3. Incazelo Yezitshalo Nezinto ezingavuthiwe:

  • Uhlobo: Inhlanganisela yeqembu laseMéngshān (蒙山群体种, Méngshān qúntǐ zhǒng) — uhlobo olunamaqabunga amancane lwe-Camellia sinensis var. sinensis. Uhlobo lwesihlahlana, ukumelana neqhwa okuphezulu, ukuzivumelanisa nezimo zezintaba eziphakeme nalawo anamafu njalo. Amaqabunga mancane, aminyene, anomthamo omkhulu wama-amino acid. Imithi emidala kakhulu eHuángchá Yuán — ngokwenganekwane, iminyaka ecishe ibe ngu-2000 (isikhathi sangempela sokutshala sakamuva simfishane kakhulu, kodwa ulayini wohlobo lomkhulu siyaqhubeka nokugcinwa).
  • Ukuqoqa: Isikhawu esiyinhloko — kusukela eChūnfēn (春分, ukulingana kwentwasahlobo, ~20 March) kuya eGǔyǔ (谷雨, ~20 April). Ukuqala kokuqoqa bekunqunywa ngokuvuleka kwezingqimba ecishe ibe ngu-10% wamihlumela esihlahleni. Izinga eliphakeme kakhulu elithi “zhēnpǐn” liqoqwa ngaphambi kweQīngmíng (清明, ~5 April) kuphela.
  • Indinganiso yokuqoqa: Ngohlelo lwe-“zhēnpǐn” nelwe-“tèjí” (特级) — imihlumela eyodwa kuphela ephelele, eyindilinga, egcwele (单芽, dān yá) ngaphandle kwezingqimba namacembe angenalutho. Ubude bomhlumela ≤2.5 cm. Ohlwini lokuqala — umhlumela onekhasi elilodwa elisanda kubonakala kancane (一芽一叶初展). Kwengxube eyomile engu-500 g yezinga eliphakeme kakhulu, kudingeka imihlumela engama-40 000–50 000.
  • Izidingo zezinto ezingavuthiwe: Kuyasetshenziswa umthetho “wezinto ezinhlanu ezingavunyelwe ukuqoqwa” (五不采, wǔ bù cǎi): ungayiqoqi imihlumela ensomi, ungayiqoqi leyo ehlulwe yizinsana, ungayiqoqi leyo enomswakama ovela emazolo, ungayiqoqi leyo ecengekile, ungayiqoqi leyo engenalutho. Izinto ezingavuthiwe ziyaphemba ngokushesha futhi zihlungwe lapho zifika embonini.

4. I-Terroir Nezici Zokutshala:

  • Isifunda: I-Méngdǐngshān isemkhawulweni osentshonalanga weSìchuān Basin, endaweni eguqukayo phakathi kweQinghai-Tibet Plateau namathafa aseNtshonalanga Sìchuān. Intaba ingeyomngcele iQiónglái (邛崃山脉, Qiónglái Shānmài). Izintaba eziyisihlanu zenza “isitsha”, esivikela izingadi zetiye emoyeni futhi sidala isimo sezulu esincane esihlala sinezulu elimbethe.
  • Ubude bokutshala: Isicongo se-Méngdǐngshān singu-1456 m ngaphezu kogu lolwandle. Izingadi zetiye zitholakala ebangeni eliphakeme eliyi-800–1450 m. IHuángchá Yuán isebangeni eliphakeme cishe eliyi-1200 m.
  • Umhlabathi: Imihlaba yezintaba enombala ophuzi nesundu (黄棕壤, huáng zōng rǎng), ene-asidi (pH 4.5–5.6), ejulile, evundlayo, enomthamo omkhulu wezinto eziphilayo. Inothiswe nge-selenium, i-zinc kanye nezinye izakhi zokulandelela. Idwala elingumzali — amatshe amatshe agugwe umoya kanye namadwala.

Lezi zimo — amafu ahlala ekhona, umswakama ophezulu, izinga lokushisa elilinganayo — zilungele ukukhula kancane kwamihlumela kanye nokuqoqwa okukhulu kwama-amino acid nezinto ezinuka kamnandi.
  • Izici: Ukuhlanzeka kwendawo: i-Méngdǐngshān ikude nezindawo zezimboni, izungezwe amahlathi, izinga lomoya namanzi lihambisana nezindinganiso eziphakeme kakhulu. Indlela ye-terroir — “izintaba eziphakeme + amafu + imvula + umhlabathi one-acidi” — idala izimo ezingeke zenziwe kabusha kwenye indawo.

5. Ubuchwepheshe Bokukhiqiza:

Ubuchwepheshe be-Méngdǐng huáng yá bungenye yezinto eziyinkimbinkimbi kakhulu phakathi kwamatiye aphuzi.   • “Ukubulawa kohlaza” (杀青 — shā qīng): Kusetshenziswa iketela eliyisicaba (平锅) elinobubanzi obucishe bube ngu-50 cm, eligcotshwe ungqimba omncane we-wax emhlophe ukuvimbela ukunamathela. Izinga lokushisa leketela lizungeza u-130°C. Umthamo wokulayishwa — u-120–150 g wamihlumela ngeketela ngalinye. Isikhathi — imizuzu engu-4–5.   • Ukufaka emanzini kokuqala / Chūbāo (初包 — chū bāo): Imihlumela ethosiwe iyasongwa ngephepha lezandla (草纸, cǎo zhǐ) — into yomdabu, evumela umoya ukuba ungene kodwa ikwazi ukugcina ukushisa nomswakama. Isongwa libekwa eceleni kwesitofu (灶边), lapho kukhona ukushisa okuthambile okuseleyo. Izinga lokushisa ngaphakathi kwesongwa lingu-28–32°C, umswakama — cishe u-90%. Isikhathi sokufaka emanzini kokuqala cishe yimizuzu engama-60. Phakathi kwe-chūbāo, kuqala ukuguquka kombala ophuzi okungeyona eze-fermentation: i-chlorophyll iyancipha ngokwengxenye, ama-catechin aguqulwa, kuqala ukwakheka imibala ephuzi kanye nobumnandi obuhlukile.
  • Umjikelezo wesibili wokuthosa / Fùchǎo (复炒 — fù chǎo): Imihlumela iyasuswa esongweni bese iphinde ithoswe eketeleni ngezinga lokushisa eliphansi kunokwakuqala. Umsebenzi — ukuyomisa phezulu, ukulungisa umphumela omaphakathi wokufaka emanzini nokulungiselela ikhasi ukuba singene esigabeni esilandelayo.
  • Ukufaka emanzini kwesibili / Fùbāo (复包 — fù bāo): Imihlumela iyasongwa futhi ngephepha lezandla bese ihlala ingaphansi kwezimo ezifanayo. Isikhathi — cishe imizuzu engama-60. Ukushintsha kombala kuya ojikazi kuyashuba, iphunga liba sobala kakhulu.
  • Umjikelezo wesithathu wokuthosa / Sānchǎo (三炒 — sān chǎo): Omunye umjikelezo wokuthosa okulula ukuze kulawuleke umswakama nokuqinisa umbala.
  • Ukufaka emanzini ngeqoqo / Duījī tānfàng (堆积摊放 — duījī tānfàng): Ngemuva kokuthosa kwesithathu, imihlumela iyandlalwa ngeqoqo elincane bese iyashiywa ngaphansi kwezimo zomswakama ophakeme. Lesi yisigaba “sokufaka emanzini okumanzi” (湿闷发酵), esiqedela ukwakheka “kobuthathu obuphuzi”. Isikhathi esigcwele sazo zonke izigaba zokufaka emanzini siyizikhathi eziyi-8–12 amahora.
  • Umjikelezo wesine wokuthosa / Sìchǎo (四炒 — sì chǎo): Ukuthosa kokugcina ukuze kube nokubumba okuphelele — okuyisicaba, okuqondile, okufana nenkemba (扁平挺直似剑).
  • Ukomisa / Hōngbèi (烘焙 — hōngbèi): Ukomisa okunezinga lokushisa eliphansi lokugcina ukuze umswakama wehliselwe ezingeni elijwayelekile (≤6.5%) nokuqinisa iphunga.

Ingqikithi yendlela ethi “sānchǎo sānmèn”: Ukushintshana kaningi phakathi kokuthosa nokufaka emanzini kwenza ukuba ukwakheka kombala ophuzi kulawuleke ngokunemba okukhulu. Umjikelezo ngamunye othi “ukuthosa — ukufaka emanzini” uqinisa umbala ophuzi nobumnandi, kodwa ekuhambeni kwesikhathi ukuthosa kumisa inqubo ngesikhathi esifanele, kuvimbele ukuba iqhubekele phambili kakhulu. Umphumela — ukunambitheka okulinganiswe kahle, okunendlalela eziningi kanye nobuhle “bobuthathu obuphuzi”.

6. Izici Zezitho Zomzimba

  • Isimo sekhasi elomile: Amacembe ayisicaba, aqondile, afana nenkemba (扁平挺直似剑, biǎnpíng tǐngzhí sì jiàn), alinganayo ngosayizi. Izinwele ezinde ezisagolide (金毫显露). Umbala — uphuzi onsundu ofudumele onokukhazimula okunamafutha (褐黄油润, hè huáng yóu rùn). Ohlwini lwe-“zhēnpǐn” amacembe alinganisa ngendlela exakile, ahlanzwe kahle.
  • Iphunga lekhasi elomile: Lithambile, limnandi, linomphumela ogqamile “womnambithi” (嫩栗香) — iphunga lezintuba ezincane. Kukhona futhi izinhlanganisela zobusi kanye nezinhlamvu ezinoshukela.
  • Iphunga lomhluko: Umnandi ogcwele (甜香浓郁) — umnandi, ogcwele, onophawu oluyisisekelo lwezintuba kanye nobusi obuphezulu. Lapho kuhanjiswa okwendlalela okwalandelayo, kuvela ama-nuances amnandi ezithelo kanye nobisi. Ohlwini lwe-“zhēnpǐn” kugqama “umkhandlo wobusi” (蜜香) — umsindo ohlala ungapheli wobusi.
  • Ukunambitheka: Umncane ohlanzekile nobumnandi obubuyelayo (鲜醇回甘) — omusha, othambile, onokubuya okumnandi okuhlala isikhathi eside. Inwebu isilika nenamafutha. Ukukrakra nokuphunga akukho cishe ngenxa yokufaka emanzini okuphindaphindiwe. Ukunambitheka kuchazwa ngendlela ethi “ubumnandi obuthathu” (三甜): ubumnandi bephunga, ubumnandi bokunambitheka, ubumnandi bangemuva kokunambitha. Uphawu oluhlukile lwe-Méngdǐng huáng yá ekahle — “lěnghòuhún” (冷后浑) — ukucwamba komhluko opholile, okubonisa umthamo omkhulu wama-polyphenol complexes.
  • Umbala womhluko: “Ukuqhakaza okuluhlaza okukhanyayo” (黄亮透碧) — okuphuzi okukhanyayo nokukhazimula okuluhlaza okotshani, okukhanyayo, nokucwebezela okucacile. Lona wuphawu lwe-Méngdǐng huáng yá, olwaluvele luchazwa emibhalweni yomlando yaseQing.
  • Ingaphansi lekhasi (ikhasi elibambekile): Imihlumela ephelele, ethambile, elinganayo yombala ophuzi omuhle (全芽嫩黄匀整). Wonke amacembe avuleke ngokulingana, angenamonakalo.

7. Ukwakheka Kwezinto Zezimboni:

  • Ama-polyphenol: Umthamo wama-polyphenol etiye — cishe u-27.5% wezinto eziwomile. 11. Intengo Nokukhwabanisa:

I-Méngdǐng huáng yá ingelinye lamatiye aphuzi abiza kakhulu eShayina. Intengo yohlelo lwe-“zhēnpǐn” ingadlula ama-yuan ayizi-3 000–5 000 ngejin (500 g); i-“tèjí” — ama-yuan ayi-1 500–3 000; izinga lokuqala — kusukela kuma-yuan angu-500. I-Mògān ihlotshaniswa nabashisekeli bezinguquko bekhulunyaka lama-20; i-Méngdǐng — nababusi kanye nezinganekwane ze-dao. Ubuchwepheshe be-Mògān bulula (ukufaka emanzini kanye), i-Méngdǐng — inkimbinkimbi (imijikelezo emithathu).
  • Huòshān Huáng Yá (霍山黄芽, Huòshān Huáng Yá): Itiye eliphuzi laseĀnhuī, ngokufanayo livela emihlumeleni. I-Huòshān — iphunga elikhulu, “eluhlaza” ngokwesimo, elinomnambitha ogqamile wamaminerali. I-Méngdǐnd — imnandi, ithambile, inesimo “esiphuzi” esijulile. I-Huòshān Huáng Yá yazuza iKhethele Yegolide kuMhlangano WasePanama ngo-1915 — ngalinye lalawo matiye linodumo lwalo.
  • Dàyèqīng (大叶青, Dàyèqīng): Itiye eliphuzi elinamaqabunga amakhulu laseGuǎngdōng — liphikisana nendlela yokuklama ne-Méngdǐng. I-Dàyèqīng — isindayo, inotshwala, inomphumela wekhasi elichoshiwe; i-Méngdǐng — iyathakazelisa, imnandi, inobusi. Ukuqhathanisa kubonisa ukuthi ububanzi bamatiye aphuzi bukhulu kangakanani.

Ekuphetheni:
