4. Indawo Nezici Zokutshalwa:
- Isigodi sase-Yi siseningizimu yesifundazwe sase-Anhui, ezintabeni zase-Huangshan. Indawo yakhiwe izintaba namagquma anezigodi ezijulile — “izintaba eziphakeme, izihosha ezijulile” (山高谷深, shān gāo gǔ shēn). 5. Ubuchwepheshe Bokukhiqiza:
Ukukhiqizwa kwe-Gǔ yī hēi chá kuyinkqubo eyinkimbinkimbi enezigaba eziningi, ethatha izinyanga eziningana, futhi uma kuhlanganiswa nokuvuthwa okuyimpoqo — kuthatha iminyaka. Ubuchwepheshe buhlanganisa izici zezindlela zaseHunan nezendabuko zase-Anhui, eziguqulelwe ezintweni ezingavuthiwe zendawo.
- Ukuvuna (采摘, cǎi zhāi): April–May, indinganiso ‘ihlumela elilodwa — amaqabunga amabili’ ngesiqu esifushane.
- Shāqīng — ukumisa / ‘ukubulala luhlaza’ (杀青, shā qīng): Ukwelashwa ngokushisa okuphezulu e-wok noma ngezintambo zemishini ekhethekile ukuze kungenzeki amandla ama-enzyme, kumiswe ukubola futhi kwenza ithambe iqabunga. - Róuniǎn — ukusonga (揉捻, róu niǎn): Ukusonga kokuqala ukuze kuqhekezwe izingqimba zamaseli kanye nokukhululwa kajusi. Kwakha izimo zokuvutshelwa okulandelayo.
- Wòduī — ukufumbathisa okumanzi (渥堆, wò duī): Isigaba esibalulekile esehlukanisa itiye elimnyama kuzo zonke ezinye izigaba. Ku-fú zhuān (茯砖) isigaba sokuvuthwa sihambisana nokwakheka “kwezimbali zegolide” (金花, jīn huā) — amakholoni e-eurotium cristatum (冠突散囊菌, guàn tū sàn náng jūn).
6. Izici Zokunambitha Nokuhogela:
- Ukubukeka kweqabunga elomile: Kuncike ohlotsheni olukhishwayo. 7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol: Izinga lama-polyphenol liphansi kunetiye eliluhlaza, kodwa liguqulwe kakhulu ngenxa yokuvutshelwa kwamagciwane. Ama-catechin abola ngokwengxenye abe yi-theaflavin nama-thearubigin, ahlinzeka ubumnandi bokunambitheka nombala ogcwele wotshwala. Ukuba khona “kwezimbali zegolide” ku-fú zhuān kwengeza ukuguqulwa kwephrofayili ye-polyphenol: i-Eurotium cristatum ibhidliza ingxenye yezinto ezinomshungu, inciphisa ubumuncu.

11. Intengo Nemikhohliso:
I-Gǔ yī hēi chá ithatha isigaba sentengo esimaphakathi phakathi kwamatiye amnyama aseChina. 13. Izinhlobo Ze-Gǔ Yī Hēi Chá:
- Fú Zhuān (茯砖, Fú Zhuān) — “isitini se-fú”: Itiye elicindezelwe laba yisitini, isici saso esikhulu — ukuba khona “kwezimbali zegolide” (金花, jīn huā), amakholoni ekhova eliwusizo i-Eurotium cristatum.
