4. I-Terroir Nezici Zokutshala:

  • Ukwakhiwa kwesisekelo setiye (茶坯制作, chápi zhìzuò):

    1. Ukuvuna (采摘, cǎizhāi): Ukuvunwa ngesandla kwemibhonyane enoboya obuthambile enombhonyane owodwa noma amabili.
    2. Ukushwilisa (摊凉, tānliáng): Amaqabunga avuniwe asatshalaliswa ngosendlelayana oluncane amahora angu-4–6 ukususa umswakama ongaphezulu nokubuyisela ukunwebeka.

Umjikelezo uphindwa izikhathi ezingu-5–7 (kumazinga aphezulu — kufinyelela ezikhathini ezingu-8–10), isikhathi ngasinye ngenqwaba entsha yezimbali ezintsha.     4.   • Iphunga lokushiswa: Iphunga le-jasmine elisongelayo, elijulile elinemisindo yobumnandi obufana nokhilimu kanye nobusha obungaka boqobo bembali, okuwuphawu lwe-linalool yekhwalithi ephezulu. Lapho liphola, kuvela imisindo ecolekile eluhlaza-okotshani evela esisekelweni setiye.
  • Ukunambitheka: Okupholile, okuncane, okuqabulayo, nobumnandi obungokwemvelo obusobala. Ekunambithekeni, imisindo yetiye eliluhlaza ne-jasmine ihlangana ngokuvumelanayo. Ubumuncu buncane noma abukho, ubukrakra abukho. Ukunambitheka ngemva kokugwinya kuhlala isikhathi eside, kuhlanzekile, kufana nembali-yezinyosi, futhi kunokuphola okuncane (回甘, huígān).
  • Umbala wokushiswa: Ophuzi ngokukhanyayo onokucwazimula kwegolide, osobala, ohlanzekile, nokumnyenyeza okukhanyayo. Ngokuphindaphinda ukuselwa, umbala usiba ngokukhanyayo, ube ngotshani obuphaphathekile obuphuzi.
  • Insimbi yetiye (iqabunga elishisiwe): Imibhonyane evulekile namaqabunga anombala oluhlaza othambile, athambile, anwebekayo. “Uvemvane” ngokuvamile lugcina isimo salo ngisho nangemva kokushiswa izikhathi ezimbalwa, okufakazela ubuciko bokulenza. 7. Ukwakheka Kwamakhemikhali:

I-Mòlì Yù Dié ihlanganisa izinto eziphilayo ezisebenzayo zetiye eliluhlaza nezinhlanganisela ezinuka kamnandi ze-jasmine, okudala iphrofayili yamakhemikhali eyingqayizivele:

  • Ama-Polyphenol (ama-catechin): Izinga eliphelele lama-polyphenol esisekelweni setiye eliluhlaza lingamaphesenti angu-15–25 wesisindo esomile. I-catechin ewumgogodla — i-epigallocatechin-3-gallate (EGCG), enomsebenzi ogqamile wokulwa ne-oxidation.
  • Ama-Amino acid: I-L-theanine (L-茶氨酸, L-cháānjīsuān) — u-1–2% wesisindo esomile, enikeza ukunambitheka okunoshukela kanye nomphumela wokupholisa uma kuhlanganiswe nokuvuselela okuncane.
  • Ama-Alkaloid: I-caffeine — u-2–3% wesisindo esomile (okulinganiselwa ku-20–35 mg ngenkomishi engu-150 ml). I-Theobromine ne-theophylline ngamanani okulandela umkhondo.
  • Amavithamini: I-Ascorbic acid (ivithamini C), amavithamini eqembu B (B₁, B₂), ivithamini P (i-rutin).
  • Amaminerali: I-Potassium, i-magnesium, i-fluoride, i-manganese, i-zinc.
  • Amafutha abalulekile e-jasmine: Akha isisekelo sephrofayili yephunga. Izakhiwona eziwumgogodla: i-linalool (iphunga elifana ne-lily of the valley — ithoni ye-lily of the valley), i-benzyl acetate (ubumnandi obufana nezinyosi — ubumnandi bezinyosi), i-methyl benzoate (ithoni yembali-yezithelo), i-indole (emazingeni aphansi ikhulisa umuzwa wephunga lembali), i-methyl anthranilate (ithoni yezimbali ze-orange), i-α-farnesene. Isibalo esiphelele sezinhlanganisela ezikhethiwe eziphephelayo ezikhonjwa etiyeni le-jasmine sidlula u-145.
  • I-Chlorophyll: Iyalondolozwa ngenxa yokuqiniswa kohlaza esigabeni se-shaqing, inikeze ukushiswa umbala oluhlaza.

8. Izakhiwo Eziwusizo:

  • Umsebenzi wokulwa ne-oxidation: Ama-catechin etiye eliluhlaza, ikakhulukazi i-EGCG, anciphisa ama-radical akhululekile futhi anciphise ingcindezi ye-oxidative, okuphuza isivinini sezinqubo zokuguga kwamaseli.
  • Umphumela omncane wokuvuselela: Ukuhlanganiswa kwe-caffeine ne-L-theanine kunikeza amandla alinganayo, ahlala isikhathi eside ngaphandle kokukhuphuka nokwehla okukhulu, kuthuthukise ukugxilisa ingqondo nemisebenzi yokuqonda.
  • Umsebenzi wokupholisa nokulwa nengcindezi: Izakhi ezinuka kamnandi ze-jasmine — i-linalool ne-benzyl acetate — zinika umphumela omnene wokupholisa ohlelweni lwemizwa, zinciphise amazinga okukhathazeka futhi zisize ekuphumuleni okungokomzwelo.
  • Ukuthuthukisa ukugayeka kokudla: Ama-polyphenol nama-catechin akhuthaza ukukhiqizwa kwama-enzyme okugaya, asize ekujwayeleni ukusebenza komzimba.
  • Ukusekela uhlelo lwenhliziyo nemithambo: Ukusetshenziswa okuvamile kwetiye eliluhlaza kuhlanganiswe nokuncipha kwamazinga “amabi” e-cholesterol (i-LDL) kanye nokujwayela umfutho wegazi.

  • Umphumela wokuqabula: Kuqeda ukoma ngendlela emangalisayo, ikakhulukazi ekushisweni okubandayo (冷泡茶, lěng pào chá) ngenkathi yasehlobo.

9. Ukushisa (Ukufaka Amanzi Eshisayo):

  • Izinga lokushisa lamanzi: 75–85°C. Amanzi ashisayo kakhulu “ayawashisa” amaqabunga athambile, abangele ubukrakra futhi acekele phansi izakhi ezinuka kamnandi ezintekenteke.
  • Inani letiye: 1 “uvemvane” (cishe u-5–7 g) ngamanzi angu-150–200 ml. Lapho kushiswa ngegedlela lengilazi, kungasetshenziswa “izimvemvane” ezingu-2–3 kumqondo ongu-300–500 ml.
  • Ithuluzi: Igedlela lengilazi noma inkomishi yengilazi (玻璃壶, bōli hú) — kuyisinqumo esihle, esikuvumela ukuba ubuke ukuvuleka “kovemvane”.   • I-Mòlì Lóng Zhū (茉莉龙珠, Mòlì Lóngzhū) — “Amaparele Kadrako We-jasmine”: Amaqabunga asongwe abe amabhola aminyene.
