2. Umlando Nokubaluleka Kwamasiko:

Umlando: Ukulinywa kwetiye e-Huìdōng kunomlando wamakhulu eminyaka, ohlobene kakhulu namasiko amaHakka ezindaweni ezisenkangala. 3. Incazelo Yezitshalo Nempahla Eluhlaza:
- Inhlobo: Camellia sinensis (L.) O. Kuntze.
- Izinhlobo / Amacultivar: Ukwehlukahlukana kwezinhlobo kungenye yezici eziyingqayizivele zase-Huìdōng:
- Xiānrénchá (仙人茶, Xiānrénchá) — uhlobo lwasendle oluyisidalwa lwendawo oluwuhlobo lwe-subtropical light forest (亚乔木型, yà qiáomù xíng), olutholakala kuphela ezintabeni ze-Liánhuā Shān ezingaphezu kwe-1 000 m. Izihlahla zifinyelela ku-3–5 m. Amahlamvu makhulu, amahlumela anoboya cishe ocashile. Cishe akwazi ukutshalwa ngokuhlelekile — uma kutshalwa kabusha, ilahlekelwa ukunambitheka kwayo okuyisici. - Méizhàn (梅占, Méizhàn) — icultivar yase-Fújiàn, ehlonishwa ngephunga layo eliqhakazile.
- Shuǐxiān (水仙, Shuǐxiān) — uhlobo lwakudala lwase-Fújiàn.
- Qúntǐzhǒng (群体种, Qúntǐzhǒng) — izinhlobo zembewu zendawo, ezijwayelane nendawo ngenxa yokukhethwa kwemvelo amakhulu eminyaka.
- Ukuvunwa: Intwasa (ekuqaleni — ngaphambi kwe-Qīngmíng, okuyinhloko — ngaphambi kwe-Gǔyǔ), ehlobo («Liùyuèzǐ», 六月子) nasekwindla («Báilùzǐ», 白露子, ngasekuqaleni kwezidlwane ezimhlophe). Itiye lasentwasahlobo — liyigugu kakhulu, elesekwindla — linamanothi amaphunga ezimbali.
- Izinga lokuvuna: Ihlumela elinamahlamvu amancane ama-1–2 (一芽一叶 – 一芽二叶). Ngokwe-Xiānrénchá — amahlamvu amane nesihluke (四叶一芯).
- Izidingo zempahla eluhlaza: Isanda kuvunwa, iphelele, ingenakho ukushisa ngokweqile noma ukulimala ngenkani. Ezigcawini eziphambili — kuvunwa ngesandla kuphela.
4. Indawo Nezici Zokulima:
- Ubume besimo sezwe nesimo sendawo: I-Huìdōng isesimisweni sezintaba i-Liánhuā Shān (莲花山脉, Liánhuā Shānmài) — igxathu eliseningizimu lwe-Nán Lǐng Range. Isimo sendawo — izintaba eziphakathi nendawo neziphansi, ezinemifula ejulile, amanzi amaningi agelezayo kanye namahlathi aminyene asezindaweni ezishisayo. - Umhlabathi: Umhlabathi obomvu ne-laterite onenselelo eneasidi (pH 4.5–5.5), umoya owenele, kanye nokuqukethwe okuphezulu kwezinto eziphilayo. Ezindaweni ezinokwakheka kwe-dānxiá — umhlabathi onamatshe, oqukethe izakhi zamaminerali eziningi, okunikeza itiye isimo samaminerali.
- Ubuchwepheshe bezolimo: Ingxenye enkulu yezitshalo zetiye — iyizimila eziphila endle noma ezinganakekelwanga kakhulu, ikakhulukazi i-Xiānrénchá. Amasimu e-Jīnxuān ne-Méizhàn aphethwe ngendlela ehleleke ngokwengeziwe, kusetshenziswa umquba ophilayo. Ukuhlukaniswa kwezintaba nokuhlukahlukana okuphezulu kwemvelo kwakha isivikelo esingokwemvelo ezilokazaneni. 5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe obuyinhloko — yi-«kèjiā chǎo lǜ» (客家炒绿), itiye eliluhlaza elithosiwe ngesitayela sama-Hakka. Ngokwesiko, kwakusetshenziswa ukuthosa ngokhuni (柴火手工炒制); izimboni zesimanje zisebenzisa nemishini. Izigaba eziyinhloko:

Ukukha (采摘 — cǎizhāi): Ukukhetha ngesandla amahlumela amancane. Kwe-Xiānrénchá — ukukha okukhandlayo emithambekeni eyigquma yezintaba; izihlahla zifinyelela ku-3–5 m, okudinga amandla omzimba.

Ukuqeda okuluhlaza (杀青 — shāqīng): Ukuthosa epanini (锅炒杀青, guōchǎo shāqīng) — indlela yendabuko yama-Hakka. Ukubumba (做形 — zuòxíng): Ukunikeza iqabunga isimo esiyisici (esiphothiwe, esiyisicaba noma esifana nenalithi, kuye ngomkhiqizo othile).

6. Imininingwane Yokuzwa Ngezitho Zokuzwa:
- Ukubukeka kweqabunga elomile: Kwehluka kusukela emahlumela amakhulu, aphothiwe kancane (i-Xiānrénchá) kuya kumahlamvu ahlangene kakhulu, asongwe aqinile (i-Jīnxuān, amaqembu). Umbala — kusukela okumpunga-oluhlaza kuya kokugqamile okuluhlaza okwesibhakabhaka, noboya obubonakalayo emahlumela.
- Iphunga leqabunga elomile: Lima, lihlanzekile, linamanothi e-castanea (栗香). Kwitiye lase-Héngkēng — imibala yoju; kwe-Xiānrénchá — iphunga elihle le-caramel (焦糖香) elinomonakala wezithelo.
- Iphunga lomquba: Liphakeme, liqhakazile, liqinile. Isisekelo se-castanea, imibala yezimbali (ikakhulukazi ekuvuneni kwasekwindla), «imiluhlaza» emisha yezinto zasentwasahlobo.
- Ukunambitheka: Kucebile, kugcwele, kodwa kungenabo ubuhlungu. Ifomula eyisici: «甘而不苦,浓而不涩» — «kumnandi, kodwa akubabayo; kujulile, kodwa akukho ukuqunjelwa». Itiye lase-Héngkēng — ubumnandi boju, isasasa elihlala isikhathi eside lapho kugwinywa khona (回甘). I-Xiānrénchá — ubuhlungu obuncane ekuqaleni obunokubuya okunamandla nobumnandi. Iziqephu ezisendaweni ephakeme zikhombisa i-«gāoshān yùn» (高山韵, «umculo wezintaba»).
- Umbala womquba: Ophuzi-oluhlaza kuya kokugqamile okuluhlaza, obonisa okukhanyayo, ohlanzekile.
- Umsamo wetiye (iqabunga eliphuziwe): Amahlamvu amnene, alinganayo, aqine, anombala ogqamile oluhlaza. Kwe-Xiānrénchá — makhulu ngokubonakalayo, anesimo sekhaba elijikijele phakathi (elifana «nesitsha» esincane); uhlangothi oluhlala phansi lungaba nombala obomvu (红茵色).
7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol (茶多酚): Ukuqukethwe kwetiye eliluhlaza lase-Huìdōng kucishe kube ngu-18–25 % wesisindo esomile, okuyinto evamile kumatiye aseNingizimu China asekelwe ezinhlotsheni zamahlamvu amakhulu namaphakathi. Okuyinhloko — ama-catechin (EGCG, ECG, EC, EGC), ahlinzeka ngesinqo nomsebenzi wokulwa ne-antioxidant.
- Ama-Amino Acid (氨基酸): Ukuqukethwe okuphezulu eziqephini ezisendaweni ephakeme (ikakhulukazi zasentwasahlobo) ngenxa yokufihlwa ngamafu, amazinga okushisa aphansi ebusuku, nokukhula okunensayo. I-L-theanine — iyona nhlanganisela eyinhloko yobumnandi ne-umami.
- Ama-Alkaloid: I-caffeine — ukuqukethwe okujwayelekile (cishe u-2.5–4 % wesisindo esomile). I-Xiānrénchá iphawuleka ngokuqukethwe okuphezulu kwama-esterified catechin, okuhambisana namandla e-sweet aftertaste (回甘).
- Amavithamini: I-Vitamin C (igcinwe kahle ekuthosweni kwepani lendabuko), amavithamini eqembu B, i-β-carotene.
- Amaminerali: I-Potassium, i-magnesium, i-manganese, i-zinc, i-iron. Amatiye avela ezindaweni ezinokwakheka kwe-dānxiá angaqukatha inani eliphezulu lezakhi zamaminerali ezincane.
- Amafutha Abalulekile: I-Linalool, i-geraniol, i-nerolidol, i-phenylacetaldehyde. Kwe-Xiānrénchá — isimo sephunga elihle le-caramel nezithelo, elihambisana nohlobo lofuzo oluyingqayizivele.
8. Izinzuzo Zezempilo:
- Ukuvikela nge-Antioxidant: Ukuqukethwe okuphezulu kwama-catechin kuhlinzeka umphumela onamandla wokungathathi hlangothi kuma-radical amahhala.
- Umphumela wokuvuselela nokuqabula: Inhlanganisela ye-caffeine ne-L-theanine inikeza ukuphaphama okuncane, okuqhubekayo ngaphandle kweminonjana ephezulu. Isiko lendawo liphawula ukusebenza kwe-Xiānrénchá lapho kukhona ukushisa okukhulu nomsebenzi onzima womzimba ukuvimbela ukushaywa yinhlangulano.
- Ukusekela ukugaya: Ama-polyphenol avuselela ukunyakaza kwamathumbu, enza kube lula ukumuncwa kokudla okunamafutha. Emikhubeni yendawo, i-Xiānrénchá isetshenziselwa ukungakwazi ukudla nokungakhululeki emathunjini.
- Ukusekela izinhliziyo nemithambo yegazi: Ukuphuza itiye eliluhlaza njalo kuhambisana nokuncipha kwezinga le-LDL nokugcinwa kokunwebeka kwemithambo yegazi.
- Ukuqinisa izivikelo mzimba: Inhlanganisela yamavithamini (C, eqenjini B), amaminerali nama-polyphenol inomphumela wokuqinisa jikelele.
- Ukusekela ukusebenza kwemetabolism: Ama-catechin avuselela i-thermogenesis nokusetshenziswa kwamandla.
- Umphumela wokulwa namagciwane: Ama-catechin nama-tannin avimbela ukukhula kwamagciwane ayinkinga emlonyeni nasemathunjini.
Qaphela: itiye alilona ikhambi. Lezi zinzuzo zichazwe zisekelwe olwazini olujwayelekile ngetiye eliluhlaza nasekuhlolweni kwendawo; uma unezifo, kunconywa ukubonana nodokotela.
9. Ukuphuza Itiye:

Izinga lokushisa lamanzi: 80–90 °C. Kwitiye elihle lasentwasahlobo — 80–85 °C; kweletiye elivuthiwe kakhulu lasehlobo nasekwindla — 85–90 °C.

Isilinganiso setiye: 3 g ku-150 ml (igaywan (盖碗), indlela yokuchitha); 2–3 g ku-200 ml (inkomishi, indlela yokugxilisa).

Izitsha: Inkomishi yengilazi (ukuze uthokozele ukubukeka), igaywan (盖碗) yobumba noma iketela lobumba. Kwe-Xiānrénchá — igaywan iyathandeka kakhulu: iqabunga elikhulu livuleka kangcono esitsheni esibanzi.

Inqubo:
- Ukufudumeza izitsha. Geza inkomishi noma igaywan ngamanzi ashisayo.
- Ukuthela itiye. Faka u-3 g weqabunga elomile esitsheni esifudumele.
- Ukuphisa kokuqala. Thela amanzi ane-80–85 °C. Gxilisa imizuzwana engu-40–60.
- Ukwabiwa. Khipha lonke ugovu (egaywanini) noma uphuze kuze kube kusale 2/3 (enkomishini).
- Ukuphinda ukuphisa. Kuphonswa izikhathi ezingu-3–5; kwe-Xiānrénchá — kufika kwezingu-7–8 ngenxa yokuqina okungavamile kweqabunga. Ukuphisa ngakunye kwandiswe ngemizuzwana engu-10–15.
- Ukugxilisa (indlela yenkomishi). Imizuzu engu-1.5–2; thela amanzi ngaphezulu njalo lapho uphuza kuze kufinyelelwe ku-2/3.
10. Ukugcinwa:
- Gcina emqulwini we-aluminium foil oqinile noma ebhokisini likathayela, endaweni emnyama epholile.
- Izinga lokushisa elifanele — 0–5 °C (esiqandisini) ngaphansi kwesimo sokuvaleka ngokuphelele ukuze kugwenywe ukungenwa amaphunga.
- Izitha zetiye: ukukhanya, umswakama, amaphunga angaphandle, umoya-mpilo, izinga lokushisa eliphezulu.
- Isikhathi sokusetshenziswa: ukuze uthole ikhwalithi ephezulu kakhulu — zingakapheli izinyanga eziyisi-6–12 ngemva kokukhiqizwa.
