4. I-Terroir Nezici Zokutshala:

  • Isimo sezulu: Isimo sezulu se-subtropical monsoon empumalanga yeFujian esinemvula eningi (1400–2000 mm ngonyaka), umswakama ophakeme (75–85%) nobusika obupholile. Ukushisa okuphakathi konyaka ngu-18–20 °C. Umoya onomswakama uvumela ukubunakancane okuyindlela yokomisa okungahluphi, okubaluleke kakhulu eqabungeni elivuthiwe le-Shòu Méi.
  • Inhlabathi: Izihlabuti ezibomvu ezinomuncu nezihlabuti eziphuzi (pH 4.5–5.5), ezikhipha amanzi kahle, ezicebile ngezinto eziphilayo. Imithambeka yezintaba iqinisekisa ukukhipha amanzi ngokwemvelo kanye nokuceba kwenhlabathi ngamaminerali.
  • Ubude bokumila: ukusuka ku-300 kuye ku-900 m ngaphezu kogu lolwandle. Izingadi zetiye eziphakeme (600+ m) zikhiqiza izinto eziphume kakhudlwana nephunga elimnandi futhi ezintekenteke ezine-“nkungu” ebonakalayo, ezisemafundeni zikhiqiza amahlamvu aminyene futhi anomunyu.

I-Shòu Méi yaseZhènghé, ngokuvamile, ikhiqiza ukugcwala okujulile, okuminyene noku-“mnyama” ngokwemvelo. Lapha kuvame ukusetshenziswa ukomisa ngaphakathi (室内萎凋), okuthatha isikhathi eside (kuze kufinyelele emahoreni angu-48–72), okwakha umlingiswa ojulile omnandi wobusi.

5. Ubuchwepheshe Bokukhiqiza:

Ukukhiqizwa kwe-Shòu Méi — okungenye yezindlela ezinokungenelela okuncane kwabantu kuzo zonke izinhlobo zetiye. Isimiso esiyinhloko — “ukungosi, ukungasonteki” (不炒不揉, bù chǎo bù róu), okuvumela ukugcina kakhulu ukwakheka kwemvelo kweqabunga.

  • Ukukhiwa (采摘, cǎizhāi): Ukukhiwa ngesandla noma ngomshini kwamahlumela avuthiwe. Ku-Shòu Méi esezingeni, kukhethwa ukukhiwa ngesandla, okugwema ukulimaza iqabunga: izindawo ezilimele eqabungeni elikhulu ziba mnyama ngokushesha futhi zilethe ubulukhuni.
  • Ukomisa (萎凋, wěidiāo): Isigaba esiyinhloko ekukhiqizweni kwetiye elimhlophe. Amahlamvu akhiwe andlalwa ngothotho oluncane ezisefeni zikalo (水筛, shuǐshāi) noma emishinini ekhethekile. Ukomiswa kwenziwa emoyeni ovulekile ngaphansi kokukhanya kwelanga okusabalale (日光萎凋, rìguāng wěidiāo — isitayela saseFúdǐng), ngaphakathi endlini enomoya wemvelo (室内萎凋, shìnèi wěidiāo — isitayela saseZhènghé) noma ngendlela ehlanganisiwe. Isikhathi esithathwayo — ukusuka emahoreni angu-24 kuye kwangu-72 kuya ngezimo zezulu nobukhulu beqabunga. Ngesikhathi sokomisa iqabunga lilahlekelwa amanzi angu-60–70%, kwaqala izinqubo zokuncipha okuncane, kwakheka iphunga elijwayelekile. Ukomisa okungalungile (ngokushesha kakhulu noma ngaphansi kokushisa okuphezulu) kunikeza iqabunga elivuthiwe ubuhlungu obunoshani — isici esingeke silungiswe ngokuguga okulandelayo.
  • Ukwomisa ngokuphelele (干燥, gānzào): Iqabunga elomisiwe lomelelwa emswakameni osele ongaphansi kuka-≤8.5%. Kuyasetshenziswa ukomisa ngelanga ngokwemvelo (晒干, shàigān) noma ukomisa ngomoya osezingeni eliphansi lokushisa (烘干, hōnggān) ka-40–50 °C. I-Lǎo Chá: ubusi, izithelo ezomisiwe (idethi, igilebisi elomisiwe, ibhilikosi elomisiwe), imifino efudumele, izimpawu zokhuni; ngokuguga okungaphezu kweminyaka eyi-7+ — iphunga elintekenteke “elifana nemithi” (药香, yàoxiāng).
  • Iphunga lokugcwala: I-Xīn Chá: eligqamile, eliphilayo — imifino yasemadlelweni, utshani obusanda kuqotshwa, ubusi, impova yezimbali, i-apula eliluhlaza. I-Lǎo Chá: elijulile, elinezingqimba eziningi — ubusi, amadethi, imifino enephunga elimnandi, ihlathi lasekwindla; ngokuphekwa iphunga liba elinamandla “elifana nekompo”.
  • Ukunambitheka: I-Xīn Chá: okuminyene, okuncane okunoshukela, nomugqa ohlanzekile wotshani nobumunyu obulawulekayo obuthambile. Ukunambitheka okulandelayo kuhlala isikhathi eside, kunoshadi opholile wotshani. I-Lǎo Chá: okugcwele, okujikijele, okuthambile, nobumunyu obuncane. Ubumnandi “obufana nekompo” obugqamile — amadethi, ikhiwane, ipheya eli-caramelised. Ngokuthinta — umuzwa wamafutha no-“silk”.   • Umbala wokugcwala: I-Xīn Chá: osagolide okhanyayo, osobala, onokuphahlazeka okuncane okuluhlaza emhlobaneni wokuqala. I-Lǎo Chá: kusuka kokusagolide nsimbi kuya kokubomvu-nsimbi. Ukugcwala kukho kokubili kumele kube sobala futhi kuhlanzekile — ukufiphalisa kuyisibonakaliso sesici.
  • Umthamo wetiye (叶底, yèdǐ): Amahlamvu ahlukahlukene ngobukhulu, avuleke kahle, anwebekayo. I-Xīn Chá: ampunga-njengotshani kuya komhlaza. I-Lǎo Chá: amnyama nsimbi, athambile, kodwa angaphuli. Umthamo onempilo — awanazo izindawo ezimnyama, isikhuntane nephunga elibi.

7. Ukwakheka Kwamakhemikhali:

Itiye elimhlophe lihluke kwezinye izinhlobo ngokuncane kokungenelela kobuchwepheshe: ukungabikho kwe-shāqīng (杀青, shāqīng — “ukunqanda ukuhlaza”), ukusonteka kanye nokubilisa okukhulu kuvumela ukugcina kakhulu izingxenye zemvelo zeqabunga. Ngokuguga iminyaka eminingi iphrofayili yamakhemikhali iguquka kakhulu.

  • Ama-Polyphenols (茶多酚, chá duōfēn): Isilinganiso ekugcwalisweni kwe-Shòu Méi entsha — cishe 0.75 mg/mL (ngaphansi kune-Bái Háo Yín Zhēn ~1.0 mg/mL kanye ne-Bái Mǔ Dān ~1.04 mg/mL). Isilinganiso se-catechin — ~0.135 mg/mL; phakathi kwazo i-EGCG (epigallocatechin-3-gallate) — i-antioxidant eyinhloko.   • Ama-Flavonoids (总黄酮, zǒng huángtóng): ~0.070 mg/mL — kungaphezulu kakhulu kunase-Bái Háo Yín Zhēn (~0.020 mg/mL). I-L-theanine (茶氨酸) ku-Shòu Méi — isilinganiso esiyi-2.5 mg/g (ngaphansi kunase-Bái Háo Yín Zhēn — 10.1 mg/g, ngenxa yokuvuthwa kweqabunga).   • Bái Háo Yín Zhēn (白毫银针, Báiháo Yínzhēn — “Izinaliti Eziyisiliva”): Amahlumela kuphela. Itiye elimhlophe elintekenteke kakhulu, elikhangayo futhi elibiza kakhulu.   • Bái Mǔ Dān (白牡丹, Bái Mǔdān — “Ipeony Elimhlophe”): Ihlamvu + iqabunga elilodwa noma amabili amancane. Ibhalansi phakathi kokukhangayo kokuminyana.
