5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe betiye elimhlophe laseFuding bakhelwe phezu kwemisebenzi emibili eyisisekelo — ukubuna kanye nokomisa. Ngokungafani namatiye aluhlaza, lapha asikho isigaba “sokubulala uhlaza” (杀青, shāqīng) futhi cishe akukho ukusonga.

- Ukuhlunga nokuzinzisa: ukususa izingcezu ezinkulu, ukuhlanganisa iqembu.
- Ukucindezela (ngokuzithandela): ingxenye yetiye elimhlophe laseFuding ikhishwa njengama-cake/amablikhi. Ukucindezela kusiza ukugcinwa nokuvuthwa, kanti ukunambitheka kuvame ukuba okuminya futhi “okunamanzi amaningi”.
6. Izimpawu Zokunambitha (Organoleptic):
Ukunambitha kuncike kakhulu esigabeni sezinto ezingavuthiwe naseminyakeni, kodwa “isikole saseFuding” sinomkhombandlela ojwayelekile ophawulekayo — ubumnandi obuhlanzekile nefungo elicacile.
- Iqabunga elomile: kusukela emathunjini anesiliva (Yin Zhen) kuya ezingxenyeni ezinamahlamvu amaningi (Shou Mei). Itiye elisezingeni eliphezulu libukeka liphelele futhi licophelela.
- Iphunga: enambitheni esencane — izimbali ezimhlophe, amakhambi asemathafeni, utshani obusha, izinyosi ezilula; lapho livuthiwe — izinyosi, izithelo ezomile, ngezinye izikhathi “iphunga lesundu” kuma-Shou Mei amadala.
- Ukunambitheka: okumnene, ngaphandle kokubaba okuhlukumezayo; ubumnandi buvame ukuzwakala emaphusheni okuqala. Umqolo ulula futhi “owomile”, ukhula lapho amanzi eshisa ngokweqile.
- Itshe: kusukela ephuzi elikhanyayo kakhulu oluhlaza (amatiye asencane anamathuna) kuya emthunzini we-amber (okuvuthiwe kanye/noma amahlamvu).
- Iqabunga emva kokugaywa: liyabuyiselwa, liyaphila; emaqenjeni amahle, iphunga elihlanzekile “lengadi” liyagcinwa ngaphandle kwephunga elimbi.
7. Ukwakheka Kwezamakhemikhali:
Itiye elimhlophe liyabongwa ngokucubungula ngokucophelela: izinto ezingavuthiwe azicishe zibe nomthelela wemishini noma wokushisa, ngakho-ke emtsheni izingxenye zezinto zomzimba zeqabunga zigcinwa kahle.

8. Izinzuzo Ezinempilo:
Itiye elimhlophe ngokwesiko libekwa eziphuzweni ezinomphumela othambile wokuvuselela kanye nokuqukethwe okuphezulu kwama-antioxidant. Ngenkathi kunjalo, itiye aliwona umuthi, futhi noma yimiphi “imiphumela yokwelapha” evela ezincazelweni zokumaketha kufanele yamukelwe ngokuhlolisisa.
Izici ezingaba yinzuzo (ngaphakathi kokusetshenziswa okunengqondo):

9. Ukugaywa:

Izinga lokushisa lamanzi: 75–90 °C (okukhulu amathuna “nobumnene” — kuncane izinga lokushisa).

Isilinganiso: 4–6 g ku-150–200 ml we-gaiwan/iketela; engilazini ungasebenzisa 2–3 g ku-200–250 ml.

Amaphushu: qala ngemizuzwana engu-10–20, bese wandise kancane kancane isikhathi. Itiye elimhlophe elisezingeni elihle limelana namaphushu angu-5–8.

Iziphuzo: i-porcelain/ingilazi. Ingilazi ilungele uma ufuna ukubuka ukuvuleka kweqabunga.

Imininingwane: itiye elimhlophe “lithanda umoya” — ungesabi ukuvulela kafushane iqabunga elomile ku-gaiwan esefudumele ngaphambi kokuphushwa kokuqala.
**Iseluleko sokusebenza ngezigaba:** * **I-Yin Zhen:** 75–80 °C, amaphushu amafushane — ngenxa yobumnene nobulili. * **I-Bai Mu Dan:** 80–90 °C, ungakwazi ukuba “mncane” ngesikhathi. * **I-Shou Mei / okucindezelwe:** 90–100 °C, imelana namaphushu amade nokubiliswa.
10. Ukugcinwa:
Itiye elimhlophe lizwela emswakeni nasemaphungelweni angaziwa.

Isitsha: esivalekile (ikani, isikhwama se-zip-lock/isikhwama esine-foil), ngaphandle kwezinto “ezinephunga”.

Indawo: eyomile, epholile, emnyama, ngaphandle kokuguquguquka kwezinga lokushisa.
-
Ongomakhelwane: kude nesipisi, ikhofi, iziqhumiso zokuthosa.
-
Ifriji: kungenzeka kumaqoqo amnene kakhulu (ikakhulukazi anamathuna amaningi), kodwa kuphela ngokuvaleka okuphelele, ngaphandle kwalokho itiye lizothatha ngokushesha amaphunga nomswakama.
**Uma inhloso kungukuvuthwa:** gcina itiye njenge-white evuthiwe (bona izimiso ngezansi), kodwa njalo lawula umswakama namaphunga.
11. Intengo Nokukhwabanisa:
Entengo yetiye elimhlophe, okuthonya kakhulu izinga lezinto ezingavuthiwe, ukuqoqa ngesandla, izimo zezulu zonyaka, isithunzi somkhiqizi kanye “nokuhlanzeka” komzila (indawo ethile/igama lentaba).
Ubungozi obuvamile:
- ukushintshwa kwezinto ezingavuthiwe (ngokwesibonelo, “izinaliti zesiliva” ezenziwe ngamathuna amabi noma ezivela kwesinye isifunda);
- ukufaka iphunga (uma itiye linuka “iphefiyumu”, i-vanillin noma izithelo ezigqamile — lokhu kuyisizathu sokusola);
- ukoma ngokweqile/ukuwosa ngokweqile (kufihla amaphutha ezinto ezingavuthiwe, kunikeza amanothi okosa kanye nokuphukakala);
- izinganekwane zokumaketha esikhundleni semininingwane ecacile: unyaka wokuqoqa, isifunda, uhlobo lwesihlahla, ubuchwepheshe.
Okusiza ekukhetheni:
- ulwazi olucacile ngezinto ezingavuthiwe nesifunda;
- iqabunga elomile liphelele, ngaphandle kothuli nezicucu;
- iphunga elihlanzekile ngaphandle kwephunga lokubola kanye “nendawo engaphansi” (emavuthiwe — kuvumelekile iphunga elithambile lokhuni/okwe-herb, kodwa hhayi isikhutha).
12. Amaqiniso Athakazelisayo:
- Ngaphakathi kwe-Fuding, abathandi bavame ukuxoxa “ngomehluko omncane” wezindawo ezincane (ikakhulukazi izindawo ezisezintabeni), kodwa empeleni, okuhlala kubalulekile yilo nyaka, izinto ezingavuthiwe kanye nobuciko bokucubungula.
- Itiye elimhlophe lingelinye lamatiye ambalwa aseShayina lapho ukuvuthwa kwamukelwa kabanzi njengengxenye yesiko lokusetshenziswa: abaqoqi bagcina itiye elivundliwe kanye nama-cake.
- Ukuze unambithe i-Fuding, kulula ukuqhathanisa unyaka owodwa ezigabeni ezahlukene (Yin Zhen vs Bai Mu Dan vs Shou Mei): ngaleyo ndlela kulula ukuqonda ukuthi ingxenye yamathuna, amaqabunga neziqu zamaqabunga “isebenza” kanjani.
13. Izinhlobo ezahlukene zetiye elimhlophe laseFuding:

- IGong Mei (贡眉, Gòngméi) — “amashiya entela”: umklamo wokuqala onamahlamvu amaningi, ngokuvamile usuka ku-cai cha; ubumnandi kanye nephrofayili ye-herb/yezithelo.
- IShou Mei (寿眉, Shòuméi) — “amashiya okuphila isikhathi eside”: amaqabunga amakhulu neziqu; itshe eliminyene, amandla amahle okucindezela nokuvuthwa.
- Itiye elimhlophe elicindezelwe: ama-cake/amablikhi asuka ku-Bai Mu Dan, Gong Mei noma Shou Mei — “isiko lokugcina” elihlukile kanye nokubiliswa.
Emakethe kukhona futhi ukubhekisela “kubuchwepheshe obusha” (新工艺白茶) — indlela eyehlukile yokubuna nokomisa, enganikeza iphunga elikhanyayo kakhulu, kodwa kuyilapho incike kakhulu ekhonweni lomkhiqizi.
14. Amaphutha ekugayweni nasekugcinweni:

- Ukudideka phakathi “kwakusha vs okuvuthiwe”: ukulindela i-white endala ukuba ibe “nohltaza lwentwasahlobo” — kuyiphutha; ukubaluleka kwayo kusezinyosini, ezithelweni ezomile kanye nokuminyana okuthambile.
Uma ukunambitheka kubonakala kungenalutho — zama:
- ukwandisa isilinganiso ngo-1–2 g;
- ukukhuphula izinga lokushisa ngo-5 °C (noma, ngokuphambene, ukwehlisa kumatiye anamathuna);
- ukunciphisa isikhathi sokuphushwa kokuqala futhi unikeze amaphushu amaningi ngokulandelana.
15. Ukucindezela nokuvuthwa:
Itiye elimhlophe lingelinye lamatiye ambalwa aseShayina akhona kakhulu kokubili ekubeni isiqephu kanye nasekucindezelweni (ama-cake, amablikhi).
Kungani kucindezelwa itiye elimhlophe
- Ukulula ukugcinwa nokuthuthwa: inani elincane lomthamo, izicucu ezincane.
- Ukuvuthwa okulinganayo: ekucindezelweni, itiye likhula kancane futhi ngokuvamile “lihlangene”, ngoba iqabunga alinakho ukuthintana komoya omncane.
- Ukunambitheka: kokucindezelwe kuvame ukuba “nokuminyana okuningi” kanye namanothi amancane angaphezulu.
Isiqephu vs esicindezelwe — ukhethe ini
- Isiqephu singcono uma ufuna iphunga elikhulu lapha manje (ikakhulukazi ematiyeni anamathuna nama-fresh).
- Esicindezelwe silula uma uhlela ukugcina, ukuvuthwa, ukubiliswa noma ukuphuza itiye njalo ngobuningi bayo.
Indlela yokwehlukanisa itiye kukhekhe
- sebenzisa ummese omncane we-tiya/imbazo yokubhoboza futhi usebenze ngezendlalelo, ungalenzi itiye libe yimpuphu;
- uma ukucindezela kuqinile, ungakwazi ukulivumela “liphumule” emva kokuvulwa kwephakheji izinsuku ezi-1–2 endaweni emaphakathi eyomile — iqabunga lizoba nokuqina okungcono;
- zama ukugcina izingcezu ezinkulu: ngaleyo ndlela ukunambitheka kuyoba kuhlanzekile futhi kumelula.
Kubalulekile: ukucindezela akwenzeli “ukuba itiye libe ngcono” ngokuzenzakalelayo. Uma izinto ezingavuthiwe noma ukugcinwa kuzimele, ukhekhe uzovele ulondoloze inkinga.
16. Indlela itiye elishintsha ngayo ngokuhamba kwesikhathi:
Ukuvuthwa kwetiye elimhlophe akudingekile kube “amashumi eminyaka”. Ngisho nasezimeni zasekhaya izinguquko zibonakala kusenesikhathi.
0–12 izinyanga (ngokuvamile “Xin Cha”)
- kugqama izimbali, amakhambi amasha, utshani;
- itshe likhanya;
- kungcono amazinga okushisa acophelelayo namaphushu amafushane (ikakhulukazi kwi-Yin Zhen).
Eminyakeni engu-1–3
- uhlaza olusha luba luthule;
- kuvela izinyosi eziningi, amakhasi ezithelo;
- ukunambitheka kuyazungeza, kuqedwe umqolo oqinile.
Eminyakeni engu-3–7 (imvamisa lokho okubizwa ngemakethe ngokuthi “Lao Cha”)
- itshe liba mnyama ngokubonakalayo, liye ku-amber osagolide;
- umugqa wezithelo ezomile uyakhula, kuvela imithunzi ye-herb kanye nokuthile okubabayo;
