  • I-Cultivar: I-Máoxiè (毛蟹, Máoxiè), ebizwa nangokuthi i-Mínghuā (茗花).   • Inhlabathi: Izimpuphu ezibomvu ezine-acidic (红壤, hóng rǎng) nezimpuphu eziphuzi (黄壤, huáng rǎng), i-pH 4.5–6.0. Ukujiya kwengqimba yenhlabathi kungaphezu kwe-1 m, okuqukethwe yinto ephilayo ≥ 2.45 %. Ubuningi bamahlathi endaweni yase-Dàpíng bungu-78%, ukungcola kwemboni akukho. Inhlabathi inothiswe nge-selenium, okwenza isifunda sibe yisisekelo somkhiqizo «wemikhiqizo eluhlaza» (绿色食品) esezingeni eliphezulu lemvelo.

5. Ubuchwepheshe Bokukhiqiza:

Ubuchwepheshe bokukhiqiza i-Máoxiè Chá ye-ulong bufana ngokuvamile nokukhiqizwa kwe-ulong yase-Anxi yohlobo lwe-Tiěguānyīn, kodwa kwehluka ngezinga elincane kakhulu lokuvutshelwa: i-Máoxiè igcina iphunga elimsulwa lezimbali ne-jasmine nge-oxidation ephansi uma kuqhathaniswa. 6. Izici Zokuqonda Ngomzimba Nezokuzwa:

  • Ukubukeka kwe-leaf eyomile: Izinhlamvu eziminyene, ezigoqeke ngokuqinile (颗粒状) zesimo esijwayelekile «ikhanda elikhulu, umsila ocijile», ezinombala ocacile oluhlaza ngesihlabathi (砂绿色, shālǜ sè).   • Izingxobo zetiye (i-leaf elenziwe ngetiye): Ama-leaf avuleka, ebonisa ikhasi eliphelele — eliyindilinga, elincane, elinobubanzi obuphakathi obucacile nezihloko ezicijile. Amazinyo ajulile, amaningi, acijile, ngokujwayelekile agobele phansi (锯齿下钩). Umbala wezingxobo — kusukela kuluhlaza ophuzi kuya emnqumweni; ikhasi lithambile, linwebeka. Isici esibalulekile sokuxilonga: ama-leaf e-Máoxiè agobela ngaphakathi, kanti ama-leaf e-Tiěguānyīn agobela ngaphandle.

7. Ukwakheka Kwamakhemikhali:

Iphrofayili yamakhemikhali ye-Máoxiè icwaningwe kahle ngaphakathi kocwaningo lwe-ulong yase-Fújiàn futhi ibhalwe phansi ngesikhathi sokuhlolwa kwezinhlobo.

  • I-Polyphenols (茶多酚): Okuqukethwe — 14.7–20.1% (e-leaf yasentwasahlobo enezinga «lemala elilodwa + ama-leaf amabili»). Ama-catechin akha isabelo esikhulu; inani eliphelele lama-catechin — cishe 5.8%. Ngesikhathi sokuxubana nomoya-mpilo okuyingxenye ngenkathi ye-«yáoqīng» ingxenye yama-catechin iguquka ibe ama-aldehyde nama-spirit aphunga kamnandi, akha iphrofayili ye-jasmine.
  • Ama-amino acid: 3.0–4.2%, kuwo isabelo esikhulu — i-L-theanine. Okuqukethwe okuphezulu kwama-amino acid kubangelwa i-terroir yezintaba enenkungu eningi nokukhanya okusabalalisiwe, okucindezela i-photosynthesis yama-catechin futhi kusize ekuqongeleleni kwezinhlanganisela ze-nitrogen.
  • Ama-alkaloid: I-caffeine — 3.2–4.1% (izinga eliphakathi ngenani eliphakeme le-ulong), i-theobromine ne-theophylline — amanani amancane. I-synergy ye-caffeine ne-L-theanine inikeza umphumela oqinile, othambile wokukhuthaza ngaphandle kokuphakama okusheshayo.

9. Ukwenza Itiye:

10. Ukugcina:

  • Isitayela «qīngxiāng»: Ukuphakisha okuvaleke ngokuphelele (isikhwama esingenasikhala noma esigoqwe ngo-foil), kugcinwe esiqandisini ku-0–5 °C. 11. Intengo Nezokukhohlisa:

  • Isigaba senani: I-Máoxiè ingenye yama-ulong ase-Anxi afinyeleleka kakhulu, okubangelwa isivuno esikhulu se-cultivar nendawo yokutshala ebanzi. 12. Amaqiniso Athakazelisayo:

  • I-Tiěguānyīn (铁观音, Tiěguānyīn): «Umfowethu omkhulu» kuzine ezinkulu zase-Anxi. Umhluzo omnyinyekile, osindayo; iphunga elimsulwa lezimbali nama-orchid elinoku-«guānyīnyùn» okujulile; i-leaf inkulu, isiqu sicijile (sifana nodondolo lwesigubhu).   • U-Běnshān (本山, Běnshān): «Isihlobo» esiseduze se-Tiěguānyīn, esatholwa cishe ngonyaka we-1870. Ufana ne-Tiěguānyīn ngokunambitheka nangesimo se-leaf, kodwa iziqu zincane kakhulu, zinamalunga agqamile (afana negatsha lomhlanga). I-Máoxiè, ngokungafani no-Běnshān, inoboya obumhlophe obugqamile namazinyo angokomfanekiso «ezinzipho».
  • I-Huángdàn / Huángjīnguì (黄旦 / 黄金桂, Huángdàn / Huángjīnguì): Inhlobo yokuqala kakhulu yase-Anxi («itiye le-Qīngmíng»). I-leaf encane, emide, enombala oluhlaza ophuzi; iphunga elimsulwa ngokwedlulele, elihlabahlosile (ipentshisi, isihlahla se-cinnamon). I-Máoxiè — iphakathi ngesikhathi, inephunga le-jasmine eliyindilinga kakhudlwana kanye nobukhulu obukhulu bomhluzo.
  • I-Méizhān (梅占, Méizhān): I-cultivar eyisihlahla esincane (小乔木型) evela emzaneni wakwa-Sānyáng. Iguquguquka: kwenziwa ngayo i-ulong, amatiye abomvu nawehlaza. I-leaf inkulu futhi inamandla kunaleyo ye-Máoxiè; iphunga linesici esijwayelekile «sika-méizhān chuàn» — iphunga elihlabahlosile, «elingena ngaphakathi», elehlukile kwele-jasmine le-Máoxiè.

Ekuphetheni:

I-Máoxiè Chá — «ihhashi elisebenzayo» lomhlaba wetiye wase-Anxi, elikwaziyo ekuqhamukeni kwalo okuhle kakhulu ukuphakama liye ezingeni lomsebenzi wangempela wengcweti. Inhlanganisela yokufinyeleleka, umkhiqizo ophezulu wesihlahla kanye nephunga elimsulwa, elingenakuqhathaniswa ne-jingle, yenza i-Máoxiè ibe yisango elifanele lokungena emhlabeni we-ulong yase-Mǐnnán kulabo abafuna iphrofayili yezimbali egqamile ngaphandle kwesithiyo sentengo ye-Tiěguānyīn. Futhi kumthandi onolwazi, i-Máoxiè egugile noma ekhethwe ngobuchwepheshe obuvela ezingadini ezisezintabeni eziphakeme zase-Dàpíng — iyisikhumbuzo sokuthi itiye elikhulu alinqunywa igama le-cultivar kuphela, kodwa ikakhulukazi yi-terroir nesandla sengcweti.
