- Ukuqoqa (采摘, cǎizhāi): ngesandla, ngobumnene.
- Ukuvuthwa (萎凋, wěidiāo): Izinto ezingavuthiwe zendlalwa ngendwangu encane emathreyini oqalo ngaphandle (ukuvuthwa komthunzi noma kwelanga) noma ekamelweni elinomoya. - Ukubila (发酵, fājiào): Amacembe akheke okwamanje asatshalaliswa ekamelweni elinokushisa okulawulwayo (22–28°C) nomswakama (90–95%). Isikhathi — amahora angu-4–6. 6. Izimpawu Zomqondo:
- Ukubukeka kweqabunga elomile: Amacembe etiye amancane, aqondile, asonteke ngokuqinile abe yisimo sezinaliti. Umbala — kusukela kokunsomi okumnyama kuye okumnyama okunokuhlanganiswa okuningi okusagolide noma okunsundu (ama-tips, embozwe uboya). - Umbala womphunga: Kusukela kumbala we-amber-ubomvu kuya kobomvu onsundu, ucebe, obala, ohlanzekile, onokujula kwethoni nokucwebezela okubonakalayo. ‘Indandatho yegolide’ (金圈, jīnquān) emaphethelweni enkomishi — inkomba yokubila kwekhwalithi.
- Isiqu setiye (iqabunga eliphekwe): Amahlumela namacembe avulekile, anwebekayo, anombala obomvu ngokunsundu noma wobhedu. Amahlumela asagolide abonakala kahle ngemuva kwamacembe amnyama. Ukulingana kwesimo nombala — uphawu lwekhwalithi enhle.
7. Ukwakhiwa Kwamakhemikhali:

- Ama-Alkaloid (生物碱): I-Caffeine — 2–4% (cishe 14–15 mg/g). I-Theobromine ne-theophylline — kumanani amancane. Okuqukethwe i-caffeine kungase kube phezulu kancane kunamatiye amsulwa, ngenxa yokuba khona kwamaqabunga.
- Amafutha Aphambili (芳香油): Iqoqo lephunga elicebe: i-linalool, i-geraniol, i-β-ionone, i-phenyl ethanol, i-nerolidol, i-methyl salicylate. Ukuba khona kwamaqabunga kucebisa iphunga ngamaphuzu e-malty nezinongo.
- Amavithamini: C (ngokwengxenye), B₁, B₂, B₆, E, K, PP.
- Amaminerali: I-Potassium, i-magnesium, i-manganese, i-fluorine, i-iron, i-zinc, i-selenium. Ukukhishwa kwamanzi — 38–44%.
- Izici Eziyisipesheli: Ukubila okujulile nokuba khona kwamaqabunga kwakha okuqukethwe okuphezulu kwe-thearubigin, okunikeza i-Jīn Zhēn ukunambitheka ‘okuqinile’, okugxilile kanye nombala ojulile womphunga.
8. Izinzuzo Zezempilo:

- Ukusekela ukugayeka kokudla: Kushukumisa ukukhishwa kwejusi lasesiswini, kuthuthukisa ukunyakaza kwamathumbu, kusiza ukugaya ukudla okunamafutha nokusindayo. Itiye elibomvu ‘elinefutha elifudumele’ lithambile esiswini kune-green.
- Ukusekela inhliziyo nemithambo yegazi: Ama-polyphenol etiye elibomvu asiza ukulinganisa iphrofayela ye-lipid — ukunciphisa i-LDL nokwandisa i-HDL. Ama-thearubigin abopha i-cholesterol, akhuthaze ukuphuma kwayo. Ama-flavonoid aqinisa izindonga zemithambo.
- Umthelela wokunciphisa ukucindezeleka: I-L-theanine ikhuthaza ukukhululeka, ukunciphisa ukukhathazeka, ukuthuthukisa isimo sengqondo ngaphandle kokozela.
- Ukuqinisa amasosha omzimba: Ama-polyphenol anezinto zokulwa namagciwane namagciwane, asekela umsebenzi wokuzivikela.
- Ukulwa nokuvuvukala: Ama-polyphenol etiye elibomvu abonisa umsebenzi wokulwa nokuvuvukala, okungaba usizo ezimeni ezingapheli zokuvuvukala.
9. Ukuphisa:

10. Ukugcina:
- Isiqukathi: Isitsha esivalekile esingashayi — ithini lensimbi, isikhwama esinama-foil, ukupakishwa kwe-vacuum.
- Izimo: Indawo eyomile, epholile, enomnyama, engenaphunga. Izinga lokushisa — 15–25°C, umswakama — kungabi ngaphezu kuka-60%.
- Izitha zetiye: Umswakama, ukukhanya, ukushisa, i-oxygen, amaphunga angaphandle.
- Isikhathi: eminyakeni emi-2–3 ezimweni ezifanele. Njengamanye amatiye abomvu, i-Jīn Zhēn ifinyelela ukunambitheka okuphelele ngemuva kwezinyanga ezi-1–3 ngemuva kokukhiqiza.
- Isiqandisi asinconywa — amaconsi lapho kukhishwa onakalisa itiye. Izinga lokushisa lekamelo kude nemithombo yokushisa nelanga lanele ngokwanele.
11. Intengo Namanga:
I-Diānhóng Jīn Zhēn ithatha isigaba semali ephakathi: ibiza kakhulu kune-gongfu yakudala, kodwa itholakala kalula kakhulu kune-Jīn Yá emsulwa.
