhulu.
19. Isikhumbuzo Esisheshayo Sokuphuza:
Ngezansi — ukuhlela okufushane okusiza ngokushesha ‘ukuthola ukunambitha’ ngaphandle kokuhlola okude. Sebenzisa njengesiqalo bese ulungisa ngokomkhiqizo othile.
1) Izinga lokushisa
- Izimbali namanye amatiye amhlophe athambile kakhulu (I-Yín Zhēn-type): 70–80 °C.
- Imbali + amaqabunga (I-Bái Mǔ Dān-type): 80–90 °C.
- Amaqabunga kanye nokucindezelwe (I-Gōng Méi/I-Shòu Méi, izinkwa): 90–100 °C.
2) Umthamo
- ngokuphuza: 5 g ku-150–200 ml — isiqondiso esisebenzayo;
- uma ukunambitha kungenalutho — engeza u-1–2 g; uma kuminyene kakhulu — yehlisa.
3) Isikhathi
- qala ngo-10–20 imizuzwana, bese kukhuliswa;
- uma kuvela ukubaba — yehlisa ukuphuza okokuqala kanye/noma wehlise izinga lokushisa.
4) Uma kufanele ukubilisa
- imvamisa — kumatiye avuthiwe nangamaqabunga amhlophe;
- uma itiye licindezelwe, ukubilisa kunikeza iphrofayili ‘yeqephu’ elinganayo nobumnandi obukhulu.
5) Iphutha elivame kakhulu Itiye elimhlophe liphinde lishiswe ngokweqile (futhi kutholakala ukuqina), noma lingashiswa ngokwanele amatiye avuthiwe/acindezelwe (futhi kutholakala ukungabi nalutho).
20. Ukunambitha Nokuhlola:
Uma ufuna ukuqhathanisa imikhiqizo nokuqonda isifunda/ubudala, kuwusizo ngezinye izikhathi ukuphuza itiye elimhlophe ‘njengasesivivinyweni’.
Inqubo encane (i-cupping yasekhaya)
- Thatha imikhiqizo emibili bese uyiphuzisa ezitsheni ezifanayo (amagama amabili afanayo noma izingilazi).
