Inhlobo / Cultivar: Fuding Da Bai Hao (福鼎大白毫, Fúdǐng Dàbáiháo) — eyaziwa nangokuthi i-Fuding Da Bai Cha (福鼎大白茶, Fúdǐng Dàbáichá), i-cultivar eyisibonelo yezwe lonke yokukhiqiza i-Bai Hao Yinzhen. Ukuvuna: Kwasekuqaleni kwentwasahlobo kakhulu — ekupheleni kukaFebhuwari – ekuqaleni kukaMashi, ngaphambi komkhosi we-Qingming (清明). Ukuvuna kwenziwa ngesandla kuphela, emahoreni asekuseni acacile emva kokoma kwamazolo. 4. I-Terroir kanye Nezici Zokulima:

Isifunda: Izindawo eziyizintaba zenyakatho-ntshonalanga ye-Guangxi — izifunda i-Lingyun ne-Leye, ezisendaweni lapho kuhlangana khona i-Yunnan-Guizhou Plateau nezintaba ze-karst zase-Guangxi. Umswakama ophakeme 80–85 %. “晴时早晚遍山雾,阴雨成天满山云” — isaga sendawo sichaza izimo ezivamile: nangezinsuku ezicacile ekuseni nakusihlwa izintaba zimbozwa inkungu. Isikhathi esingenasithwathwa — kuze kube yizinsuku ezingama-340. Ubusika obuncane (ukushisa okumaphakathi kwezinyanga zikaJanuwari ~10–12 °C) — kuyisici esiyinhloko sokuvuka kwesihlahla setiye ngaphambi kwesikhathi.

Amatshe: I-red soil (红壤) kanye ne-yellow soil (黄壤), i-asidi (pH 4.5–6.0), ejulile (>40 cm), ethambile, evundile, enezinto eziphilayo eziphezulu. Umsele omuhle emithambekeni yezintaba.

Imvelo: Amasimu amaningi alinywa ngokwamazinga e-organic noma e-bio-organic. Isifunda i-Lingyun singenye yokuqala “ezifundeni eziyisisekelo ezingamashumi amabili zokulima itiye okungenabungozi” e-PRC (无公害茶叶生产示范基地县, kusukela ngo-2001).
5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe buhambisana ngokuphelele nokukhiqizwa kwe-Bai Hao Yinzhen kwendabuko: ukungenelela okuncane, ngaphandle kokuphathwa ngomshini, kugxilwa ekuwiseni okude.

7. Ukwakheka Kwemvelo:
Ukusetshenzwa okuncane kwetiye elimhlophe kugcina iphrofayela yemvelo yebhayokhemikhali yeziqu ezintsha ngokuphelele. Imininingwane inikezwe i-Yinzhen evela ku-cultivar i-Fuding Da Bai Hao (isifunda sase-Lingyun):
- Ama-polyphenol: ~18–22% wesisindo esomile. Ama-catechin amakhulu — EGCG, ECG, EGC, EC. Okuqukethwe kuncane kakhulu kunasetiyeni eliluhlaza elivela ezintweni ezifanayo — ingxenye yama-catechin i-oxidize kancane phakathi nokuwisa okude.

- Ama-vithamini: C (igcinwa kahle ngenxa yokungabikho kokusetshenzwa ngezinga lokushisa eliphezulu), B₁, B₂, carotenoids.
- Amaminerali: Potassium, calcium, magnesium, manganese, zinc, fluoride.
- Izinhlanganisela zephunga: Linalool, geraniol, β-ionone, cis-jasmone — zakha ibhakede lezimbali nezithelo.
8. Izinzuzo Ezisemqoka:
- Ukuvikela nge-antioxidant: Okuqukethwe okuphezulu kwama-polyphenol nama-flavonoids. Itiye elimhlophe, ngokocwaningo oluningi, linomsebenzi onamandla we-antioxidant ukwedlula itiye eliluhlaza, ngenxa yokugcinwa kahle kwama-catechin emvelo.

9. Ukubikwa:

- Izitha zetiye: Umswakama, ukukhanya, amaphunga angaphandle, ukuguquka okukhulu kwezinga lokushisa.
11. Intengo kanye Nokukhwabanisa:
I-Yinzhen yase-Guangxi, ngokuvamile ingama-20–40% eshibhile kune-Yinzhen yase-Fuding esesigabeni esifanayo, ngenxa yezindleko eziphansi zomhlaba nezabasebenzi e-Guangxi. 12. Amaqiniso Athakazelisayo:

I-Lingyun Baihao — i-cultivar “yokudla konke”. I-Lingyun Baihao Cha (凌云白毫茶) — i-cultivar yetiye yendawo yase-Guangxi — ithathwa njengenye yezimbalwa emhlabeni ezifanele ukukhiqiza zonke izinhlobo eziyisithupha zetiye lase-China (elihlaza, elimhlophe, eliphuzi, i-oolong, elibomvu, elimnyama). Imininingwane ye-CAAS: iqabunga lasentwasahlobo liqukethe ama-amino acid angu-3.36%, ama-polyphenol angu-35.6%, i-caffeine engu-4.91%. Kodwa-ke kwi-Yinzhen akusetshenziswa lena, kodwa i-Fuding Da Bai Hao engenisiwe — i-cultivar ekhethekile “emhlophe” eneziqu ezinkudlwana nezinoboya obuningi.

“Izinaliti zesiliva” ngoFebhuwari. Eminyakeni emihle, amaqoqo okuqala e-Yinzhen yase-Guangxi afika emakethe ekupheleni kukaFebhuwari — ngenyanga ngaphambi kweyama-Fuding. Emakethe lapho “itiye lasentwasahlobo lokuqala” (头春茶, tóuchūn chá) linikezwa inani eliphakeme, lokhu kuyinzuzo enkulu.

Zhenghe Yinzhen (政和银针, Fujian): Evela ku-cultivar i-Zhenghe Da Bai Cha — iziqu zikhudlwana, umbala umnyama, ukunambitheka “kukhulile” kakhudlwana. I-Guangxi — ikhanyayo, ilula, inezithelo kakhulu.

Yunnan Yinzhen (云南银针): Kusuka ku- C. sinensis var. assamica — enamaqabunga amakhulu. Iziqu zikhudlwana kakhulu, uboya bungaba ngegolide, ukunambitheka kugcwele kakhulu, “kunamandla”, kunamanothi obusi nezithelo zasendaweni. I-terroir ehluke ngokuphelele nesizinda se-bhotani.
