3. Incazelo Yezitshalo kanye Nezinto Ezingavuthiwe:

  • I-Cultivar: I-Běn Shān (本山) — Camellia sinensis var. sinensis. Isihlahlana esiphakathi nendawo, esihlangene futhi esifushane ngaphezu kwe-Tiě Guānyīn. Amahlumela anombala onsundu ngokubomvu.

  • Umehluko oyinhloko kwi-Tiě Guānyīn: I-Běn Shān iqhakaza ngaphambi kwesikhathi (izinsuku ezi-3–5 ngaphambili), amahlumela ayo abe mancane kancane, namaqabunga abe mancane. 4. I-Terroir kanye Nezici Eziyinhloko Zokutshalwa:

  • Ukwakheka komhlaba: Indawo enamagquma nezintaba eningizimu-mpumalanga ye-Fújiàn. Izingadi zetiye ze-Běn Shān zitholakala emithambekeni efanayo neyezitshalo ze-Tiě Guānyīn — ngokuvamile zingomakhelwane ncamashi.

  • Inhlabathi: Inhlabathi ebomvu nephuzi ye-laterite, ecebile ngama-oksidi ensimbi, i-manganese kanye nezinto eziphilayo. Isimo se-asidi (i-pH 4.5–6.0), ukukhishwa kwamanzi okuhle.
  • Isimo sezulu: Isimo sezulu se-monsoon esishisayo nesiswakeme. Izinga lokushisa lonyaka eliphakathi nendawo lingu-16–21°C, imvula ingu-1600–1800 mm/ngonyaka. Inkungu evamile, ikakhulukazi ezindaweni eziphakeme. Umehluko wokushisa phakathi kwemini nobusuku ungama-8–12°C.
  • Izici Eziyinhloko: I-Běn Shān ibhekwa njenge-cultivar engadingi lutho kakhulu kune-Tiě Guānyīn: ibekezelela isomiso kangcono futhi ihlaselwa izinambuzane kancane, okwenza ikhange kubalimi abenza ukulima okuphilayo.

5. Ubuchwepheshe Bokukhiqiza:

Ubuchwepheshe bucishe bufane ncamashi nokwenziwa kwe-Tiě Guānyīn; umehluko usemininingwaneni, odalwa yisimo esikhethekile seqabunga.

  1. Ukukha (采摘, cǎi zhāi): Ngesandla. I-Běn Shān ivuthwa izinsuku ezi-3–5 ngaphambi kwe-Tiě Guānyīn, okunikeza abalimi “ithuba” lokukha ngaphambi kwesikhathi esikhulu se-Tiě Guānyīn.

  4. Ukuvutshelwa (发酵, fājiào): 20–40%. Isitayela se-qīngxiāng — sisondela ku-20%; i-nóngxiāng — isondela ku-40%.
  5. Ukuqondisa (杀青, shā qīng): Ukugazinga okunokushisa okuphezulu.
  6. Ukusongoza (揉捻, róuniǎn): Ukusongoza ngendwangu (包揉, bāoróu) — izigaba eziphindaphindwayo zoku “bopha → ukugoqa → ukukhulula”. Ukwakheka kwesimo esiyindilinga. Ngenxa yeqabunga elincane kancane, izinhlamvu ze-Běn Shān ziba lula futhi zingaqini kakhulu kune-Tiě Guānyīn.
  7. Ukomisa (烘干, hōnggān): Ukususa umswakama, ukuqinisa isimo. Esitayeleni i-nóngxiāng — ukugazinga okungeziwe okulula.
  8. Ukuhlunga (分级, fēnjí): Ukususa iziqu, amaqabunga aphukile; ukwehlukanisa ngamazinga.

6. Izici Zokuzwa Ngezitho Zomzimba:

  • Ukubukeka kweqabunga elomile: Izinhlamvu eziyindilinga, ezisuka kombala oluhlaza okotshani ogqamile kuya koluhlaza okotshani omnyama, zicwebeza kancane. Ukusongeka akuqinile kakhulu, kanti izinhlamvu zinde kancane kune-Tiě Guānyīn — inkomba ebalulekile yokubuka obala. Ama-tips anoboya obumhlophe.
  • Iphunga leqabunga elomile: Elihlanzekile, eliqhakazile. Amaphunga ezimbali (i-orchid, i-daffodil), kodwa anombala ophawuleka kakhulu wezitshalo kune-Tiě Guānyīn. Iminuza emincane yesithelo (i-apula eliluhlaza) kanye noju. Iphunga elincane “elikhilimu” kune-Tiě Guānyīn — umzimba “oluhlaza” kakhudlwana, “wasendle”.
  • Iphunga le-ngqungquthela: Izimbali, linoshukela, linokuhlanzeka kwezitshalo kanye nethoni engaphansi kancane yoju. Iphunga linamandla amancane kune-Tiě Guānyīn, kodwa lihlanzekile futhi licacile.
  • Umunyu: Uthambile, uyaqabul’ukoma, unobuhlungu obulula kanye nobumnandi obucacile bemvelo. Amaphunga ezimbali nezitshalo awabusa; izithelo (i-apula eliluhlaza, ipheya elingavuthiwe) noju kuba ngemuva. Umzimba wengqungquthela umaphakathi, ulula kancane kune-Tiě Guānyīn. Ukunambitheka okuhlala isikhathi eside, okuqabul’ukoma, nobumnandi obubuyayo (回甘, huígān). Awanamafutha amaningi njenge-Tiě Guānyīn — kunalokho “icwebezele njengengilazi”.
  • Umbala wengqungquthela: Uphuzi olukhanyayo, oluhlaza okotshani okusagolide, okusobala, nokucwebezela okukhanyayo.
  • Izinsalela zetiye: Amaqabunga aqinile aphelele anombala oluhlaza okotshani ogqamile. Iqabunga liba mncane futhi libe mncane kune-Tiě Guānyīn.

7. Ukwakheka Kwamakhemikhali:

  • Ama-Polyphenol (ama-catechin): I-EGCG kanye namanye ama-catechin — ama-antioxidant. Ingqikithi yokuqukethwe kwama-polyphenol — ~20–25% wesisindo esomile, isondelene ne-Tiě Guānyīn.
  • Ama-Amino acid: I-L-theanine — ukunambitheka okunoshukela, umphumela wokuphumuza. Okuqukethwe kuphansi kancane kunokwe-Tiě Guānyīn yezintaba eziphakeme, ngenxa yengcwecwe yeqabunga elincane kancane.
  • Ama-Alkaloid: I-caffeine ~2–3% wesisindo esomile (imaphakathi). I-theobromine, i-theophylline — imikhondo emincane.
  • Amafutha abalulekile: I-Linalool, i-nerol, i-geraniol (amaphunga ezimbali); i-hexenol kanye nama-ester ayo (ukuhlanzeka kwezitshalo — kuphawuleka kakhulu kunase-Tiě Guānyīn, okuyikho okwakha iphunga “eliluhlaza” elihlukile).
  • Amavithamini: C, amaqembu B, E.
  • Amaminerali: I-potassium, i-fluoride, i-magnesium, i-manganese, i-iron (enhlabathini ebomvu yase-Anxi).

8. Izinzuzo Zempilo:

  • Ukuvikelwa kwe-Antioxidant: Ama-catechin anciphisa ama-radical ahamba ngokukhululeka.
  • Umphumela wokunika amandla nokuphumuza: I-caffeine + i-L-theanine — ubuqotho obumnene ngaphandle kovalo.
  • Ukuthuthukisa ukugayeka kokudla: Ukukhuthaza okumnene; kufanele ukuphuzwa emva kokudla.
  • Umphumela wokuqabul’ukoma: Umzimba “oluhlaza”, “ocwebezelayo” we-Běn Shān umuhle kakhulu ekuqedeni ukoma esimweni sezulu esishisayo.
  • Ukusekela isimiso senhliziyo nemithambo yegazi: Ukunciphisa i-LDL, ukuqinisa imithambo yegazi.
  • Impilo yomlomo: I-fluoride evela enhlabathini yase-Anxi + ama-catechin — ukuvikela izimbobo zamazinyo.

9. Ukuphisa:

  • Izinga lokushisa: 85–95°C. E-qīngxiāng yasentwasahlobo — 85–90°C; e-nóngxiāng — 90–95°C.
  • Inani letiye: 5–7 g ku-150 ml.
  • Isitsha: I-gàiwǎn (i-porcelain) — engcono kakhulu ukwazisa iphunga elicashile. Ibhodwe lezitsha zobumba lase-Yíxīng — lesitayela i-nóngxiāng.
  • Inqubo:
    1. Fundisa isitsha.
    2. Ukuhlamba okulahlwayo: thela amanzi bese uwakhulula ngokushesha.
    3. Ukuphisa kokuqala: imizuzwana engama-30 — iminithi elilodwa.
    4. Izinkomishi ezi-5–7, +15–20 imizuzwana kukho konke.
  • Iseluleko: I-Běn Shān itiye elihle lokunambitha ngokuqhathanisa ne-Tiě Guānyīn. Zibhishe zombili ngesikhathi esisodwa kuma-gàiwǎn amabili — umehluko uba sobala kusukela ekuphiseni kokuqala.

10. Ukugcinwa:

  • Isitsha esivaleka ngci, esiqandisini (indawo ehlukile), kude namaphunga — kwesitayela i-qīngxiāng. Isikhathi — izinyanga eziyi-6–12.
  • Kwesitayela i-nóngxiāng — isitsha esivaleka ngci endaweni epholile emnyama. Isikhathi — izinyanga eziyi-12–18.
  • Izitha: ukukhanya, umswakama, ukushisa, amaphunga angaphandle.

11. Intengo kanye Nemikhohlisi:

I-Běn Shān ingelinye lama-wulung ase-Anxi anentengo efinyelelekayo nekhwalithi enhle. Ishibile kakhulu kune-Tiě Guānyīn yezinga elifanayo — ngokuvamile ngokuphindwe ka-2–3. Lokhu akubangelwa ikhwalithi ephansi, kodwa ukwazeka okuncane kanye nokubaluleka kokumaketha kwegama lomkhiqizo.

I-Běn Shān “iyimfihlo yase-Anxi” eyaziwa ngabangenelelayo.
