Igama:
- “Dōuyún” (都匀) — igama ledolobha nesikhungo sokuphatha se-Qiannan Bouyei Miao Autonomous Prefecture, indawo yomlando yokukhiqiza itiye.

5. Ubuchwepheshe Bokukhiqiza:

6. Izimpawu Zemizwa Yokunambitha:

Isimo Sangaphandle Seqabunga Elomile: Amahlumela amancanyana, aqinile, asontekile, anesimo esigobile (卷曲形), afana namahhuku okudoba. Amahlumela mancanyana futhi ahlelekile (条索紧细, tiáosuǒ jǐnxì), ambozwe kakhulu uboya obumhlophe-siliva (白毫显露). Umbala — uluhlaza nokucwebezela okugolide okuvamile (绿中带黄).

Iphunga Leqabunga Elomile: Iphunga elimnene lezinkonyana ezincane (嫩香, nèn xiāng) lihambisana nethoni ye-castnut (栗香, lì xiāng) kanye nethoni ephakeme ehlanzekile (清香, qīngxiāng). Iphunga lihle, lingenako ukuqhunsuka.

Iphunga Lokumnika: Iphunga eliqinile le-castnut, elengezwe ithoni entsha eluhlaza. Lapho liphola, kuvela izici ezithambile zoju.

Ukunambitheka: Okusha futhi okugcwele (鲜浓, xiānnóng) — inhlamvu yokuqala ekhanya, “enokhusu”. Okuqinile nokugcwele (醇厚, chúnhòu). Umbala Wokumnika: Uluhlaza ngokuphuzi okugolide okubonakalayo (绿中透黄) — okunye “kokuhlaza okuthathu nokuphuzi” (三绿透黄色) okubeka isimo sangaphandle setiye. Ukumnika kuhlanzekile futhi kukhanya.

Phansi Kwetiye (iqabunga eliphisiwe): Amahlumela athambile, afanayo ombala oluhlaza ngemicucu ephuzi (绿中显黄). Iqabunga linama-elastic, liphelele, lisigcinile isimo.
7. Ukwakheka Kwamakhemikhali:
Imvelaphi yezintaba eziphakeme, ukugcwala kwamafu okuningi, kanye nokwakheka okukhethekile kwamaminerali emhlabathini wase-Guizhou kubeka iphrofayili lamakhemikhali we-Dōuyún Máo Jiān:

Ama-Polyphenol (ama-catechin): Okuqukethwe — kufika ku-31.24% wesisindo esomile — okungaphezulu kakhulu kunesilinganiso samatiye aluhlaza (cishe nge-10% ngaphezu). Izinga eliphezulu lama-polyphenol linikeza amandla amakhulu e-antioxidant kanye nokujula okuhlelekile kokunambitheka.

Ama-Amino acid (kuhlanganise ne-L-theanine): Okuqukethwe okubalulekile okunikeza ukusha, ukunokhusu, kanye nethoni “ye-umami” yokunambitheka. Ukulingana kwama-polyphenol nama-amino acid kwakha iphrofayili evamile ye-Dōuyún Máo Jiān “ekhanyayo, kodwa ingenakuqhwala”.

8. Izinzuzo Zezempilo:

Inani letiye: 3 g nge-150 ml yamanzi (isilinganiso 1:50).

Isitsha: Ingilazi yengilazi (玻璃杯) — ukubuka “ukudansa” kwamahlumela amancanyana anoboya. I-gaiwan emhlophe ye-porcelain (白瓷盖碗) — ukulawula ngokuqondile iphunga.

Inqubo:
- Fudumeza isitsha ngamanzi ashisayo, uthele.
- Thela ama-3 g etiye.
- Thela amanzi ezingxenyeni ezi-1/3 zobubanzi, “umanzise” itiye imizuzwana emi-5, uthele (ukugeza).
- Thela amanzi ezingxenyeni eziyi-7/10 zobubanzi.
- Ukumnika kokuqala — imizuzu emi-2.
- Ukuchithwa okulandelayo — yandisa isikhathi ngemizuzwana engama-30. Isigaba “Zun pin” sikwazi ukubekezela ukuphisa izikhathi ezi-3–4, “Er ji” — izikhathi ezi-2–3.

Qaphela: lapho izinga lokushisa lokumnika lingu-50–60°C ukushukela okuthambile kwe-castnut kuzwakala kakhulu. Lapho liphola, itiye liveza umphumela “wobumhlophe obumuhle” (冷后甜, lěnghòu tián) — ukunambitheka okumnandi kokumnika osekupholile. Akunconywa ukuphuza ungadlanga lutho.
10. Ukugcinwa:
- Gcina esitsheni esivalekile endaweni emnyama, eyomile, nepholile, kude nephunga lokunye.
- Izinga lokushisa elihle — 0–5°C (esikhaleni sefriji), ephakejini elivaleke ngokuphelele.
- Isikhathi sokugcina — kufika ezinyangeni eziyi-12 uma imibandela igciniwe. Ukuze uthole okuhlangenwe nakho okungcono kokunambitha — sebenzisa phakathi nezinyanga eziyi-6 emva kokuvuna.
- Emva kokuvulwa — kunconywa ukusebenzisa phakathi kwenyanga eyodwa.
11. Inani Nezinto Ezingamanga:
