4. I-Terroir Nezici Zokutshala:

5. Ubuchwepheshe Bokukhiqiza:

- Ukoma / Ukufudumeza Ngamalahle (炭焙 — tànbèi): Ukoma kwesintu kumakhamba ombambasi phezu kwamalahle e-acacia (槐炭, huái tàn). 6. Izici Zokuzwa Ngezitho Zomzimba:
- Isimo seqabunga elomile: Ama-buds amancane, aqinile, aphelele anesimo “esinjengeshilo” esicacile (海马状, “isimo sehhashi lasolwandle” — incazelo yombhali ka-Jiāng Yuánxūn). Uphawu oluyinhloko lwe-Tóngmù Jīn Jùn Méi yangempela — imibala emithathu yelumela ngalinye: umbala osagolide (ovela ezinhlangwini), umbala omphuzi- onsundu, nomnyama — yomithathu le mibala iba khona ngasikhathi sinye. Ama-buds anombala osagolide ngokuphelele — ngokuvamile, kuwuphawu lwetiye elivela kwezinye izifunda, hhayi i-Tóngmù.
- Iphunga leqabunga elomile: Lihlanzekile, ligcwele, limnandi, linamanothi avelele kaju, izithunzi ze-longan (龙眼), i-litchi, ipentshisi evuthiwe, izimbali (i-rose, i-orchid). Izinhlangothi ezincane zika chokholethi kanye ne-malt. Iphunga libambelela, livela kancane kancane. Uphawu lokuba yiqiniso — uju luzwakala kakade eqabungeni elomile.
- Iphunga lokumnika: Lijulile, ligubuzele. Emizamweni yokuqala yokupholisa — inhlanganisela egqamile yezithelo kanye noju (i-longan, i-litchi). - Ukunambitheka: Kuthambe ngendlela emangalisayo, kushelele, kuhwebu. Akukho nhlobo ukubaba nobuthi. 7. Ukwakheka Kwamakhemikhali:
I-Jīn Jùn Méi yehlukile kwinani elikhulu lamatiye abomvu ngokuhlanganiswa okuhle kwamaqembu ayinhloko ezinto: izinga eliphakeme lama-amino acid kanye nelilinganiselwe lama-polyphenols etsamayi ne-caffeine, okubangelwa ukusetshenziswa kohlobo lwamaqabunga amancane i-Qízhǒng olusemazingeni aphezulu.
- Ama-Polyphenols (茶多酚): 10–20% wesisindo esomile. - Ama-Alkaloids: I-Caffeine (咖啡碱) — 3–5% wesisindo esomile (enkomishini ~20–60 mg kuye ngomthamo nesikhathi sokukhipha). Kukhona futhi i-theobromine ne-theophylline ngamanani amancane.
- Amavithamini: C, B₁, B₂, B₃ (PP), E, K. I-Vithamini C igcinwa ngokwengxenye naphezu kokuvutshelwa ngenxa yesimiso sokucubungula esithambile.

- Amafutha Abalulekile Nezakhi Ezinuka Ukushintsha (芳香油): ~0.02% — zakha iphrofayili ehlukile yezithelo-uju-izimbali. I-Linalool, i-geraniol, i-phenylacetaldehyde, i-methyl salicylate nezinye izakhi.
- Okunye: Ushukela oncibilikayo — 2–4%, i-pectin encibilikayo emanzini — 1–2%, ama-asidi e-organic — ~1%.
8. Izinzuzo Zezempilo:

9. Ukudonswa:
- Izinga lokushisa lamanzi: 90–100°C. I-Tóngmù Jīn Jùn Méi ephezulu “ayisabi” amanzi abilayo — ukushisa okugcwele kwembula ukujula kwephunga nobumnandi. Kumaqoqo ahloselwe ngobumnene, noma okokuqala, kungokwemthetho ukuqala nge-85–90°C.
- Inani letiye: 3–5 g nge-100–120 ml (indlela ye-gōngfū); 2–3 g nge-200–250 ml (indlela yaseYurophu).
- Inkomishi: Elifanele kakhulu — i-gàiwān (盖碗) yobumba lwe-porcelain elinamandla angu-100–120 ml: into engathathi hlangothi ayimunci iphunga futhi ivumela ukulawula isikhathi sokudonsa ngokuqinisekile. 11. Intengo Nokukhohlisa:

- I-Zhèng Shān Xiǎo Zhǒng (正山小种, Zhèng Shān Xiǎo Zhǒng): “Ukhokho” oqondile we-Jīn Jùn Méi. - I-Qímén Hóng Chá (祁门红茶, Qímén Hóngchá): Itiye elibomvu elaziwayo elivela esifundeni sase-Qímén (Ānhuī). Lidume “ngephunga lase-Qímén” eliyingqayizivele (祁门香) — i-orchid, uju, izithelo ezomisiwe.
