4. I-Terroir Nezici Zokukhula:

Ubuchwepheshe be-Huáng Dà Chá buyilona “olucijile” futhi “olunomlilo” kunawo wonke amanye amatiye aphuzi. Izingongoma ezintathu eziwusizo: ukugazinga ngamabhodwe amathathu, ukutsheka ngeviki, kanye “nokudonsa umlilo omdala” emazingeni okushisa aphakeme kakhulu.

  • Ukugazinga ngamabhodwe amathathu (炒茶 — chǎo chá): Amabhodwe amathathu asebenza ngokulandelana, ngaphandle kokuphumula:
    • Shēngguō (生锅, “ibhodwe eliluhlaza”): Izinga lokushisa 180–200°C. “Ukubulala okuluhlaza” (杀青) okuphezulu — ukwenza kungasebenzi ama-enzyme ngokushesha. Kwekhasi elikhulu, eliluhlaza, kudingeka izinga lokushisa eliphakeme kunokwamagciwane amnene.

  • Ukutsheka ngobuningi / Duījī (堆积 — duī jī): Isigaba esibalulekile se-mènhuáng ye-Huáng Dà Chá. Itiye elomile, lisashisa, lifakwa emabhasikidini amakhulu omhlanga (篓) noma emethini (圈席), licindezelwe kancane, kwakheke umgodi ophakeme ~1 m, bese ufakwa endaweni eyomile, efudumele (烘房, hōngfáng — indawo yokomisa). Ukushisa okuvela endaweni yokomisa kusheshisa ukujuba okuphuzi. Isikhathi — izinsuku ezingu-5–7. 6. Izimpawu Zokuzwa:

  • Umbala wokuphisa: “Shēnhuáng xiǎn hè” (深黄显褐) — ophuzi ojulile onensundu. Kubuhlungu kakhulu kunanoma iliphi elinye itiye eliphuzi. Osobala futhi onokucwazimula okunamafutha.

7. Ukwakheka Kwezamakhemikhali:

  • Ama-Polyphenol: Uhlobo i-Jinji Zhong — 14.9%. Lesi yisilinganiso esiphakathi, kodwa uma kuhlangene nokuguqulwa okujulile ekutshekeni ngeviki, ama-catechin athamba kakhulu. Ama-polyphenol aqinisekisa amandla okuqhephula amafutha.
  • Ama-Amino Acid: 4.97% empahleni eluhlaza. I-L-theanine inika ubumnandi “nokumnandi okumnandi” ngisho nasekhasini eliluhlaza.
  • Ama-Catechin + ama-Polyphenol — “okuphakeme kabili” (双高): Inhlanganisela engavamile yama-polyphenol aphezulu nama-amino acid aphezulu kanyekanye kuhlobo lwetiye. Lokhu kuqinisekisa ukunika umunyu (okuthi kamuva kuthambiswe ukutsheka), kanye nobumnandi bemvelo.

8. Izici Eziwusizo:

  • Ukuthambekela esiswini: Ukutsheka ngeviki kuguqula ngokujulile ama-catechin, okwenza itiye libe lula esiswini — lilula kakhulu kunetiye eliluhlaza elivela empahleni eluhlaza efanayo.

9. Ukwenziwa:

  • Izinga lokushisa lamanzi: 85–90°C. I-Huáng Dà Chá evela ekhasini eliluhlaza ayinankinga namazinga okushisa aphezulu — kunalokho, ayawavula amaphunga “esinkwa” ayo.
  • Inani letiye: 5 g kumthamo ongu-150 ml wamanzi — umthamo uphakeme kunowokwenza i-Huáng Yá, ngenxa yekhasi elikhulu.
  • Imbiza: I-gaiwan (i-porcelain) noma ingilazi yengilazi. I-gaiwan iyathandeka — ivumela ukuvula iphunga eliminyene.
  • Inqubo:

10. Ukugcinwa:

I-Huáng Dà Chá ayinankinga kakhulu ekugcinweni kune-Huáng Yá emnene. Indawo eyomile, epholile, emnyama. Isitsha esivaliwe.
