- Ukuhlunga (分级, fēnjí): Izinaliti eziqediwe zihlungwa ngobude, ukuqonda, okuqukethwe kwe-tips, kanye nokufana. Amaqabunga etiye aphukile, asontekile nezinye izinto ezingafuneki ziyasuswa.
6. Izimpawu Zokunambitheka:
- Ukubukeka kweqabunga elomile: Amaqabunga etiye amade, amancane, aqondile anesimo senaliti anamacembe acijile, afana nezinaliti zikaphayini. Ubude bamaqabunga etiye bungu-2–4 cm. Umbala umnyama onamachashazi agolide nansundu e-tips. Uboya (毫, háo) bumboza kakhulu ingxenye yehlumela. Umuzwa jikelele uwukuhlonipheka nokuzacile, amaqabunga etiye alingana ngosayizi.
- Iphunga leqabunga elomile: Licindezelayo, limnandi, linamathoni agqamile e-malt, uju, izithelo ezomisiwe (i-prune, i-apricot eyomisiwe), ushokoledi. Kunamaphuzu amancane ezimbali namathoni e-gingerbread. Kweminye imithwalo – kunentuthu engaphelele engabonakali.
- Iphunga lokuphuzwayo: Ligqamile, lifudumele, liyasibekela. Ithoni ye-honey-malt igqamile ngamathoni aphansi e-caramel, izithelo ezomisiwe, izimbali kanye nezinongo ezilula. Lapho liphola, kuvela amanothi ezinto ezibhakwayo namantongomane.
- Ukunambitheka: Kugcwele, kucindezelayo, kuyi-velvet. Ubumnandi bemvelo buzwakala kahle, kodwa bunesimo “esinamandla” kakhulu nesesakhiwo uma kuqhathaniswa ne-Jīnzhēn eyenziwe ngamahlumela kuphela – ukuba khona kweqabunga kwengeza ukujula kanye ne-minerality. Amanothi ayinhloko: i-malt, uju, izithelo ezomisiwe, ushokoledi wobisi, i-caramel. Ubumnandi bumnene, buhambisana. Akukho muncu. Ukunambitheka okuhlala emva (回甘, huígān) kude, kunomkhondo omnandi “wesinkwa.”
- Umbala wokuphuzwayo: Kusuka ku-amber-orange kuya kokucebile okubomvu-amber, okusobala nokuhlanzekile. Uma kwenziwe kahle – kunendandatho esobala yegolide (金圈, jīnquān) emaphethelweni enkomishi.

7. Ukwakheka Kwamakhemikhali:
- Ama-Polyphenol: Okuqukethwe eqabungeni elisha le-cultivar yaseYunnan enamaqabunga amakhulu – 30–38%. Etiyeni eliqediwe, ama-catechin aguqulwe abe yi-theaflavin (0.5–1.5%) kanye ne-thearubigin (8–12%), okunquma umbala, ukunambitheka, kanye nezakhiwo ze-antioxidant.
- Ama-Amino Acid: 2–3% wesisindo esomile. Ingxenye eyinhloko – i-L-theanine, enikeza ubumnandi nomphumela wokuphumula.
- Ama-Alkaloid: I-caffeine – 3–4% (cishe 40–60 mg nge-portion engu-150 ml), i-theobromine, i-theophylline. Okuqukethwe iqabunga kukhuphula kancane ukukhishwa kwe-caffeine uma kuqhathaniswa namatiye enziwe ngamahlumela kuphela.

- Inqubo:
- Ukufudumeza izitsha: Geza i-gàiwǎn ne-chāhǎi ngamanzi abilayo.

- Izitha zetiye: Umswakama, ukukhanya, amaphunga angaphandle, izinga lokushisa eliphezulu.

13. Ukuqhathaniswa Namanye Ama-Diānhóng:
- I-Diānhóng Jīnzhēn (滇红金针, Diānhóng Jīnzhēn, “Izinaliti Zegolide”): Isimo senaliti esifanayo, kodwa yenziwa ikakhulukazi ngamahlumela wodwa (单芽). Umbala wamaqabunga etiye usagolide kakhulu. Ukunambitheka kulula, kuncane, kugxile emathoni ezimbali nezinyosi futhi “kungomzimba” omncane. Intengo iphakeme.
- I-Diānhóng Jīn Luó (滇红金螺, Diānhóng Jīn Luó, “Imisongozelo Yegolide”): Ukusonta okuyisiphethu esikhundleni senaliti. Ukunambitheka okuminyene, “okusindayo” ngenxa yesimo esihlangene nokusonta okunamandla. Amanothi agqamile kashokoledi ne-caramel. Izinga lentengo liqhathaniswa ne-Sōngzhēn enhle noma liphezulu kancane.
- I-Diānhóng Gōngfu (滇红工夫, Diānhóng Gōngfu): I-Diānhóng yendabuko enezinto ezivuthiwe kakhudlwana nokusonta okuyimicu. Ukunambitheka kunamandla kakhulu, kuyabuna, kunamathoni e-malt nezinongo agqamile. Inentengo etholakala kalula kunazo zonke. Ukubukeka “okungahlobisiwe.”
- I-Diānhóng Jīn Sī (滇红金丝, Diānhóng Jīnsī, “Izintambo Zegolide”): Amaqabunga etiye amancane, anjengemicu enziwe ngamahlumela wodwa. Umeleli olula futhi omncane kakhulu wochungechunge. Ukunambitheka kumnene, “okomoya,” okugcizelela izimbali. Intengo iphakeme.
- I-Gǔshù Diānhóng (古树滇红, Gǔshù Diānhóng, “Itiye Elibomvu Lezihlahla Ezindala”): Ikhiqizwa ngezinto ezivela ezihlahleni zetiye ezineminyaka eyikhulu noma ngaphezulu.
