Umbhali we-cultivar — Wú Zhènduó (吳振鐸, Wú Zhènduó, 1918–2000), umqondisi wokuqala we-Táiwān Cháyè Gǎiliáng Chǎng kanye noprofesa wase-Táiwān Dàxué, owaziwa ngokuthi «Ubaba Wetiye LaseThayiwani Ngemva Kwempi» (戰後台茶之父).

- Ukuqinisa (杀青) / 炒青 — chǎoqīng: Ukufudumeza emazingeni okushisa acishe abe ngu-280 °C emgodini wokujikeleza kumisa izinqubo zokubilisa futhi kuqinise ukuhloswa kwephunga. Ku-Jīn Xuān kubaluleke kakhulu ukungawashisi amaqabunga ukuze kugcinwe amanothi obisi athambile.
- Ukusontwa / 揉捻 — róuniǎn: Ukusontwa kokuqala kubhubhisa isakhiwo samangqamuzana futhi kwakha ukwakheka kokuqala.
- Ukumiswa kokuqala / 初烘 — chū hōng: Iqabunga liyafudumezeleka ku-80 °C ukuze kususwe ingxenye yomswakama ngaphambi kokubunjwa.
- Ukugoqwa nokufinyezwa / 包揉 — bāoróu: Isigaba esibalulekile sema-ulungu ayindilinga. Iqabunga ligoqwa ngendwangu bese lifinyezwa kaninginingi, linikezwe isimo sebhola eliqinile. Inqubo iphindaphindwa izikhathi ezimbalwa ngezikhawu zokumiswa. Kungenxa yalesi sigaba lapho iqabunga elomile lithola khona ukubukeka okuqondile kwezinhlamvu eziyizindilinga eziqinile.
- Ukumiswa kokugcina / 複烘 — fù hōng: Ukumiswa okuphelele emazingeni okushisa aphansi (cishe 60 °C) ngokomgomo «izinga lokushisa eliphansi — ukufudumeza okuhamba kancane» (低溫慢焙, dī wēn màn bèi). Lendlela uqinisa iphunga lobisi futhi iqinise umswakama ekumisweni kwezinga lokugcinwa (≤ 5%).
6. Izimpawu Zokunambitha Nokuhogela:
- Ukubukeka kweqabunga elomile: Izinhlamvu eziqinile eziyizindilinga (半球狀, bànqiú zhuàng), eziyindilinga, eziqinile, eziqoqwe ngokulinganayo. Umbala — uluhlaza okumnyama ngebala lesihlabathi (砂綠, shā lǜ), ubuso bucwebezele kancane.

7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol: Iqoqo ekuvunweni kwasentwasahlobo (iqabunga elomile, i-bud + amaqabunga amabili) — cishe 12.1%. Izakhi eziyinhloko — ama-catechin: epigallocatechin (EGC), epigallocatechin gallate (EGCG), epicatechin (EC), epicatechin gallate (ECG). - Ama-Amino acid: Iqoqo eliphelele — cishe 1.2%, okuyisibalo esiphezulu uma kuqhathaniswa nama-ulungu. - I-Nitrogen ephelele: Cishe 4.9% — isibalo esihlotshaniswa neqoqo eliphezulu lamaprotheni nama-amino acid.
- Amavithamini: Amavithamini C, B₂, E, K — iqoqo elijwayelekile lama-ulungu abiliswe kancane, nokugcinwa kahle kwe-vithamini C ngenxa yendlela yokucophelela.
- Amaminerali: I-Potassium, i-magnesium, i-manganese, i-zinc, i-fluoride — ngamanani amancane, umthombo wayo kuyinhlabathi enamasine ebomvu-ephuzi yasentabeni.
8. Izinzuzo Zezempilo:
- Umthelela wokulwa nama-oxidant: Ama-catechin e-Jīn Xuān ahlanza ngempumelelo ama-radical akhululekile. Ngokweminye imininingwane, amandla okulwa nama-oxidant ama-polyphenol etiye adlula amandla e-vithamini E izikhathi ezimbalwa.

9. Ukubilisa:
- Izinga lokushisa lamanzi: 90–95 °C ekubiliseni okushisayo (igongfu); ekubiliseni okubandayo — amanzi okuphuza ayingqayizivele ekamelweni noma aphuma efrijini.
- Inani letiye: 7–8 g ku-150–200 ml (igongfu); 3–5 g ku-250–300 ml (ukuntywila enkomeni); 5 g ku-1 500 ml (ukubilisa okubandayo).

- Inqubo (ukubilisa okushisayo — indlela yegongfu):
- Fudumeza i-gàiwǎn ne-cháhǎi ngamanzi abilayo, uwakhiphe amanzi.
- Thela u-7–8 g wetiye, uvale ngesembozo, ukhefuzela iphunga leqabunga elomile elifudumele.
- Geza itiye ngokuchitheka kokuqala (ngokuzithandela) — thela amanzi ngokushesha bese uwakhipha ngokushesha. Iqabunga lizoqala ukuvuleka.

10. Ukugcinwa:
- Izimo: Ukupakisha okungenamoya (isikhwama se-aluminium esivaleleke ngokungenamoya noma ibhokisi likathayela elinesembozo esiqinile), indawo epholile nemnyama. Ama-ulungu alula azwela kakhulu emakha angajwayelekile, emswakameni nasekukhanyeni.
- Izinga lokushisa: Ku-Jīn Xuān entsha (engakavulwa) kunconywa ifriji ku-0–5 °C — lokhu kugcina iphunga lobisi nobusha isikhathi esifinyelela eminyakeni engu-1–2. Emaphaketheni e-aluminium avaleleke kahle ekamelweni — kuze kube yiminyaka emi-2.
- Ngemva kokuvulwa: Itiye elivuliwe kufanele lisetshenziswe emahoreni angu-72, ngoba izinto eziphunga kamnandi zihwamuka ngokushesha. Uma lokhu kungenzeki — yithela esitsheni esivalekile esingavumeli ukukhanya futhi likagcinwe efrijini.
- Izitha zetiye: Umswakama, ukushisa, amakha angajwayelekile (ikakhulukazi imikhiqizo yokudla efrijini), ukukhanya kwelanga okuqondile, umoyampilo.
11. Intengo Namanga:
- Isigaba sentengo: Ububanzi obubanzi kuye ngokuthi buvelaphi. I-Jīn Xuān yasemathafeni — ngomunye wama-ulungu aseThayiwani ashibhile, othandwa njenge tiye lokungena ukuze ujwayelane naleli klasi. I-Jīn Xuān yasezintabeni yase-Ālǐshān yasebusika (冬茶, dōng chá) — ibiza kakhulu, ifana ngentengo namanye ama-ulungu aphakeme aseThayiwani. - Ungawagwema kanjani amanga:
- Ukubona amakha okwenziwa (香精茶, xiāngjīng chá): Lena inkinga enkulu emakethe ye-Jīn Xuān. Itiye elinamakha okwenziwa lihluka kalula: linuka ngamandla, liphunga lobisi oluphoqayo nasekuphululweni kokuqala, olunyamalala ngokushesha kwesesibili. - Ukuhlola iphunga: Ithoni yobisi yemvelo ayisoze yaba «ephunga le-parfum» noma «ye-chemical». Uma iphunga lifana ne-milkshake yasendaweni yokudla okusheshayo — lokho kungumkhiqizo wokufaka umkha.
- Intengo njengenkomba: I-Jīn Xuān yezintaba ayisoze yabiza njenge tiye eliluhlaza lasemathafeni. Intengo ephansi ngokusolisayo uma kuthiwa «Ālǐshān, yezintaba» — cishe kuwuphawu oluqinisekile lomgunyathi noma umkha wokwenziwa.

12. Amaqiniso Athakazelisayo:

13. Ukuqhathaniswa namanye ama-ulungu aseThayiwani:
- I-Qīng Xīn Wū Lóng (青心烏龍, Qīngxīn Wūlóng): I-cultivar esabale kunazo zonke eThayiwani. Iphrofayili — inezimbali kuphela (i-orchid, i-gardenia) ngaphandle kwamanothi obisi. Ibonakala ngobuncane nobuhle, kodwa ngaphandle kwekhadi layo elaziwayo le-Jīn Xuān. Iqabunga lincane futhi lintengantenga, lidinga ukucutshungulwa ngokucophelela.
- I-Cuì Yù / Táichá 13 (翠玉, Cuì Yù): Umfowabo ka-Jīn Xuān — naye ungumkhiqizo ka-Wú Zhènduó. Iphrofayili — inephunga elivelele le-jasmine negardenia (玉蘭花香, yùlán huā xiāng), ngaphandle kwamathoni obisi. Ukungena kulula futhi kucacile, ukumunyu kubonakala kancane.
- I-Sìjì Chūn (四季春, Sìjì Chūn): Izikhathi ezine zasentwasahlobo — i-cultivar ekhiqiza kakhulu enephunga le-gardenia. Ilula ngokwesakhiwo kune-Jīn Xuān, ayinazo izendlalelo eziningi, kodwa ithandwa ngenxa yentengo efinyelelekayo nokukwazi ukukhiqiza unyaka wonke.
- I-Dòngdǐng Wūlóng (凍頂烏龍, Dòngdǐng Wūlóng): I-ulungu yakudala yaseThayiwani yaseLùgǔ (鹿谷), evame ukukhiqizwa ngokubiliswa okujulile nokuloshwa. Iphrofayili — i-caramel ne-amantongomane, inamathoni okhuni. Ihluke kakhulu esimweni sobisi esisha se-Jīn Xuān.
- I-Ālǐshān Gāoshān Wūlóng (阿里山高山烏龍, Ālǐshān Gāoshān Wūlóng): Ivame ukukhiqizwa nge-Qīng Xīn Wū Lóng ezindaweni eziphakeme ezifanayo ne-Jīn Xuān. Iphrofayili — izimbali nobushelelezi, kodwa amanothi obisi acashile futhi amancane, ngaphandle kokuba njenge-caramel eyisici se-Jīn Xuān. Kulabo abasanda kuqala isiko letiye laseThayiwani, i-Jīn Xuān iyindawo ekahle yokuqala: iyaqondakala, inomusa, ixolela amaphutha okubilisa. Futhi kulabo asebenesikhathi eside betiye, i-Jīn Xuān yezintaba yase-Ālǐshān yasebusika iyakwazi ukumangaza ngokujula nobunkimbinkimbi, obufihliwe emva kokuvela okulula kwephunga lobisi.
