5. Ubuchwepheshe Bokukhiqiza:

  • Ukomisa kokuqala (初烘, chūhōng): ~50 °C.

Itiye elibomvu (红茶工艺, hóngchá gōngyì):

  • Ukubuna (萎凋, wěidiāo): Kuze kufinyelele ekuthambekeni kwehlamvu.
  • Ukuphotha (揉捻, róuniǎn): Okunamandla, ukuze kudilizwe izindonga zamaseli futhi kuqaliswe ukufakwa kwe-oxygen.
  • Ukufakwa kwe-oxygen / ukuvutshelwa (发酵, fājiào): Ngaphansi kwezimo ezilawulwayo zomswakama namazinga okushisa kuze kufinyelelwe umbala wehlamvu obomvu wethusi kanye nephunga lesithelo nobusi elijwayelekile.
  • Ukomisa (干燥, gānzào): Ukumisa ukufakwa kwe-oxygen nokuqiniswa kwephunga.
  • Inhloso — ukuthola ubumnandi obunjengobusi besithelo kanye nokugcwala kwamanzi, hhayi ubumnandi obune-asidi. Amazinga aphezulu e-theaflavin nama-thearubigin etiyeni elibomvu le-Itiye Elimhlophe Lezinwele LaseRǔchéng (茶黄素 1,445 %, 茶红素 14,40 %) enza kube yinsiza ekhethekile yamatiye abomvu agayiwe.

6. Izici Zezinzwa:

  • Iphunga lamanzi okusela: Izimbali nezithelo, okuqhubekayo; etiyeni elimhlophe — elithambile futhi “elincane”; esibomvini — eligcwele, ngobunzulu bobusi.

    • Eliluhlaza: Elimnandi, elithambile, ngaphandle kobumnandi obunamandla; ubumnandi begazi obugqamayo (鲜爽, xiānshuǎng); ngamanzi afanele — umuzwa “womoya omnandi”.
    • Elimhlophe: Elithambile, nokuthambile okuncane kwezithelo, ubumnandi “obunamakhekhe” kanye nokunambitheka okuhlala isikhathi eside (回甘, huígān).

  • Umbala wamanzi okusela:
    • Eliluhlaza: Aluhlaza okotshani kuye kokuphuzi okuluhlaza, okusobala.
    • *Elimhlophe: Ophuzi wotshani kuye kophuzi wamabhilikosi (杏黄明亮), ogqamile.
    • Elibomvu: Obomvu okhanyayo, ogqamile (红亮).
  • Isisekelo setiye (ihlamvu elimisiwe):
    • Eliluhlaza: Amahlamvu amancane, agobekayo, aluhlaza ngokufanayo.
    • Elimhlophe: Aphelele, athambile, akhanyayo; amabhodwe aphelele abonakala kahle.
    • Elibomvu: Abomvu bethusi, ayagobeka, afakwe i-oxygen ngokulinganayo.
  • “I-choreography” ekhethekile yetiye: Lapho kumiswa itiye elimhlophe laseRǔchéng eliluhlaza, amabhodwe amile aqonde emanzini — ibhodwe libheke phezulu, isiqu sibheke phansi — futhi enza ukunyakaza okunyikinyayo phezulu naphansi, okukhumbuza amahlumela entwasahlobo yoqalo. 7. Isakhiwo Sezomzimba:

  • Ama-amino acid (氨基酸, ānjīsuān): 2,67–7,63 % (ngokwamasampuli ahlukene); inani elijwayelekile lasentwasahlobo — cishe 2,9 %; ukuhlaziywa okuhlukile — 43,86 mg/g. Amazinga aphezulu e-amino acid, ikakhulukazi i-L-theanine, ahlinzeka ubumnandi obugqamile “be-amino acid” bamaqoqo asentwasahlobo okuqala.
  • Ama-alkaloid: I-caffeine (咖啡碱, kāfēi jiǎn) — 3,94–7,27 %; inani elijwayelekile lensiza yasentwasahlobo — cishe 3,8–4,27 %. I-theobromine, i-theophylline — emazingeni alandelelekile.
  • Isikhuphashi samanzi (水浸出物, shuǐ jìnchū wù): 42,19–57,94 % — inkomba ephezulu kakhulu, ebonisa ukunotha kokuqukethwe kwangaphakathi.
  • Ama-theaflavin nama-thearubigin (etiye elibomvu): Ama-theaflavin (茶黄素) — 1,445 %, ama-thearubigin (茶红素) — 14,40 %. Amazinga aphezulu e-theaflavin — umaka “wokukhanya” nokuphila” kwamanzi okusela abomvu; lokhu kwenza i-Itiye Elimhlophe Lezinwele LaseRǔchéng ibe yinsiza enhle kakhulu yetiye elibomvu.
  • Izithako ezinuka kamnandi (ngesitayela esimhlophe): Kutholakale izingxenye ezingama-45 zokuguquguquka, zihlelwe ngezigaba eziyisi-8: utshwala (38,41 % wokuqukethwe okuhlobene), ama-ester (28,98 %), ama-ketone, ama-aldehyde, ama-acid, ama-heterocycle, ama-hydrocarbon, izithako eziqukethe isulfure. I-methyl salicylate, i-geraniol, i-β-linalool, i-neryl acetate igqamile — izingxenye ezibhekele iphunga lezimbali nezithelo elikhanyayo.
  • Amavithamini: C, iqembu B, A (ama-carotenoid).
  • Amaminerali: I-Potassium (K), i-magnesium (Mg), i-fluoride (F), i-zinc (Zn), i-manganese (Mn).

8. Izakhiwo Ezizuzisayo:

  • Umphumela ogqamile we-antioxidant: Amazinga aphezulu e-polyphenol (aze afike ku-43 % kumasampuli athile) ahlinzeka ukushabalala okunamandla kwama-free radical — okudlula kakhulu izinkomba zezinye izinhlobo ezitshaliwe.
