4. I-Terroir Nezici Zokulima:

- Ukuphakama okutshalwa kukho: Yunnan — 1000–2100 m; Fujian — 300–1200 m.

- Izici: Ekukhiqizweni kwe-Hong Longzhu, ikhwalithi yempahla yokuqala ibaluleke kakhulu: ipereile iveza zonke izici ezinhle nezimbi zeqabunga, ngoba lapho livuleka enkomishini, yonke ingxenye (ihlumela, iqabunga, isiqu) ibonakala ‘ngokusobala’.
5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-Hong Longzhu buhlanganisa zonke izigaba zokukhiqiza i-gongfu hongcha yendabuko, kanye nesigaba esiyinhloko — ukubunjwa ngesandla kwamabhola.
- Ukuvuna (采摘, cǎi zhāi): Ukuvuna ngesandla amahlumela amasha (ihlumela + 1–2 amaqabunga) ngokuhambisana nezinga lekhwalithi.
- Ukuvutshelwa emanzini (萎凋, wěi diāo): Ukuvutshelwa elangeni noma emthunzini amahora angu-12–18. Umswakama weqabunga wehla ufinyelela ku-60–65 %. Empahleni enkulu yamaqabunga yase-Yunnan, ukuvutshelwa kungathatha isikhathi eside.

- Ukoma (烘干, hōng gān / 晒干, shài gān): Ukoma kokugcina ukuqinisa isimo nokususa umswakama ongasafuneki. Izindlela ezimbili eziyinhloko ziyasetshenziswa: umoya oshisayo (烘干, 80–110 °C) — ngetiye elibomvu lendabuko; ukoma elangeni (晒干) — okwehlukile ‘shai hong longzhu’ (晒红龙珠), okunamandla ‘okuguga’ okulinganiselwe.
- Ukuhlunga (分级, fēn jí): Amapelere aqediwe ahlelwa ngobukhulu, ukuminyana, ukufana, nekhwalithi.
6. Izici Zokuzwa Izitho:
- Ukubonakala kweqabunga elomile: Amabhola agoqwe ngokuqinile (“amapelere”) anobubanzi obungu-0,8–1,5 cm, isisindo ngalinye singu-5–8 g. Ingaphezulu — lisuka kwinsundu emnyama kuya kokumnyama, kungenzeka libe nezimpawu ezisagolide noma eziphuzi (ama-tip). Emasampuli asezingeni, amapelere ayalingana ngobukhulu, aminyene, awanawo ukuqhekeka nezindawo ezixegayo. Ingaphezulu lingase libe namafutha futhi licwebezele.
- Iphunga leqabunga elomile: Eligcwele, eliqinile, elimnandi. Iphunga elivelele lezithelo ezomisiwe (i-prune, i-apricot eyomisiwe, i-raisin), uju olumnyama, i-malt, i-cocoa. Iziphungo ezingemuva: izinongo (i-cinnamon, i-nutmeg), i-caramel, i-apula elibhakiwe. Emasampuli ase-Yunnan — kukhona umuzwa ojwayelekile ‘wase-Yunnan’: “ubuthaka bomhlaba” ophansi kanye nokunambitheka kokhuni.
- Iphunga lokuthelwa (infusion): Eligqamile, elimbozayo, “elifudumele”. Iholo lezithelo ezomisiwe noju liyaqiniswa futhi licebiswe ngeziphungo zezimbali (i-rose, i-orchid), i-caramel, noshokoleti. Ekuchithekeni ngakunye, iphunga liyashintsha: lisuka kolumnandi ‘nokuqina’ liye kolula futhi olunezithelo.
- Ukunambitheka: Okugcwele, okuvelvety, okumbozayo, okunobumnandi obusobala nokumunyu okuncane. Isisekelo — okuphawuleka kwezithelo ezomisiwe (i-prune, i-apricot eyomisiwe, i-fig), uju olumnyama, i-malt, ushokoleti wobisi, i-caramel. Amathoni angemuva — izinongo, umunyu omncane wama-citrus, ngezinye izikhathi — “intuthu” encane. Ukunambitheka okuyisalele kuhlala isikhathi eside, kumnandi, kunefruity-honey trail nomuzwa wokufudumala okuthambile. Umumo wokuthelwa — unamafutha-bushelelezi, “osilika”, okuwuphawu lwekhwalithi yetiye elibomvu lase-Yunnan elivela ezitshalweni ezinamaqabunga amakhulu.
- Umbala wokuthelwa: Kusuka kumbala we-amber-bomvu kuya kobomvu onsundu ojulile, obala, ohlanzekile, onomngcele osagolide (金圈, jīn quān) emaphethelweni enkomishi. Ukugcwala kombala kuncike ezitshalweni nasezingeni lokuvuthwa.
- Isiziba setiye (iqabunga eliphuphile): Ngemva kokuvuleka okuphelele kwepereile — amaqabunga aphelele, athambile, anwebekayo namahlumela anombala obomvu onsundu noma wethusi. Isakhiwo sehlumela siyabonakala kahle: ihlumela, iqabunga lokuqala nelesibili. Ukufana nokuphelela kwamaqabunga kuwuphawu lwezinga lomsebenzi wezandla.
7. Ukwakheka Kwamakhemikhali:
Iphrofayili yamakhemikhali ye-Hong Longzhu inqunywa ikakhulukazi uhlobo lwezitshalo nezici zesifunda. I-Hong Longzhu yase-Yunnan evela kwama-Da Ye Zhong anamaqabunga amakhulu inezimpawu ezijwayelekile ‘zase-Yunnan’:
- Ama-Polyphenol (茶多酚): 20–30 % ezintweni ezomile. Ngemva kokuvuthwa okuphelele, ingxenye enkulu yama-catechin iguqulwa ibe ama-theaflavin (2–3 %, umbala osagolide wokuthelwa, ukunambitheka “okukhazimulayo”) nama-thearubigin (10–15 %, ukujula kombala, umzimba wokuthelwa).
- Ama-Amino Acid (氨基酸): 2–4 %, kuhlanganise ne-L-theanine. Ahlinzeka ukwakheka okumnandi okuyisalele kanye nomphumela omncane wokupholisa.
- Ama-Alkaloid: I-caffeine (咖啡碱) — 3,5–5,0 %, i-theobromine, i-theophylline. Itiye lase-Yunnan elinamaqabunga amakhulu, ngokuvamile, liqukethe i-caffeine eningi kuneleqabunga elincane.
- Amafutha Abalulekile: I-linalool, i-geraniol, i-β-ionone, i-nerolidol, i-methyl salicylate, njll. Ahlinzeka iphunga elicebile elimnandi nelinezithelo.
- Amavithamini: C (icezeke kancane ekuthunjweni), B₁, B₂, E, K, PP.
- Amaminerali: I-potassium, i-magnesium, i-manganese, i-iron, i-zinc, i-fluorine.
- Izinto ezikhipheka emanzini (水浸出物): 38–45 %, okuqinisekisa ukugcwala ‘nomzimba’ wokuthelwa.
8. Izinzuzo Eziwusizo:
- Umphumela wokuvuselela nokufudumeza: Izinga elilinganiselwe le-caffeine lihlangene nama-theaflavin kunikeza ukuhlala ematheni okuthambile nokuhlala isikhathi. Itiye elibomvu ngokwendabuko lithathwa njengesiphuzo “esifudumele” (温性, wēn xìng), esithuthukisa ukujikeleza kwegazi.
- Isenzo se-Antioxidant: Ama-theaflavin nama-thearubigin — ama-antioxidant asebenzayo, asiza ukuvikela amangqamuzana ekuncipheni okubangelwa yi-oxidative stress.
- Ukusekela ukugaya ukudla: Ama-polyphenol etiye elibomvu akhuthaza ukukhiqizwa kwama-enzyme okugaya, asiza ekuhlukaniseni ukudla okunamafutha. I-Hong Longzhu — itiye elihle “lasemuva kwesidlo sasemini”.

- Injabulo yobuhle: Ukubuka ukuvuleka okunensa kwepereile emanzini — kuwuhlobo “lokucabanga kwetiye”, okusiza ukwehlisa ukucindezeleka nokubuyisela ukulingana ngokomzwelo.
9. Ukuphisa:
- Izinga lokushisa lamanzi: 90–95 °C. Amanzi ashisayo kakhulu lapho kuchitheka okokuqala angaveza ukumunyu okweqile; abandayo kakhulu — ngeke avule ipereile ngokuphelele.
- Inani letiye: Ipereile elingu-1 (5–8 g) ngamanzi angu-150–200 ml. Lokhu kungenye yezinzuzo eziyinhloko zale fomethi: ukukalwa okunembile ngaphandle kwesikali.
- Imathini: I-gaiwan yase-China (盖碗) — ukuze kulawuleke ukuchitheka nephunga. Iketela lengilazi — ukuze kusetshenzelwe injabulo yobuhle yohlelo lokuvuleka kwepereile (kunconywa ekwazeni kokuqala itiye). Iketela le-Yixing (宜兴紫砂壶) — ukuze kutholakale ukuthelwa okugcwele, okunonile. Kuyavunyelwa futhi ukuphisa okulula enkomishini — ipereile izovuleka futhi inikele ukunambitheka kwayo nganoma iyiphi indlela.
- Inqubo:
- Ukushisisa igayiwe ngamanzi abilayo, ukuchitheka.
- Ukubeka ipereile ku-gaiwan noma eketeleni.
- Ukugeza (洗茶, xǐ chá): thela amanzi (90 °C), yiyeke imizuzwana engu-10–15, chitha. Lesi sigaba saso siqala ukuvula ipereile.
- Ukuchitheka kokuqala: imizuzwana engu-20–30. Ipereile alikavuleki ngokuphelele — ukuthelwa kuthambile, kuhle.
- Ukuchitheka kwesibili–kwesithathu: imizuzwana engu-15–25. Ukuphakama kokunambitheka — ipereile iyavuleka, inikela ubuningi bephunga nobumnandi.
- Ukuchitheka kwesine–kwesithupha: yandisa isikhathi ngemizuzwana engu-10–15. Ukunambitheka kuba lula, kuvele amanye amathoni.
- Itiye likwazi ukumelana nokuchitheka okungu-5–8, kuya ngekhwalithi yezitshalo. Izitshalo eziqinile nezindala (古树) zingakwazi ukunikeza ukuchitheka okungafinyelela ku-10–12.
Ithisiphu elibalulekile: Lapho uphisa eketeleni lengilazi, kunconywa ukubuka “umdanso” wepereile: iyavuvukala kancane, iyaxega, bese iyavuleka — lokhu kungenye yemiphumela emihle kakhulu yokubukwayo emhlabeni wetiye.
10. Ukugcinwa:
- Izimo: Indawo eyomile, epholile (15–25 °C), emnyama, kude nephunga elingaphandle.
- Isitsha: Ukupakishwa okuvalwe ngci — isikhwama se-foil esino-zip, ikani likathini, isitsha se-ceramic. Abakhiqizi abaningi bapakisha ipereile ngalinye esikhwameni se-foil ngasinye — le yifomethi enhle kakhulu yokulondoloza ubusha.
- Isikhathi sokugcina: I-Hong Longzhu yendabuko (烘干, ukoma ngomoya oshisayo) — okuhle ngesikhathi esiyiminyaka engu-1,5–2. I-shai hong longzhu (晒红龙珠, ukoma elangeni) — ngokwesitatimende sabanye abakhiqizi, iyakwazi “ukuguga” okulinganiselwe (越陈越香), ithole ukunambitheka okulukhuni nokuthambile phakathi neminyaka engu-3–5. Noma kunjalo, iningi lochwepheshe lincoma ukuphuza itiye elibomvu liselisha.
- Izitha zetiye: Umswakama, ukukhanya, amaphunga angaphandle, izinga lokushisa eliphezulu.
11. Intengo Nokukhohlisa:
I-Hong Longzhu — itiye elisesigabeni samanani aphakathi nendawo naphezulu. Intengo inqunywa yizici ezimbalwa: isifunda (i-Yunnan ihlonishwa kakhulu kune-Fujian), uhlobo lwezitshalo (古树 > 台地), isikhathi sokuvuna (intwasahlobo > ihlobo / ikwindla), ikhwalithi yomsebenzi wezandla, isithunzi somkhiqizi. Ukubunjwa ngesandla kwepereile ngalinye kukhuphula kakhulu izindleko uma kuqhathaniswa netiye elixegayo lesigaba esifanayo.
- Ungayigwema kanjani imikhiqizo yomgunyathi:
- Thenga kubathengisi abakhethekile abakwazi ukuhlinzeka ngolwazi mayelana nemvelaphi yezitshalo nomkhiqizi.
- Hlola ikhwalithi yokusonga: ipereile kufanele linyinyene, lingabi nezindawo ezixegayo, imifantu noma uthuli. Ukusonga okungalingani, okuhlakazekayo — kuwuphawu lokukhiqizwa ngomshini noma ikhono eliphansi.
- Hlola iphunga letiye elomile: eligcwele, elimnandi, elinokunambitheka kwezithelo ezomisiwe noju, ngaphandle kwamaphunga angaphandle (ukugcina okungalungile, isikhutha, iphunga “lenhlanzi”).
- Hlola ukuthelwa: okuhlanzekile, okusobala, okubomvu-amber. Ukuthelwa okudungekile, ukunambitheka okubabayo noma okupholishiwe — kuwuphawu lwezitshalo ezingenakhwalithi.
- Hlola isiziba setiye: ngemva kokuvuleka kwepereile, amahlumela aphelele, acocekile kufanele abonakale. Iqabunga elichoboshiwe elifana “ne-pap” — kuwuphawu lokusetshenziswa kwezitshalo zekhwalithi ephansi noma izinqamu.
- Intengo ephansi ngokusolisayo nge-Hong Longzhu eyenziwe ngesandla evela ezihlahleni zase-Yunnan ayinakwenzeka: umsebenzi wezandla, izitshalo ezisezingeni, nomthamo omncane wokukhiqiza konke kubiza kakhulu ngokwempela.
12. Amaqiniso Athakazelisayo:
- Ukubunjwa ngesandla kwepereile elilodwa kuthatha imizuzwana engu-30 kuya kwemizuzu engu-2 kuya ngobukhulu nokuminyana. Umqambi onolwazi angasonga amapelere angu-300–500 ngosuku — okungaphansi kakhulu kunokukhiqizwa ngomshini kwetiye elixegayo, okuchaza inkokhelo yentengo.

13. Ukuqhathaniswa namanye amatiye abomvu:
- I-Dian Hong Gongfu (滇红工夫, Diānhóng Gōngfū): Itiye elibomvu lase-Yunnan lendabuko elixegayo. Ngokwephrofayili yokunambitheka, isondele kwi-Hong Longzhu (uma izitshalo zifana), kodwa ifomethi exegayo ikhipha ukunambitheka ngokushesha ekuchithekeni kokuqala futhi ayihlotshisiwe. - I-Zheng Shan Xiao Zhong (正山小种, Zhèng Shān Xiǎo Zhǒng, i-Lapsang Souchong): Itiye elibomvu lendabuko elibhemayo elivela e-Fujian. I-Hong Longzhu ayinalo iphunga “lentuthu” (松烟香) eliyingqayizivele — i-palette yayo yakhelwe phezu kobumnandi, izithelo, noshokoleti.
- I-Qi Men Hong Cha (祁门红茶, Qímén Hóngchá, i-Keemun): Itiye elibomvu elidumile elivela e-Anhui. Linephrofayili “enezimbali” futhi “enamagilebhisi”, enephunga eliyingqayizivele “le-Keemun” (祁门香). I-Hong Longzhu ilula futhi “imnandi”, kodwa ikunxeshelezela ngokugcwala nokuthungwa oku-velvety.

I-Hong Longzhu — itiye elibomvu lapho ubungcweti bomqambi benziwe kwaba nesimo esiphelele.
