1. Ukuhlukaniswa Kanye Nemvelaphi:

- Isigaba: Amatiye adumile aseChina (中国名茶). Ingomunye wamatiye aseChina athandwayo futhi abaluleke ngokwesiko, into yokuqoqa nokutshala imali.
- Imvelaphi: I-China, isifundazwe sase-Yunnan (云南, Yúnnán). Ngokwezinga le-GB/T 22111-2008, i-pǔ’ěr ingakhiqizwa kuphela ezindaweni eziyi-11 zedolobha kanye nezifunda ezizimele zase-Yunnan, ezihlanganisa izifunda ezingama-75. Ngokomlando, izifunda ezingcono kakhulu zithathwa njengezi:

- Líncāng (临沧): Idume nge-shēng enamandla, egcwele kanye nezihlahla zetiye zasendulo. Kuhlanganisa i-Bīngdǎo (冰岛) edumile ne-Xīguī (昔归), kanye nesifunda sase-Měngkù (勐库) esinemizaneni yetiye eyishumi nesishiyagalombili.

- Izixhumanisi zendawo: I-Yunnan iphakathi kuka-21° no-29° N, no-97° no-106° E. Izindawo eziyinhloko zetiye zingaphakathi kuka-21°–25° N, ekuphakameni okungu-1000–2200 m.
2. Umlando Nokubaluleka Kwamasiko:

Umlando: I-pǔ’ěr ingomunye wamatiye amadala aseChina anomlando ongaqhubekayo ongaphezu kweminyaka eyinkulungwane.
- Inkathi ye-Tang (618–907): U-Fán Chuò (樊绰, Fán Chuò) encwadini yakhe ethi ‘Mán shū’ (《蛮书》, ‘Incwadi Ngabantu Baseningizimu’, cishe ngo-863) wabhala: ‘Itiye liphuma ezintabeni eziphethwe yidolobha lase-Yínshèng’ (茶出银生城界诸山). I-Yínshèng iyisifunda sanamuhla i-Jǐngdōng (景东) e-Yunnan. Lona ngomunye wemibhalo yokuqala ebhaliwe mayelana nokukhiqizwa kwetiye endaweni. - Inkathi ye-Míng (1368–1644): U-Xiè Zhàozhì (谢肇淛, Xiè Zhàozhì) encwadini ethi ‘Diān lüè’ (《滇略》, 1598) uthi: ‘Bonke — kusukela kuzikhulu kuya kubantu abajwayelekile — baphuza itiye lase-Pǔ’ěr, eliphekwe ngesitimu futhi licindezelwe libe yizingcezwana’ (士庶所用,皆普茶也,蒸而成团). Ngo-1735 kwasungulwa izinga le-‘qī zǐ bǐng’ (七子饼, Qī Zǐ Bǐng): ibhulokhi ngalinye lalingama-liyāng angu-7 (357 g), amabhulokhi ayisikhombisa enqwabeni — angama-liyāng angu-49. Leli fomethi lisasetshenziswa nanamuhla. Kwachuma iNdlela Yamahhashi Yetiye — inethiwekhi yezohwebo ebanga cishe amakhilomitha angu-2000, exhumanisa i-Xīshuāngbǎnnà ne-Lhasa nge-Dàlǐ, i-Lìjiāng ne-Shangri-La.
- Inkathi yesimanje: Ngo-2003 i-pǔ’ěr yathola ukuvikelwa kwegama lendawo. Ngo-2008 kwaqala ukusebenza izinga le-GB/T 22111-2008. Ngo-2014, ‘Ubuciko Bendabuko Bokwenza i-Pǔ’ěr Yase-Yunnan’ (云南普洱茶传统制作技艺) lwafakwa ohlwini lwamagugu esizwe angabonakali e-People’s Republic of China. Ngo-2023, Amahlathi Etiye Endalo ase-Jǐngmài (景迈山古茶林文化景观) aba yiNdawo Yamagugu Omhlaba ye-UNESCO.

Igama:
- ‘Pǔ’ěr’ (普洱) — igama lomasipala e-Yunnan, owawuyisikhungo sokuhweba okukhulu ngetiye ngokomlando kanye nendawo yokuhlolwa kwezihambi zezitimela zetiye. Idolobha uqobo lwayo lalingewona umkhiqizi omkhulu: itiye lalilethwa lapha lisuka ezintabeni ezizungezile ukuze lithunyelwe phambili.
- ‘Shēng’ (生) — ngokoqobo ‘eluhlaza’, ‘eliphilayo’, ‘elingacutshungulwanga’. Kukhomba ukungabi khona kokufakwa emanzini okusheshayo (ngokungafani ne-shú pǔ’ěr, 熟, Shú — ‘elivuthiwe’, ‘eliphekiwe’). I-shēng pǔ’ěr ifakwa emanzini kuphela ngokwemvelo.
- ‘Chá’ (茶) — itiye.

Ukubaluleka kwamasiko: I-shēng pǔ’ěr iyingxenye ebalulekile yesiko lase-Yunnan kanye nezinhlobonhlobo zezizwe eziyingcosana: ama-Bùlǎng (布朗族), ama-Dǎi (傣族), ama-Hāní (哈尼族), amaLāhù (拉祜族). Ama-Bùlǎng athathwa njengabantu bakudala abalima itiye — okhokho babo, abantu baka-Pu (濮人, Púrén), baqala ukulima itiye eminyakeni engaba ngu-4000 edlule. INdlela Yamahhashi Yetiye yayingeyona nje indlela yokuhweba, kodwa futhi umzila wokuhwebelana ngamasiko phakathi kwabantu baseYunnan, eTibet naseNingizimu-mpumalanga ye-Asia. Eminyakeni yamuva, i-shēng pǔ’ěr isibe yinto yokuqoqa nokutshala imali: amanani amabhulokhi amadala avela ezimbonini ezithembekile anyuka minyaka yonke, kanti ezinye izibonelo ze-vintage zango-1950-70 zibiza amakhulu ezinkulungwane ze-yuan.
3. Incazelo Yezitshalo Kanye Nezinto Zokusetshenziswa:

Uhlobo / UHlelo: Izinto zokusetshenziswa eziyisisekelo — uhlobo lwamakhulu amakhulu ase-Yunnan, i-Yúnnán Dàyèzhǒng (云南大叶种, Yúnnán Dàyèzhǒng — ‘Uhlobo Lwamacembe Amakhulu aseYunnan’), okuyingxenye ye-Camellia sinensis var. assamica (Masters) Kitamura. Lolu hlobo lwezinga likahulumeni (国家良种), olumelelwa yizinhlobo eziningana:
- Měngkù Dàyèzhǒng (勐库大叶种, Měngkù Dàyèzhǒng): Icephe elibanzi elingama-6–15 cm, okuqukethwe ama-polyphenol kufinyelela ku-35%, livame kakhulu ezindaweni zetiye zase-Líncāng nase-Měnghǎi.
- Fèngqìng Dàyèzhǒng (凤庆大叶种, Fèngqìng Dàyèzhǒng): Icephe elinamaqabunga agcwele amanzi, awugqinsi; okuqukethwe ama-amino acid kungaphezu kuka-2.5%.
- Měnghǎi Dàyèzhǒng (勐海大叶种, Měnghǎi Dàyèzhǒng): Ukumelana nokubanda okwenyukile, kuhle kakhulu ekukhiqizeni i-shēng pǔ’ěr. Emahlathini etiye asendle nasemihlanganweni exubile kutholakala futhi i-Camellia taliensis (W.W. Sm.) Melch. kanye nezindlela eziguqukayo eziphakathi kwezihlahla zasendle nezilinywayo.

Iminyaka yezihlahla: Omunye wemikhakha ebalulekile yekhwalithi nentengo ye-shēng pǔ’ěr:
- Táidì Chá (台地茶) — itiye lehlathi leplanti: Iminyaka engaphansi kwengu-30–40, likhula emasimini anezitezi. Linomkhiqizo omkhulu, kodwa ukunambitheka okungajulile. Izinto zokusetshenziswa eziyinhloko emakethe enkulu.
- Dà Shù Chá (大树茶) — izihlahla ezinkulu: Iminyaka kusukela emashumini ambalwa kuya eminyakeni eyi-100. Iphrofayili yokunambitheka eyinkimbinkimbi ngokwengeziwe, ‘umzimba’ ovezwayo wetiye.
- Gǔ Shù Chá (古树茶) — izihlahla zasendulo: Iminyaka eyi-100 nangaphezulu, ngezinye izikhathi engu-500–1000+. Izimpande ezingena ziya ematsheni entaba, zithole amaminerali ahlukene. Ukunambitheka — kujulile, kunezingqimba eziningi, kune-hóuyùn ovezwayo (喉韵 — ‘ukungqubuzana komphimbo’). Amanani — kusukela ku-3000 yuan/kg nangaphezulu, ezindaweni eziphakeme kakhulu (i-Lǎobānzhāng, i-Bīngdǎo) — amashumi namakhulu ezinkulungwane ze-yuan/kg.
- Yě Shēng Chá (野生茶) — itiye lasendle: Izihlahla ezikhula emahlathini emvelo ngaphandle kokungenelela komuntu. Litholakala eziqiwini zase-Qiānjiāzhài, e-Bādá nakwezinye.

Ukuvunwa (采摘, Cǎi zhāi): Isikhathi esiyinhloko — kusukela ngoFebhuwari kuya kuNovemba. Okuvunwa kwasentwasahlobo (春茶, Chūnchá) kubaluleke kakhulu, ikakhulukazi ‘phambi kwe-Qīngmíng’ (明前茶, Míngqián chá — ngaphambi koMkhosi we-Qīngmíng, ekuqaleni kuka-Ephreli) kanye ‘naphambi kwe-Gǔyǔ’ (谷雨前, Gǔyǔ qián — ngaphambi koMkhosi we-Gǔyǔ, ekupheleni kuka-Ephreli). Icephe lasentwasahlobo liqukethe ama-amino acid amaningi nezithako ezinuka kamnandi ngemva kokuphumula kwasebusika. Itiye lasentwasahlobo (秋茶, Qiūchá, noma ‘Gǔ Huā’, 谷花) libuye lihlonishwe kakhulu ngephunga elimnene.

Izinga lokuvuna: Ezinhlobonhlobo eziphakeme — ihlumela elilodwa elinecephe elilodwa (一芽一叶); ezijwayelekile — ihlumela elilodwa enamacephe amabili noma amathathu (一芽二三叶). Kuma-gǔ shù, amahlumela avuthiwe kakhulu (afinyelela kumacephe ama-4) nawo avunwa kaningi, ngoba yiwo anikeza ukuphelela kokunambitheka okuvamile ezihlahleni ezindala.
4. Indawo Nokukhethekile Kwezokulinywa:
- Isifundazwe sase-Yunnan: Siseningizimu-ntshonalanga yeChina, lapho kuhlangana khona i-Tibetan Plateau ne-Indochina Peninsula, emngceleni weMyanmar, i-Laos ne-Vietnam. Kuthathwa njengenye yezindawo lapho kwaqala khona isihlahla setiye: lapha kwatholakala izihlahla zetiye zasendle ezindala kakhulu ezineminyaka efinyelela ku-2700 (i-Qiānjiāzhài, isifunda sase-Zhènyuán).
- Ukuphakama kokuhlala: Izindawo eziyinhloko zetiye — 1000–2200 m ngaphezu kogu lolwandle. Izingadi eziphakeme (ngaphezu kuka-1600 m) zinikeza itiye elinamakha acwengekile nobumnandi obuvezwayo ngenxa yokushintshashintsha okukhulu kwamazinga okushisa emini nasebusuku.
- Isimo sezulu: Isimo sezulu esishisayo nesishisayo esiphezulu, esinendawo ephansi kakhulu. Izinga lokushisa lonyaka eliphakathi lika-14–23°C. Imvula yonyaka ingu-1500–2100 mm. Kubonakala ngenkungu enkulu, umswakama ophezulu (≥80%) kanye nokushintshana okukhulu kwamaqondo okushisa emini (kufinyelela ku-15°C), okubambezela ukukhula kwecephe futhi kukhuthaze ukunqwabelana kwezithako ezinuka kamnandi nama-amino acid.
- Inhlabathi: Kugcwele inhlabathi ebomvu nezitini ezibomvu (i-lateritic red soils) ene-pH engu-4–6, ecebe ngama-oxide e-iron ne-aluminium, kanye ne-humus. Ukusabela okunomuncu kanye nokuqukethwe okuphezulu kwe-organic kuhle kakhulu esihlahleni setiye.
- Imvelo: Amahlathi amaningi etiye abonakala ngenani eliphakeme lokumboza ihlathi (≥82% endaweni yetiye yase-Měnghǎi). Izihlahla zasendulo zikhula ngokuhlangana nezinhlobo zezihlahla ezishisayo nezishisayo, okwenza i-ecosystem eyingqayizivele. Ukukhanya okuhlakazekile ngaphansi kwegquma lehlathi kukhulisa okuqukethwe kwe-L-theanine ne-chlorophyll ecephelini.
5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-shēng pǔ’ěr bungenye yobudala futhi bungenabuningi ‘bokungenelela’ emhlabeni wetiye. Umgomo oyinhloko — ukugcina umsebenzi wama-enzayimu angaphakathi ukuze uguquke ngokwemvelo lapho ugcinwe. Konke ukukhiqiza kwakhelwe ekuvinjelweni kwamazinga okushisa aphezulu (全程忌高温).
- Ukuvuna (采摘, cǎi zhāi): Ukuvuna ngesandla; umshini uvunyelwe kuphela etiyeni leplanti.
- Ukushiswa / Tān liáng (摊晾, tān liáng / 萎凋, wěi diāo): Icephe elisanda kuvunwa lilungiswa libe uncane endaweni enomoya (kumapulatifomu omhlanga noma endwangwini). Inhloso — ukukhipha umswakama ngokwengxenye (ukuze kulahlekelwe ama-20–30% wesisindo), ukuthambisa icephe kanye nokuqala izinqubo ezilula zokufaka umoya-mpilo. Isikhathi — kusukela emahoreni ambalwa kuya osukwini, kuye ngobukhulu becephe nezimo zezulu.
- ‘Ukubulawa kokuluhlaza’ / Shāqīng (杀青, shā qīng): Ukugazinga epanini lensimbi (铁锅) ekushiseni okungu-180–200°C. Lesi sigaba senza i-polyphenol oxidase ingasebenzi futhi simise ukufakwa komoya-mpilo okukhulu, kodwa, ngokungafani netiye eliluhlaza, senziwa ngobumnene kakhulu futhi ngezinga lokushisa eliphansi, ukuze kungabulawa ngokuphelele umsebenzi we-enzayimu. Yilo msebenzi osele wama-enzayimu onikeza amandla okukhula esikhathini esizayo. Umculi ulawula inqubo ngomsindo, iphunga nangokuthinta — icephe kufanele libe lithambe, libe nokuphola kancane, livuse iphunga elikhethekile le-chestnut.
- Ukusonta / Róu niǎn (揉捻, róu niǎn): Icephe liyasontwa ngesandla noma ngamarola, kugqekeze izindonga zamangqamuzana futhi kukhishwe uju lwamaseli. Izinga lokusonta liyehluka: kuma-gǔ shù — ngokuvamile alula, ukuze kulondolozwe uhlaka lwamacephe amakhulu; etiyeni leplanti — kujulile kakhulu.
- Ukumiswa elangeni / Shài gān (晒干, shài gān): Isigaba esibalulekile, esihlukanisa i-shēng pǔ’ěr kuwo wonke amanye amatiye. Icephe elisontiwe lilungiswa libe uncane endaweni evulekile bese lomiswa ngaphansi kwelanga kuze kube owamanzi okuqukethwe ≤10%. Ukumiswa elangeni (hhayi ukushiswa noma ngomshini) kuyisimo esibalulekile sokugcina ama-microorganisms aphilayo kanye nomsebenzi osele we-enzayimu. Umkhiqizo kulesi sigaba ubizwa nge-shàiqīng máochá (晒青毛茶, shài qīng máo chá — ‘isithako esiluhlaza esicutshungulwe elangeni’).
- Ukuhlunga / Fēn jí (分级, fēn jí): I-máochá ihlelwa ngosayizi, umbala nekhwalithi yamacephe.
- Ukucindezela / Yā zhì (压制, yā zhì): Isigaba esingaphoqelekile. I-máochá ingathengiswa ingacindezelwanga, kodwa ngokuvamile icindezelwa ibe yifomu elijwayelekile ngemva kokubiliswa kafushane (ukuze ithambe):
- Bǐngchá (饼茶) — ibhulokhi eliyindilinga: Isinkwa esiyindilinga, isisindo esijwayelekile singu-357 g (七子饼, qī zǐ bǐng — ‘ibhulokhi eliyisikhombisa’). Amabhulokhi ayisikhombisa egoqwe ngomhlanga (筒, tǒng) enza i-tǒng eyodwa (2499 g ≈ ‘amaliyāng angu-49’ esintu). Kukhona futhi amabhulokhi angama-100 g, 200 g, 400 g.
- Zhuānchá (砖茶) — isitini: Ibhulokhi eliwunxande, ngokuvamile elingama-250 g noma 500 g.
- Tuóchá (沱茶) — isidleke/in indebe: Isimo esiyi-semi-spherical esinokugobeka, kusukela kuma-3 g (mini tuó) kuya ku-100–250 g.
- Ezinye izindlela: Isimo esifana nesikhwebu (蘑菇沱, Mógū tuó — esenzelwe imakethe yaseTibet), isimo esifana nethanga (金瓜贡茶, Jīn Guā Gòng Chá — ‘ithanga legolide’, ifomethi yomlando yasesigodlweni), insika (柱形, Zhù xíng).
- Ukumiswa kwemvelo kwetiye elicindezelwe: Ngemva kokucindezela, amabhulokhi/izitini/izindebe ziyomiswa endaweni enomoya ekushiseni kwekamelo kuze kube zoma ngokuphelele (izinsuku ezimbalwa).
- Ukufakwa emanzini ngokwemvelo / Chénhuà (陈化, chénhuà): Isigaba esikhulu ‘esingabonakali’. Ngemva kokuqedwa kokukhiqiza, i-shēng pǔ’ěr ifakwa endaweni yokugcina, lapho kuhamba kancane ukuguqulwa kwama-microbial kanye ne-enzayimu phakathi kwezinyanga, iminyaka namashumi eminyaka. Ama-polyphenol aguqukela kancane abe yi-theaflavin ne-thearubigin, amaprotheni ahlukaniswa abe ama-amino acid, izithako ezinuka kamnandi eziyinkimbinkimbi ziyakheka. Le nqubo iphendula itiye elibabayo, eliluhlaza elincane libe isiphuzo esithambile, esimnandi, ‘esibushelelezi’ futhi esivuthiwe.
6. Izimpawu Zezitho Zomzimba:
Izimpawu zezitho zomzimba ze-shēng pǔ’ěr zishintsha kakhulu ngokuhamba kwesikhathi — lokhu kuyisici esiyinhloko saleli tiye.
I-shēng pǔ’ěr encane (新茶, engaphansi kweminyaka emi-3):
- Isimo sangaphandle secephe elomile: Ukusontwa okuqinile (紧结卷曲), umbala — uluhlaza obumnyama (墨绿) ocwebezelayo ngamafutha, amacebe amhlophe nesiliva (白毫) abonakala kahle.
- Iphunga lecephe elomile: Elimnandi, elinotshani, elinezimbali, linamanothi otshani obusanda kugundwa, i-apula eliluhlaza, izimbali zakuqala.

- Indawo: Indawo emnyama, eyomile, enomoya omuhle ngaphandle kwephunga langaphandle. Izinga lokushisa elifanele — 20–30°C; umswakama — 60–70%. Gwema imisebe eqondile yelanga, ukushintshashintsha okukhulu kwamazinga okushisa, umswakama omkhulu (>80% — ubungozi besikhunta) kanye nokoma ngokweqile (<50% — ukumiswa kokuguqulwa).
- Isiqukathi: Ukupakisha ‘okuphefumulayo’, okuvumela umoya ukungena:
- Ukugoqeka kwangempela komhlanga/iphepha (i-tǒng).
- Iziqukathi zobumba noma zobumba ezingacwebezeliswanga.
- Amabhokisi ekhadibhodi (avumelekile).

11. Intengo Nokukhwabanisa:
