5. Ubuchwepheshe Bokukhiqiza:
Isitayela sokukhiqiza — “qingxiang” (清香, qīngxiāng) — “iphunga elimsulwa”: i-fermentation encane (20–30 %), ukomiswa okuhamba kancane ngezinga lokushisa eliphansi ukuze kulondolozwe iphunga elimnandi le-coniferous elibandayo, kusontwe ngesandla kube yindilinga. - Ukuhlunga / 揀剔 — jiǎntī: Ukususwa kwamacembe amadala, iziqu ezincane kanye nokungcola kwangaphandle. Etiyeni lomncintiswano, ukukhethwa kunzima kakhulu.
6. Izici Ze-Organoleptic:
- Ukubukeka kweqabunga elomile: Amagranula asontekile aqinile anomumo wobuningi (半球狀), usayizi osukela kophakathi kuya kumkhulu. Umbala — uluhlaza okotshani obumnyama nobumfiliba obunamafutha (墨綠油潤). Ezinhlotsheni eziphakeme, amagranula asinda futhi aqinile. Kuma-tips, kukhona uboya obuncane obukhanyayo.
- Iphunga leqabunga elomile: Inothi “elibandayo” elibusayo (冷香) — elihlanzekile, elipholile, elinombala ocacile we-coniferous we-cryptomeria. Emva kwaleli, kukhona i-orchid, umalokazana kanye nokunambitheka okuncane okunoshukela. - Umbala we-infusion: Uluhlaza wobusi ngegolide (蜜綠透金黃), obala kakhulu, obumfiliba obuphawulekayo be-colloidal ebusweni (光暈).
- Phansi kwetiye (iqabunga elijiyisiwe): Amacembe ayinyama, aguquguqukayo, aphelele, avuleke abe ubukhulu obugcwele. Umbala — kusuka kuluhlaza ogqamile kuye kwe-olive, onomphetho obomvana emaphethelweni. Izinqu Zamaqabunga Neziqu — ziguquguqukayo futhi zimanzi.
7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol: Ukuqukethwe okuphelele kwama-polyphenol — okuphakathi kuma-oolong, okuphansi kunalezo zezindawo ezingaphansi, ngenxa yokukhula okuhamba kancane endaweni ephakeme kanye ne-fermentation encane. Izingxenye eziphambili — ama-catechin: i-epigallocatechin gallate (EGCG), i-epicatechin gallate (ECG), i-epigallocatechin (EGC), i-epicatechin (EC). I-oxidation engaphelele iguqula ingxenye yama-catechin abe izinhlanganisela ezifana ne-theaflavin, ezenza ubukrakra buthambe.
- Ama-Amino acid: Ukuqukethwe okuphezulu — okungenani ama-5.2 % eqabungeni elisha lezinhlobo eziphakeme (okuphakeme kunomndeni wama-oolong aseTaiwan). I-L-theanine (theanine) ibusa, enomthwalo wemnandi, i-“umami”-tint kanye nomphumela wokuphumula. - Ama-Alkaloid: I-Caffeine — izinga eliphakathi (cishe ama-2–3 % wesisindo esomile). Ukuqukethwe kwama-tannin kungaphezulu ngo-~20% kunasemifuleni esezindaweni ezingaphansi, ngakho-ke akunconywa ukuphuza ngaphandle kokudla. Kukhona futhi i-theobromine ne-theophylline.

- Amafutha abalulekile nezinhlanganisela eziphuma: Ukuqukethwe okuphezulu kwezinhlanganisela ze-alcohol aromatic (i-linalool, i-geraniol, i-nerol, i-cis-3-hexenol), ezakha ama-55–70 % wephrofayili yephunga kuhlobo lwezitshalo i-Qing Xin Oolong. Yilezi zinhlanganisela ngokukhishwa okuncane eziguquka zibe amaphunga e-orchid ne-cryptomeria.
8. Izakhiwo Ezinomthelela Omuhle:
- Ukuvikela i-antioxidant: Ama-polyphenol nama-catechin anciphisa ama-radicals amahhala, asiza ukubambezela izinqubo zokuguga kwamaseli.
