Ubuchwepheshe bokukhiqiza i-Gòngméi buwumongo wefilosofi yetiye elimhlophe: ukungenelela okuncane ezinqubeni zemvelo. Lobu bungobunye bobuchwepheshe “obunobubele” kakhulu emhlabeni wetiye — ngaphandle kokugazinga, ngaphandle kokuluka, ngaphandle kokuvubela okunamandla.
- Uhlobo: Itiye elimhlophe (elivubela kancane, izinga lokuhlunga cishe u-5–10%). Likhiqizwa ngobuchwepheshe obujwayelekile bokwenza itiye elimhlophe — ngaphandle “kokubulala uhlaza”, ngaphandle kokuluka — kuphela ukomisa, ukoma kanye nokuhlunga.
- Isigaba: Amatiye amhlophe endabuko aseChina. Ithatha indawo yesithathu emgomeni wamatiye amhlophe ngemuva kwe-Bái Háo Yín Zhēn (白毫银针, Báiháo Yínzhēn) ne-Bái Mǔdān (白牡丹, Bái Mǔdān). - Izifunda zase-Sōngxī (松溪, Sōngxī) nase-Jiàn’ōu (建瓯, Jiàn’ōu): Izikhungo ezengeziwe zokukhiqiza, okuthi ndawonye ne-Jiànyáng ne-Zhènghé zakhe indawo enkulu yokukhiqiza i-Gòngméi yendabuko.

2. Umlando kanye Nokubaluleka Kwamasiko:

- Uhlobo / Umhlobo: Umehluko omkhulu wezitshalo phakathi kwe-Gòngméi namanye amatiye amhlophe — ukusetshenziswa kwe-càichá (菜茶, càichá), eyaziwa nangokuthi “uhlobo lweqembu” (群体种, qúntǐ zhǒng). 4. Indawo kanye Nezici Zokutshala:
- Isifundazwe sase-Fujian: Indawo yokukhiqiza i-Gòngméi iyindawo enamagquma nezintaba eziphansi enyakatho-ntshonalanga yesifundazwe, lapho isimo sezulu sisezindaweni ezisemazansi nomoya omuncu (subtropical monsoon) sinikeza ubusika obufudumele nehlobo elishisayo, elinomswakama. Izinga lokushisa lonyaka liphakathi kuka-17–19°C, imvula yonyaka ingu-1400–1800 mm, umswakama ohlobene cishe ungama-78–82%.
- I-Jiànyáng (建阳): Umnyombo ongokomlando wokukhiqiza i-Gòngméi. Itholakala emgodini womfula i-Jiànxī (建溪), eningizimu-mpumalanga yezintaba ze-Wǔyí Shān. Indawo inamagquma, nobude obuyi-200–600 m ngaphezu kolwandle ezindaweni ezinkulu zokulima itiye. Inhlabathi ikakhulukazi iphuzi futhi ibomvu, imuncu (pH 4,5–5,5), icebile ngezinto eziphilayo futhi inikeza ukudonsa kwamanzi okuhle.
- I-Zhènghé (政和): Indawo esezintabeni eziphakeme kakhulu, amasimu asezindaweni ezingama-400–900 m. Isimo sezulu sibanda kancane kunase-Jiànyáng, okubambezela ukukhula kwezihlumela futhi kunomthelela ekuqongeleleni kwama-amino acid. Inhlabathi — ibomvu nemuncu futhi iphuzi.
- I-Fúdǐng (福鼎): Indawo esogwini, ubude obuphakathi bamasimu buyi-300–700 m, umswakama ophakeme ngenxa yokuba seduze nolwandle. Inhlabathi ebomvu enezithako zamaminerali eziphuma ezintabeni-mlilo inikeza itiye ubumnandi obujwayelekile.

- Ukukha (采摘, cǎi zhāi): Ukukha ngesandla kwezihlumela ezisezingeni elithi “ihlumela elilodwa, amaqabunga amabili noma amathathu”. Kwenziwa ekuseni ngesimo sezulu esomile, emva kokuba amazolo esehambile. Izihlumela ezintsha zifakwa kubhasikidi woqalo, kugwenywa ukuzilimaza noma ukuzicindezela amaqabunga athambile.
- Ukwenyuka / Ukuvuthwa (萎凋, wěidiāo): Isigaba esiyinhloko sokukhiqiza, okunquma ikhwalithi yetiye eliqediwe. Izihlumela ezikhiwe zendlalwa ngoxhaxha oluncane, olulinganayo kumathreyi woqalo noma izisefo zoqalo. Ukwenyuka kwenziwa ngezindlela ezimbili (noma inhlanganisela yazo):
- Ukwenyuka ngokwemvelo ngaphandle: Amathreyi abekwa elangeni (ukukhanya okusakazekile noma okuqondile, kuye ngobukhulu bemisebe yelanga). Le ndlela ivumela amaqabunga ukuthi alahle umswakama kancane.

- Ukoma (干燥, gānzào): Emva kokwenyuka, itiye lomiswa okokugcina ukuze kususwe umswakama osele ufike ku-4–6%. Izindlela ezimbili ziyasetshenziswa:
- Ukoma ngelanga (晒干, shàigān): Indlela yendabuko, lapho amaqabunga awenyukile omiswa elangeni.

Ibanga eliphakeme kakhulu lihlukaniswa ngenani elikhulu lezihlumela, izinto zokusetshenziswa ezithambile ngokwengeziwe kanye nombala okhanyayo weqabunga.
6. Izici Zomzimba:
- Ukubukeka kwamaqabunga omisiwe: Inhlanganisela yezihlumela namaqabunga enokubonakala okugqamile koboya obumhlophe-siliva (bái háo). Amaqabunga made, agobe kancane, afana nokubukeka kwamashiya (okwakususelwa khona igama elithi “méi”). Umbala — usuka kokumpunga-luhlaza uye kokunsundu-luhlaza ngezihlumela ezilula. - Ukunambitheka: Okunothe kakhulu, okuncinene futhi “okunomzimba” kune-Bái Mǔdān, kodwa kuthambile futhi kuhle kune-Shòu Méi. Kunoshukela, kuyaqabula, kunobukhali obuncane obumnandi kanye nokuphuma okuhlala isikhathi eside, “okugoqelayo” (回甘, huígān). Emakheni e-Gòngméi encane kunamandla amanothi ezimbali, noju nezithelo anama-nuances obuqholo obuluhlaza. - Umbala wompheki: Itiye elincane — liphuzi ngokukhanyayo ngokuluhlaza, lisobala futhi lihlanzekile; ngeminyaka (lapho livuthiwe) umpheki uya ngokujula ube yi-amber, uju, kanti kumasampula amadala — ube yithoni elibomvu-amber.
- I-alti yetiye (iqabunga eliphiwe): Izihlumela eziphelele, eziqinile, ezisigcine isimo — ihlumela elinamaqabunga amabili noma amathathu egatsheni. Umbala — usuka kokumpunga-luhlaza uye kokunsundu-luhlaza, lapho kukhanyiselwa, ukhala lweqabunga lubonisa imithambo ebomvu (uphawu olujwayelekile lwe-Gòngméi esezingeni).
7. Isakhi Samakhemikhali:
I-Gòngméi, njengamanye amatiye amhlophe, ihluke kakhulu ngokuqukethwe okuphezulu kwezinto eziphilayo eziphila ngomsebenzi, okuyinto ebangelwa ukugaywa okuncane nokulondolozwa kwesakhi semvelo seqabunga. Ezinye izithako zikhona e-Gòngméi ngenani elikhulu kunasetiyeni amhlophe ahlanzekile ahlumele kuphela, ngenxa yezinto zokusetshenziswa ezivuthiwe kakhulu.
- Ama-Polyphenol (ama-catechin): Ingqikithi yokuqukethwe kwama-polyphenol etiyeni elimhlophe ingu-18–26% wesisindo esomile, okungaphezu kwamanye amatiye aluhlaza. Ama-catechin amakhulu — yi-EGCG (epigallocatechin-3-gallate), i-ECG (epicatechin-3-gallate), i-EGC (epigallocatechin) kanye ne-EC (epicatechin). Itiye elimhlophe lihluke kakhulu ngokuqukethwe okuphezulu kwe-EGCG, okulandela itiye eliluhlaza kuphela. - Ama-Flavonoid: Itiye elimhlophe liqukethe izinga eliphezulu kakhulu lama-flavonoid — 8,5–13 mg/g, okudlula kakhulu izinkomba zezinye izinhlobo zetiye. Okuphawuleka kakhulu ukuba khona kwe-dihydromyricetin (二氢杨梅素, èrqīng yángméisù) — umvikeli wesibindi wemvelo. 9. Ukuphisa:
- Izinga lokushisa lamanzi: 85–95°C. I-Gòngméi encane (iminyaka engaphansi kweyi-1–2) kungcono ukuyiphisa ngezinga lokushisa elingu-85–90°C, ukuze ungalishisi iqabunga elithambile; i-Gòngméi evuthiwe (iminyaka emi-3 nangaphezulu) ingaphiswa ngamanzi angu-90–95°C futhi nangamanzi abilayo — izinga lokushisa eliphakeme lembula kangcono amanothi ajulile, “avuthiwe”.
- Inani letiye: 5–7 amagremu nge-100–150 ml wamanzi (ukuphisa ngendlela ye-gōngfū); 3–5 amagremu nge-200–300 ml (ukuphisa ngetiye noma inkomishi enkulu).
- Isitsha: I-gàiwǎn (盖碗, gàiwǎn) eyenziwe nge-porcelain emhlophe — iyindlela ekahle kakhulu, evumela ukulawula isikhathi sokufukamela futhi uhlole ngokugcwele iphunga. 10. Ukugcinwa:

11. Intengo Nezinto Ezingamanga:
I-Gòngméi iyitholakala kakhulu kunamanye amatiye amhlophe adumile ase-Fujian, okuyenza ibe yisiqalo esihle sokwazi isigaba. Intengo yayo iphansi kakhulu kune-Bái Háo Yín Zhēn ne-Bái Mǔdān, kodwa iphakeme kune-Shòu Méi. Ungayigwema kanjani imikhaza:
- Thenga kubathengisi abathembekile: Izitolo zetiye ezikhethekile ezinodumo noma abahlinzeki abaqinisekisiwe base-Fujian. Qaphela ukuthi kukhona yini ulwazi ngesifunda esiyimvelaphi kanye nonyaka wokukhiqiza.
- Hlola ukubukeka: I-Gòngméi yangempela kufanele ibe nezihlumela ezibonakalayo ezinoboya obumhlophe phakathi kwamaqabunga avuthiwe. Ukungabikho ngokuphelele kwezihlumela kukhombisa i-Shòu Méi noma izinto zokusetshenziswa ezisezansi. Amaqabunga kufanele abe aphelele, hhayi agayiwe.

- Qaphela amanani aphansi kakhulu etiye “elidala”: Imakethe yetiye elimhlophe elivuthiwe igcwele imikhaza — amatiye “aguga ngenkohliso”, aye abhekana nokugaywa ngokushesha ngomswakama nokushisa. 12. Amaqiniso Athokozisayo:
- Isazi setiye u-Zhāng Tiānfú saqamba “umlando wozalo” wetiye elimhlophe lase-Fujian ngefomula ethi “xiǎo bái → dà bái → shuǐxiān bái”: “umhlophe omncane” — umfanekiso we-Gòngméi ovela ku-càichá — wawuyitiye lokuqala emhlophe emlandweni, odlule ukubonakala “kwezinalithi zesiliva” ne-Bái Mǔdān ngamashumishumi eminyaka.

- ENingizimu-mpumalanga Asia, ikakhulukazi eVietnam, itiye elimhlophe (kuhlanganise ne-Gòngméi) ngokwesiko lalibhekwa njengomuthi wokwehlisa umkhuhlane futhi lisetshenziswa emithini yesintu ukwehlisa izinga lokushisa ezinganeni.
- Ifomula ethi “一年茶,三年药,七年宝” (“Unyaka — itiye, iminyaka emithathu — umuthi, iminyaka eyisikhombisa — ingcebo”) isebenza kakhulu e-Gòngméi nase-Shòu Méi: ngenxa yokuqukethwe okuphezulu kwamaqabunga avuthiwe kanye neziqu, ezicebile ngama-polysaccharide, lawa matiye aguqulwa lapho egcinwa ngendlela egqame kakhulu futhi ebikezelwayo.
13. Ukuqhathanisa Namanye Amatiye Amhlophe:
- I-Bái Háo Yín Zhēn (白毫银针, Báiháo Yínzhēn): Isigaba esiphezulu setiye elimhlophe. Izihlumela kuphela, ubuningi boboya obumhlophe. Ukunambitheka — ngokungavamile kuthambile, “njengosilika”, ngamandla amanothi obisi, ukhilimu kanye nama-noti ahlanzekile okuqala. Intengo iphakeme izikhathi ezi-3–10 kune-Gòngméi. Ayimelani kangako lapho iphiswa (ukuthululwa oku-3–5). Amandla okuvuthwa aphansi.
- I-Bái Mǔdān (白牡丹, Bái Mǔdān): Ihlumela elinamaqabunga elilodwa noma amabili. Iphrofayili yezimbali egqame kakhulu (i-peony, i-lily of the valley) kune-Gòngméi, kodwa ukunambitheka okungagcwele kangako futhi “okunomzimba”. Intengo — iphakeme izikhathi ezi-1,5–3 kune-Gòngméi. Amandla okuvuthwa aphakathi.
- I-Mǔdān Wáng (牡丹王, Mǔdān Wáng): Ibanga eliphezulu le-Bái Mǔdān elinezihlumela ezinkulu kakhulu. Isixhumanisi esiphakathi phakathi kwe-Bái Háo Yín Zhēn ne-Bái Mǔdān ejwayelekile. Iphunga lezimbali elinamandla kakhudlwana kanye namanothi okhilimu.
- I-Shòu Méi (寿眉, Shòu Méi): Isigaba “esicolekile” kakhulu setiye elimhlophe — amaqabunga avuthiwe, izihlumela ezincane. Ukunambitheka — kunomzimba kakhulu, “okwenhlabathi”, obuqholo, ngamanothi akhuni. Intengo iphansi kune-Gòngméi. Amandla amahle kakhulu okuvuthwa nokuphekwa.
- I-Yuèguāng Bái (月光白, Yuèguāng Bái): Itiye elimhlophe lase-Yunnan elivela kuhlobo olunamaqabunga amakhulu (Camellia sinensis var. assamica). Lihluke ngokusobala kumatiye amhlophe ase-Fujian: ukunambitheka “okunamandla” kakhulu, iphrofayili yoju nezithelo enamanothi ajwayelekile oju, ibhilikosi elomile kanye nezithelo eziqhakazayo. Indawo ehlukile nomhlobo ohlukile kwakha ulwazi oluhluke ngokuphelele lwetiye.
Ekuphetheni:
I-Gòngméi iwitiye elimhlophe elihlanganisa ukutholakala, ukunotha kokunambitheka kanye namandla amangalisayo okukhula ngokuhamba kwesikhathi. Ladalwa emakhulwini eminyaka adlule kusuka kuhlobo olulula, oluwoluncane lwasendle lwe-càichá emizaneni yasezintabeni enyakatho-ntshonalanga ye-Fujian, futhi lwahamba indlela lisuka “kumhlophe omncane” ongenalo igama laya esigabeni esizimele, esigxilile emazingeni kazwelonke. I-Gòngméi iyisiqalo esihle sokujwayela umhlaba wetiye elimhlophe: ukunambitheka kwayo okunothe, okumnandi ngamanothi ezimbali noju kuyaqondakala ngisho nakumthandi osafufusa, kanti ikhono lokuvuthwa iminyaka eminingi nokuveza kancane izici ezintsha — ezamadethi, izinongo, izinkuni — kuyenza ithakazelise ngokungenamkhawulo kumhlolisisi onolwazi.
