- Uhlobo / I-cultivar: I-Lingtoú Dān Cóng (岭头单丛) – i-cultivar yoqobo, ethathwe eqenjini lendawo lezihlahla zomdiliya wamanzi (水仙, shuǐxiān). 4. I-Terroir kanye Nezici Zokutshala:
- Isifunda kanye nokwakheka komhlaba: Isifunda iRáopíng sisempumalanga ekugcineni yesifundazwe saseGuangdong, lapho kuhlangana khona nesifundazwe saseFújiàn. Ukwakheka komhlaba kudonseke: enyakatho – izintaba eziphakeme ngamamitha angama-500–1200 m (iziqongo ezi-7 ezingaphezu kwe-1000 m, indawo ephakeme kakhulu – intaba iXīyán, 1256 m); maphakathi – amagquma namathala; eningizimu – ithafa elingasolwandle. Inhliziyo yokukhiqiza – intaba iShuāngjì Niáng Shān (双髻娘山, 1032 m) enamatshe e-granite agugile, acebile ngamaminerali. - Ukuphakama kokukhula: Ibanga eliyinhloko – 600–1000 m. Inhliziyo – imithambeka ye-Shuāngjì Niáng, ≈ 1032 m. Amasimi aphansi ezintaba – kusukela ku-400 m.
- Isimo sezulu: I-subtropical monsoon eseningizimu, enethonya lolwandle. Izinga lokushisa eliphakathi nezingeni lonyaka 21.4 °C, inkathi engenasithwathwa 349 izinsuku, isikhathi esiphelele sokushisa kwelanga 2114 amahora. Imvula – 1475.9 mm ngonyaka, umswakama ophakathi ≈ 79%. Izinsuku ezinamachaphaza – ezingaphezu kwe-200 ngonyaka. Ubusika bumnene (ingxenye eseningizimu – akunandawo ebanda kakhulu), ihlobo lifudumele ngokusesilinganisweni ngenxa yethonya lolwandle. Umehluko omkhulu wamazinga okushisa phakathi kwemini nobusuku ezintabeni usiza ekuqongeleleni kwezinto ezinuka kamnandi; ukukhanya okusakazekile ezimeni ezinamachaphaza kwandisa ukuhlanganiswa kwama-amino acid.
- Inhlabathi: Izindawo ezibomvu ngokunsundu (赤红壤) kanye nezindawo eziphuzi (黄壤), i-pH 4.2–5.6 (endaweni ewumgogodla – 4.5–6.0). Okuqukethwe yizinto eziphilayo ≈ 1.89%. Inhlabathi ye-Shuāngjì Niáng – i-granite egugile, enokuqukethwe okuphezulu kwaminerali futhi icebiswe nge-selenium (0.15–0.35 mg/kg). Indawo ejulile yenhlabathi inikeza ukudla okuhle kwezimpande.
- Imithombo yamanzi: Emkhawulweni wesifunda kugeleza izindlela zomfula eziyi-16, enkulu kunazo zonke – umfula uHuánggāng (黄冈河, 87.2 km). Ichibi laseTāngxī (汤溪水库, umthamo 3.78 × 10⁸ m³) linikeza ukunisela okuzinzile. Amanzi aphansi ezinga eliphezulu aqedela ibhalansi yamanzi.
5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-Lingtoú Dān Cóng buwumfanekiso waseGuangdong wokukhiqizwa kwama-oolong okugxile ekwakhekeni “komculo wezinyosi” (蜜韵). - Ukuvuna / 采摘 — cǎizhāi: Amahlumela aphezulu (ihlumela + amacembe ama-2–4) avunwa ngesandla, ikakhulukazi ekuseni, futhi alethwe ngokushesha emshinini wokusebenzela, kugwenywa ukushisa ngokweqile nokonakala okwenziwe ngomshini.
- Ukubunisa elangeni / 晒青 — shàiqīng: Icebe elisha lilulwa ezisefeni ze-bamboo futhi libekwe ngaphansi kokukhanya kwelanga okusakazekile. Icebe lilahlekelwa ingxenye yomswakama, libe mnene; kuqala ukwehlukaniswa kwe-chlorophyll nokwakheka kwezandulela zephunga eliyisisekelo. Isazi silawula izinga lokubunisa kuye ngenkathi kanye nomswakama wezinto ezingavuthiwe.
- Ikhondishini yasendlini / 晾青 — liàngqīng: Icebe elibunisiwe liyiswa egumbini elinomoya omuhle ukuze lipholile futhi kulinganiswe umswakama. Izinga lokushisa lecebe liyehla, ukushisa okweqile kuyasuswa.
- Ukunyakazisa nokuphumula / 摇青 — yáoqīng: Isigaba esiyinhloko esakha iphrofayili “yezimbali nezinyosi.” Senziwa ngemijikelezo engu-7 (分段) yokushintshanisa ukunyakazisa nokuphumula ngokwendlela “yokufuthumala kathathu nokomiswa kathathu” (三焗三晒). - Ukuqondisa / 杀青 — shāqīng: Ukushisa ngesigubhu esiphendukayo ezingeni lokushisa elilinganiselwa ku-220 °C. Senza ama-enzyme angasebenzi, kumise i-oksideshini esigabeni esifanele. Kuqondisa ukuqondiswa kwephunga futhi kuvimbele ukuqhubeka ukufiphala kwecebe.
- Ukusonga / 揉捻 — róuniǎn: Ukusonga ngesandla (滚揉, gǔnróu) kwakha ukusongeka okubonakalayo okusehlangeni – imicu eqinile, esindayo, eqondile. Ukucekelwa kwezindonga zamangqamuzana kwenyusa ukukhipheka kwamanzi uma kufakwa emanzini.
- Ukugazinga / 焙火 — bèihuǒ: Ukusangulula emabhasikidini e-bamboo (竹焙笼) ezingeni lokushisa elingu-90–95 °C. Ukugazinga ngamalahle okwendabuko (炭焙, tàn bèi) kuhlanganisa ukunambitheka, kuthuthukise ukuqina kwephunga, kwengeze amathoni afudumele amantongomane kanye ne-caramel. Izindlela ezilula zikhawulelwa ekugazingeni okuncane ukuze kugcinwe uphawu lwezimbali olusha.
- Ukomisa ngokuphelele / 足干 — zúgān: Ukuzinzisa komswakama wokugcina ezingeni elingu- ≤ 5%, ukuze kuqinisekiswe ukugcinwa isikhathi eside.
6. Izici Zezinzwa:
- Ukubukeka kwecebe elomile: Imicu esezingeni, esongekile, eqinile futhi enesisindo (条索紧结壮硕). Umbala – unsundu ngokunsundu okugcotshisiweyo (黄褐油润). Ukusayizwa kuyefana, icebe liphelele.
- Iphunga lecebe elomile: Iphunga lezimbali nezinyosi (花蜜香), elinamaphepha e-orchid kanye nezinongo ezilula. Izinyosi zizwakala zijulile, zingasakazekeli ngaphandle – iphunga “elicwilayo,” eliyisici ngqo se-Lingtoú. Ezindleleni ezigazingiwe kunezelwa amathoni afudumele erayisi elithosiwe.
- Iphunga lomhluzo: Ubumnandi bezinyosi bugcwele, buhlanganiswe nesizinda sezimbali (蜜兰香). Iphunga alishiyeki, kodwa “lincibilikile emanzini” – ekuqaleni libonakala lizithibe, kodwa uma uhogela ngokucophelela kuvela ungqimba omncane wezinyosi, ogcwele futhi osongelayo. Ezindleleni ezine-oksideshini eningi nezigazingiwe kuvela amathoni e-caramel namantongomane; kwezilula – amaphepha e-iris asobala.
- Ukunambitheka: Kunothile, kuminyene (浓醇), kune-“viscosity” eqhamile (粘稠感). Ubumnandi bucacile futhi buyashesha, budlulele ekubuyeni kwebumnandi obude (回甘, huígān) okune-“melody yomphimbo” ejulile (喉韵, hóuyùn). Ukulinganisela kobumnandi bezinyosi kanye nokomisa okulula okunamandla. Akukho buhlungu uma kufakwe ngendlela efanele. Iphrofayili yokunambitheka ichazwa ngokugcwele ngefomula ethi “花香蜜韵,味甘醇爽” – iphunga lezimbali, umculo wezinyosi, ukunambitheka okumnandi, okunothile, okunamandla.
- Umbala womhluzo: Ophuzi ngokunsundu, osabalele futhi oqhakazile (橙黄明亮) wetiye lokucubungula kokuqala; osagolide futhi osabalele (金黄透亮) wetiye lokucubungula okumnene. Ubukhulu bombala bukhula nokwanda kwezinga le-oksideshini nokugazinga.
- Icebe elingaphansi kwetiye (icebe elifakwe emanzini): Amaqabunga aphelele avulekile, athambile futhi anwebekayo, anemngcele ocacile: “isisu” esiphuzi ngokuluhlaza okotshani kanye nemiphetho ebomvu ngokunsundu (黄腹红边). Ukulingana kombala kufakazela ukuthi ukunyakaziswa kwenziwe ngendlela efanele.
7. Ubumqoka Bamakhemikhali:
- Ama-polyphenol: Okuqukethwe ezintweni ezingavuthiwe ezomile zasentwasahlobo (ihlumela elilodwa kanye namacembe amabili) – 37.2%. Lesi siyisilinganiso esiphakeme sama-oolong, esichaza ukuminyana kanye nokuqina kokunambitha. Phakathi nenqubo ye-oksideshini engaphelele, ama-catechin aguqulwa abe ama-theaflavin nama-thearubigin, akha umbala ophuzi ngokunsundu womhluzo futhi akhulise “ukunotha” kokunambitheka kwangemuva. Umsebenzi we-antioxidant wama-polyphenol we-Lingtoú Dān Cóng udlula kakhulu isilinganiso esifanayo sikavithamini E.
- Ama-amino acid: Okuqukethwe okuphelele – 1.5% (ezintweni ezingavuthiwe ezomile zasentwasahlobo). I-L-theanine – i-amino acid ehamba phambili – inikeza ukuthamba, ubumnandi kanye nomlingiswa “osongelayo” womhluzo. Isilinganiso sama-polyphenol kuma-amino acid (酚氨比) siphezulu (≈ 24.8), okuchaza iphrofayili yokunambitha enothile, “enamandla.”
- Ama-alkaloid: I-caffeine – ≥ 4.4% (ngokusobala ngaphezu kwesilinganiso sama-oolong). I-theobromine ne-theophylline zikhona ngamanani amancane. Okuqukethwe okuphezulu kwe-caffeine kuhlobene nomsuka wasezintabeni (amafu, usuku olufushane lokukhanya, umehluko wamazinga okushisa) futhi kunomthelela ekuzweni “kobusha obunamandla.”
- Amavithamini: Uvithamini C (kuncipha ngesikhathi se-oksideshini, kodwa usalondoloziwe ngokwengxenye); amavithamini eqembu B (B₁, B₂), uvithamini E.
- Amaminerali: I-potassium, i-calcium, i-magnesium, i-cobalt, i-iron, i-manganese, i-aluminium, i-sodium, i-zinc, i-copper, i-phosphorus, i-fluorine, i-iodine, ne-selenium. Okuqukethwe okuphezulu kwe-selenium emhlabathini wendawo ewumgogodla (0.15–0.35 mg/kg) kudluliselwa ngokwengxenye emacembeni, kwengeze inani lezakhi zomzimba ezincane.
- Amafutha abalulekile kanye nezinhlanganisela ezinuka kamnandi: Iqoqo lezakhi zokuhwamuka yilona elibeka “umculo wezinyosi” oyingqayizivele. Ama-aldehyde ezimbali kanye ne-terpene alcohol (i-linalool, i-geraniol, i-nerolidol) akha isisekelo sezimbali; imikhiqizo yokusabela kwe-Maillard kanye ne-caramelization ngesikhathi sokugazinga inothisa iphrofayili ngamaphepha ezinyosi, amantongomane kanye “nerayisi elithosiwe.” “I-viscosity” emnandi ihlobene nokuqukethwe okuphezulu koshukela ancibilikayo emanzini (okuyisici sama-oolong jikelele) kanye nokusebenzisana kwabo nama-amino acid.

I-Lingtoú Dān Cóng yohlobo lwe-黄枝香 nayo ikhombisa amaphepha e-gardenia, kodwa ngokujula okwengeziwe kwezinyosi, okungekho kumifanekiso yaseFènghuáng yendabuko.
- Fènghuáng Shuǐ Xiān (凤凰水仙, Fènghuáng Shuǐ Xiān): I-“water narcissus” eyisisekelo – owandulela wawo wonke ama-dāncóng. - Guìhuā Xiāng (桂花香, Guìhuā Xiāng) – uhlobo lwe-osmanthus: Iphunga elimnandi elicebile le-osmanthus (桂花); ukumela okuphakeme kokuphuza kaningana. Kuvame ukutholakala ekuvuneni kwasekwindla.
