5. Ubuchwepheshe Bokukhiqiza:

- Ukuvuna (采摘, cǎizhāi): Ukuvuna ngesandla kwamagxolo athambile kanye namaqabunga amancane ekuseni.

Ukubila okugcwele kuthatha amahora ama-3–5, lapho ama-catechin e-oxidizwa abe yi-theaflavin ne-thearubigin, kwakhe umbala obomvu-nsundu ophawulekayo kanye nephunga le-ju ne-malt. - Ukomisa (烘干, hōnggān): Kwenziwa ngezigaba ezimbili: ukomisa kokuqala ku-100–110°C ukuze kumiswe ukubila, bese ukomisa okokugcina ku-80–90°C kuze kufinyelele kumswakama osele ongu-5–6%. Uhlelo lwezigaba ezimbili luvumela ukulungisa iphunga nokuvimbela ukoma ngokweqile.

6. Izimpawu Eziphathekayo:
- Isimo sangaphandle seqabunga elomile: Izihlamvu zetiye ezisongwe ngokuqinile ezinezimo eziyiziphephethu, ezifana neminenke emincane noma okhefana. Umzimba weqabunga uminyene, unesisindo (身骨重实, shēngǔ zhòng shí). Umbala – nsundu ngokumnyama kuze kube mnyama ngokunedingiswa okuningi okusagolide nokuphuzi okusuka kumathiphu, ambozwe uboya obuminyene.
- Iphunga leqabunga elomile: Linothile, liminyene, limnandi. Kugqame amanota e-ju ne-malt, asekelwa imvamisa yezithelo ezomisiwe (i-prune, ibhilikosi eyomisiwe, i-raisin, ushokoledi nokwenziwe ngoshukela osawoti). Kunama-nuance ezimbali kanye nesinongo esilula. Iphunga lihlala njalo futhi liyaziwa.
- Iphunga lokungena: Ligqamile, liyambesa. Inhlanganisela yamanota e-ju nezithelo enokwengezwa kwe-cocoa, ushukela osawoti, nezimbali zasendle. Lapho ukuphola kwengena, kuvela ama-nuance esinkwa esibhakiwe kanye ne-nati.
- Ukunambitheka: Kugcwele, kunamathanga acwebile, kuyindilinga, nobumnandi obusobala bemvelo nomzimba omncane, ongaphazamisi. Amanota e-ju ne-malt ahlanganiswe nemvamisa yezithelo ezomisiwe, ushokoledi wobisi, nokwenziwe ngoshukela osawoti. Ukubaba kuncane kakhulu. Akukho ukunuka. Ukunambitheka kwangemva (回甘, huígān) kuhlala isikhathi eside, kuyambesa, nobumnandi obunjengoju kanye nesinongo esilula.
- Umbala wokungena: Ugqamile, uhlanzekile, usuka ku-amber-orange kuya kumbala ogcwele obomvu-amber. Kukhanya, kuneringi egolide evelele (金圈, jīnquān) emaphethelweni enkomishi – uphawu lokuqukethwe okuphezulu kwe-theaflavin.
- Isizinda setiye (iqabunga elisebenzile): Amagxolo aphelele, anwebekayo, namaqabunga, avuleke ngokugcwele eziphephethwini. Umbala yi-copper-red, ulingene, unamagxolo agolide abonakala kahle. Iqabunga linganwebeka, liyaphila.
7. Isakhiwo Samakhemikhali:
- Ama-Polyphenol (ama-polyphenol etiye, 茶多酚): Eqabungeni elisha lomhlwenga omkhulu waseYunnan, okuqukethwe ama-polyphenol kungu-30–38%. Phakathi nokubila okugcwele, ama-catechin a-oxidizwa abe yi-theaflavin (茶黄素, cháhuángsù, 0.5–1.5% wesisindo esomile) – abangela ukugqama kokungena, “iringi elisagolide” kanye nokubaba okunika amandla, kanye ne-thearubigin (茶红素, cháhóngsù, 8–12%) – enikeza ukuminyana, ukugcwala kokunambitheka nokujula kombala.
- Ama-Amino Acid: Okuqukethwe okuphelele kungu-2–3% wesisindo esomile. I-L-theanine (L-茶氨酸) iyona evelele futhi ibangela ubumnandi, umthunzi “we-umami”, kanye nomphumela wokuphumula ngokuhlangana ne-caffeine.
- Ama-Alkaloid: I-Caffeine (咖啡碱) – 3–4% wesisindo esomile (cishe 40–60 mg ngenkomishi engu-150 ml), i-theobromine, i-theophylline. Zinikeza umphumela omncane, ohlala isikhathi eside wokunika amandla.
- Amafutha Abalulekile Nezinto Eziguquguqukayo Ezinamakha: Izingxenye ezingaphezu kuka-400 ezihlonziwe, kuhlanganise ne-linalool, i-geraniol, i-nerol, i-cis-jasmone, i-β-ionone, i-furfural, i-maltol. Ngqo i-maltol ne-furfural zibumba iphrofayili evelele ye-malt-caramel yama-Diānhóng.

- Ushukela Nama-Pectin: Ushukela oncibilikayo kanye nezinto ze-pectin zinikeza ukungena ubumnene nokuminyana komzimba.
8. Izinzuzo Eziphathekayo:
- Umphumela omnene wokunika amandla: Inhlanganisela ye-caffeine ne-L-theanine inikeza amandla ahlala isikhathi eside ngaphandle kokuphakama nokwehla okukhulu, ithuthukisa ukugxila nemisebenzi yengqondo.

9. Ukwenziwa Kwetiye:
- Izinga lokushisa lamanzi: 85–95°C. Nge-Jīn Luó enamathiphu amaningi (nokubusa kwamathiphu) kunconywa u-85–90°C, ngejwayelekile – 90–95°C. Amanzi ashishe kakhulu angakhuphula ukubaba.
- Inani letiye: 4–5 g ngamanzi angu-150 ml (indlela ye-gongfu); 3 g ngamanzi angu-200 ml (indlela yaseYurophu).
- Isitsha: I-Gàiwǎn (盖碗, gàiwǎn) yobumba – inketho enhle, evumela ukuvezwa kwephunga nokulawula kahle ukukhishwa. Futhi kufaneleka iketela le-Yixing lobumba olu-purple (紫砂壶, zǐshā hú) – ubumba buthambisa ukunambitheka futhi bunezele ubuzima. - Inqubo:
- Ukufudumeza isitsha: Geza i-gàiwǎn ne-cháhǎi (茶海, cháhǎi) ngamanzi abilayo ukuze kufudumale ngokulinganayo.

- Inani lokwethulwa: I-Jīn Luó yekhwalithi imelana nokwethulwa oku-6–8, iveza ama-nuance amasha. Ukwethulwa kokuqala kunikeza ukugqama nobumnandi, okuphakathi – ukujula nokugcwala, okokugcina – ubumnandi obumnene nemvamisa yezinkuni.
10. Ukugcinwa:
I-Diānhóng Jīn Luó – itiye elibiliswe ngokugcwele elinesakhiwo samakhemikhali esizinzile, elingadingi izimo ezikhethekile zokugcinwa.
- Isitsha: Isitsha esingangeni moya esingabonisi – ikani likathayela, lobumba noma lobumba elinesivalo esiqinile. Kuvunyelwe ukugcinwa ephaketheni le-vacuum lasemfabeni.
- Izimo: Indawo eyomile, epholile (15–25°C), emnyama, kude nemithombo yokushisa namaphunga anamandla. Umswakama ungabi ngaphezu kuka-60%.

Ngokugcinwa okufanele, ukunambitheka kungase kube mnene kancane futhi kube yindilinga ezinyangeni eziyi-6–12 zokuqala, kodwa ukuguga isikhathi eside akuthuthukisi ikhwalithi.
11. Intengo Nokukhwabanisa:
I-Diānhóng Jīn Luó ibamba izikhundla zamanani aphakathi naphezulu phakathi kwamatiye abomvu aseYunnan. Intengo inqunywa: yisikhathi sokuvuna (intwasahlobo – ibiza kakhulu), izinga lempahla eluhlaza (isabelo samathiphu), imvelaphi (iFèngqìng – inkokhiso ephezulu), isithunzi somkhiqizi.
- I-Jīn Luó yasentwasahlobo enekhwalithi ephezulu evela eFèngqìng enoboya obuningi obusagolide ibiza kakhulu kunamabhejisi ahlobo nekwindla avela kwezinye izifunda.
- I-Jīn Luó eyenziwe ngamagxolo kuphela isondela ngentengo ku-Jīn Yá (amagxolo agolide).
Ungakugwema kanjani ukukhwabanisa:
- Ukuthenga kubathengisi abaqinisekisiwe: Izitolo zetiye ezikhethekile ezinokwaziswa okusobala ngemvelaphi nesivuno.
- Ukuhlola isimo: Iziphephethu kufanele zibe ziqinile, zifane, zinoluhlu lwemvelo oluningi loboya obusagolide. Ukusonga okungalingani, umbala ogqamile “we-asidi” osagolide – uphawu lokusetshenziswa kwamadayi.
- Ukuhlola ngamanzi abandayo: Lapho kuthelwa ngamanzi abandayo, itiye langempela linikeza umbala emanzini kancane futhi ngobuthaka; uma amanzi eba ngokugqamile abomvu ngokushesha – kungenzeka ukungezwa kodayi.
- Ukuhlola iphunga: I-Jīn Luó yemvelo inephunga elijulile, elinezendlalelo eziningi le-ju ne-malt. Iphunga “le-caramel” elilinganayo elingaguquki lingabonisa impahla eluhlaza esezingeni eliphansi.
