4. I-Terroir Nezici Zokutshala:

  • Isifunda nokuma komhlaba: Intaba i-Dòng Dǐng (凍頂山) iyingxenye yochungechunge lwe-Fènghuáng (鳳凰山), itholakala maphakathi neThayiwani.   • Inhlabathi: Inhlabathi ensundu ne-reddish yellow (棕色高粘性紅黃壤) enokunamathela okuphezulu, equkethe izingcezwana zetshe elithambile eligugekile. Ukusabela kumuncu kuye kumuncu kakhulu, kunothe ngezinto eziphilayo. Ikhono elihle kakhulu lokugcina amanzi ngenkathi kuvunyelwa amanzi adlule — inhlanganisela ekahle yesihlahla setiye.
  • Izici zokutshala: Amasimu etiye avundiswa minyaka yonke ngomquba wezinto eziphilayo, kuqashwa isimo se-acidity yenhlabathi, futhi kwenezelelwa izakhi ezintulayo. Naphezu kokuphakama okusesilinganisweni, inhlanganisela yenkungu, inhlabathi evundile, namakhono endabuko okucubungula kwakhe isandla esihlukile se-terroir esingakhiqizwa kwezinye izindawo.

5. Ubuchwepheshe Bokukhiqiza:

Ubuchwepheshe be-Dòng Dǐng Wūlóng buhlanganisa izimpande zaseFújiàn nokusungulwa okuhlukile kwaseThayiwani — ukusontwa okuningi okushisayo ngendwangu (布揉制茶, bù róu zhì chá / 熱團揉, rè tuánróu), okubumba imicucu eyindilinga ewuhafu. Ukugazinga kokugcina (焙火, bèihuǒ) kuwuphawu lwesitayela sendabuko.

  • Ukuvuna / 采摘 — cǎizhāi: Amakha angaphezulu (ihlamvu elingakavulwa + amacembe ama-2–3) aqoqwa ngesandla ngesikhathi sika-10:00–14:00 futhi alethwa ngokushesha endaweni yokusebenzela, kugwenywe ukushisa ngokweqile nokulimala komshini.
  • Ukubuna elangeni / 日光萎凋 — rìguāng wěidiāo: Amacembe amasha andaliwe endaweni evulekile futhi agcinwe imizuzu engu-20–30 ngaphansi kwelanga.   • Ukumisa / 殺菁 — shāqīng (炒青 — chǎoqīng): Ukugazinga kwezinga lokushisa eliphezulu (ngokuvamile epanini) kumisa izinqubo zokufaka umoya futhi kumise izinga lokufaka umoya elifinyelelwe. Izinga lokushisa nesikhathi kukhethwa ngungcweti kucatshangelwa iqoqo.
  • Ukusonta nokubumba / 揉捻 — róuniǎn + 團揉 — tuánróu: Isinyathelo esehlukanisa i-Dòng Dǐng kwamanye amawulungu amaningi. Ngemva kokusonta okokuqala, icebe lisongelwa ngendwangu kakotini futhi libunjwe libe yibhola eliqinile, bese licindezelwa kaningi, livulwe, lihlolwe bese liphinde lisontwe. Lo mjikelezo (揉捻 → 攤開 → 包揉) uphindwa izikhathi ezingama-20–30 kuya kwezingama-40–60 (kuya ngobuningi obufunwayo) ngezinyathelwana zokomiswa phakathi.   • Ukomiswa kokugcina / 複烘 — fùhōng: Ukwehliswa komswakama wecebe kuze kufike ezingeni eliphephile lokugcina.
  • Ukugazinga / 焙火 — bèihuǒ: Isinyathelo esinqumayo kwi-Dòng Dǐng yendabuko. Ukugazinga kungenziwa ngogesi noma ngendlela yendabuko ngamalahle ezinkuni (炭焙, tànbèi), ngokuvamile kusetshenziswa i-longan (龍眼炭, lóngyǎn tàn). Ukugazinga kwendabuko kwenziwa kaningi — kuze kube kathathu — ngaphansi kwezinga lokushisa eliphansi elilawulwayo isikhathi eside. Kwenza umnandi ube mnene, kususe ukunambitheka “okuluhlaza”, kwakhe amanothi awuphawu lomndomu ogazingiwe, i-caramel noju, futhi kwandisa kakhulu ukuhlala isikhathi eside kwetiye. Kutiye lomncintiswano kusetshenziswa kuphela ukugazinga ngamalahle okwenziwa ngesandla.
  • Ukuhlunga / 分級 — fēnjí: Itiye eliphekiwe lihlungwa ngobukhulu, ubuningi nokubukeka kusetshenziswa umshini wokuhlukanisa umoya (風選機).

6. Izici Zomzimba Nezimizwa:

  • Ukubukeka kwecebe elomile: Imicucu eminyene esontiwe eyindilinga ewuhafu (amabhola amancane), enobukhulu obuphakathi, elinganiswe ngokulinganayo. Umbala — uluhlaza okotshani obomnyama (墨綠) onamachashaza ampunga mhlophe awuphawu, afana nesikhumba sexoxo (青蛙皮狀, qīngwā pí zhuàng) — uphawu lwe-Dòng Dǐng. Kwamanye amacebe kutholakala umphetho osagolide emaphethelweni awo. Ingaphezulu linokukhanya okuncane kwamafutha.
  • Iphunga lecebe elomile: Icebe elilodwa nelifudumele. Kunamandla iphunga lokugazinga, lomndomu othosiwe (i-walnut, i-almond), i-caramel nezithelo ezibhekiwe (i-dried apricot, i-prune). Ingaphansi — iphunga elimnandi lezimbali, elinamacezu e-osmanthus (桂花香, guìhuā xiāng). Ezinguqulweni ezigazingwe kakhulu — umusi olula nokujula okuvela kwezinkuni.
  • Iphunga le-infusion: Iphunga elihlukahlukene, elikhula kusukela ekuphonsweni kuya kokuphonswa. Ukugibelela kokuqala — uhla oluqhakazile lwezimbali nezithelo olunomnandi owandayo we-caramel; ngokuvuleka kwecebe, amanothi e-osmanthus, izithelo ezivuthiwe noju ayashubisa. Izinguqulo ezigazingiwe zandiswa ngemisindo yamantongomane noshokoledi. Isici esiwuphawu lwe-Dòng Dǐng esezingeni eliphezulu — iphunga elihlala isikhathi eside, elihlala phansi kwenkomishi ngemva kokuphuzwa kwe-infusion (杯底留香, bēi dǐ liú xiāng).
  • Ukunambitheka: Okugcwele, okufudumele, okusongayo. Umzimba we-infusion uminyene, unomnandi ogqamile kanye nomunyu omnene ongahluphi. Iphrofayili yokunambitheka: umndomu othosiwe, i-caramel, izithelo ezibhekiwe, uju, kanye nezingoma zezimbali nezikholomu. Ukunambitheka ngemuva kuhlala isikhathi eside, kunomnandi obuyayo ogqamile (回甘, huígān) kanye nezingoma zomphimbo ezigqamile (喉韻, hóuyùn). Ukunambitheka kuguquka kakhulu kusukela ekuphonsweni kuya kokuphonswa: umnandi wokuqala kancane kancane unikeza indawo ekujuleni okukhulu kwamaminerali. Ezinguqulweni ezigazingwe kancane, ukugxila kugudlukela esigabeni sezimbali nesikhilimu.
  • Umbala we-infusion: Kusuka kugolide ophuzi kuye ku-amber omnyama onomnyama obomvu kancane (紅水, hóngshuǐ); okusobala nokuhlanzekile. Umbala uncike ezingeni lokufakwa umoya nokugazinga: izinguqulo ezilula zinikeza i-infusion ephuzi ngokugolide okulula, ezendabuko ezigazingiwe zinikeza i-amber ogcwele.

7. Ukwakheka Kwamakhemikhali:

8. Izinzuzo Zezempilo:

9. Ukwenziwa Kwetiye:

  • Izinga lokushisa lamanzi: 90–100 °C. Ezinguqulweni ezigazingwe kancane — eduze kuka-90 °C; kwezendabuko ezigazingwe kakhulu — kuze kufike emanzini abilayo (100 °C).

  • Inani letiye: Amagremu angu-5–8 ku-100–150 ml wamanzi (indlela ye-gongfu). Ngendlela yaseYurophu — amagremu angu-3–4 ku-200–250 ml.

  • Iziphuzo: I-gaiwan (蓋碗, gàiwǎn) yobumba olumhlophe — ukukhetha okujwayelekile, okuvumela ukubona ukuvuleka kwecebe nokulawula ngokunemba isikhathi. Kwi-Dòng Dǐng yendabuko egazingiwe, iphodwe elincane elenziwe ngenhlabathi yesi-Yxīng (宜興紫砂壺), elinomthamo cishe we-100–200 ml, nalo lisebenza kahle — inhlabathi iqongelela ukushisa futhi igcizelela ukujula kwesimo “somlilo”.

  • Inqubo:

    1. Shisisa i-gaiwan noma iphodwe ngamanzi abilayo, ukhuphe amanzi.

I-infusion epholile ithola umphumela omuhle “wokunambitheka okupholile ngemuva” (冷後甜, lěng hòu tián). 10. Ukugcinwa:

11. Intengo Namaqiniso Amabi:

  • Isigaba sentengo: I-Dòng Dǐng Wūlóng ingeyesigaba sentengo esiphakathi nesiphezulu samawulungu aseThayiwani. Intengo inqunywa izici eziningi: imvelaphi yezinto ezingavuthiwe (umnyombo wase-Dòngdǐng ngokumelene nezindawo eziseduze), isikhathi sokuvuna (intwasahlobo nobusika kubiza kakhulu), i-cultivar (i-Qīngxīn Wūlóng — iphrimiyamu), izinga lomsebenzi wezandla, idumela lomcubunguli kanye nezindondo zomncintiswano.     • Hlola i-infusion: ecacile, ehlanzekile, e-amber egolide, engenakho ukufiphala. Ukunambitheka — okubushelelezi, okumnandi, ngaphandle komunyu ohlabayo, nokunambitheka okumnandi okuphindayo okuhlala isikhathi eside.

12. Amaqiniso Athokozisayo:

  • Wénshān Bāozhǒng (文山包種, Wénshān Bāozhǒng): Iwulungu lasenyakatho yeThayiwani elinokufakwa umoya okulula (15–20 %) nokugazinga okuncane.   • Dòngdǐng Guìfēi Chá (凍頂貴妃茶, Dòngdǐng Guìfēi Chá): I-terroir efanayo yaseLùgǔ, kodwa icebe lilinyazwe yisitshalwa esincane, okunikeza iphunga eliqhamile lezinyosi nezithelo lapho ukufakwa umoya kungu-20–30 %.
