- I-cultivar: Běi Dǒu No.1 (北斗一号) — Camellia sinensis var. sinensis, ikloni elisakazwe ngokungajwayelekile lezihlahla zomama ze-Da Hong Pao. - Izidingo zezinto ezingavuthiwe: Kuphela izindawo zokulima ezigunyaziwe ezingaphakathi kwe-Wuyi Nature Reserve. Iqabunga kufanele liphelele, lingenalici.
4. I-Terroir Nezici Zokutshala:
- Isimo sendawo: Izigodi eziphakathi kwamathafa (坑涧, kēngjiàn) zase-Wuyi — izimpophoma ezincane phakathi kwezindonga zamatshe eziyi-red quartz andesibasalt. Izihlahla zetiye zikhula emifantwini yamatshe ezindaweni ezincane kakhulu zomhlaba, ezivikelekile emoyeni naselangeni oluqondile.
- Ukuphakama: 500–700 m.
- Inhlabathi: Imikhiqizo yokuguguleka kwamatshe entabamlilo — icebile nge-iron oxide (Fe₂O₃), i-manganese, ne-zinc. I-asidi encane (pH 4,5–5,5). Ubunzima bamatshe nokukhipha amanzi kahle kwenza izimpande zingene ekujuleni kwemifantu yamatshe.
- Isimo sezulu: Izinga lokushisa lonyaka eliphakathi nendawo lingu-~19°C, umswakama ungaphezu kuka-80%, kuvame ukuba nenkungu. Amagumbi asezitsheni akha ukukhanya okusakazekile, okukhuthaza ukwakheka kwama-flavonoid ne-L-theanine. Ukwehluka kwezinga lokushisa phakathi kwemini nobusuku kungu-8–12°C.
- I-“Rock melody” (岩韵, Yán Yùn): Inhlanganisela yobunjalo beminerali, ukuqina komzimba, nokunambitheka okuhlala isikhathi eside, okwakhiwa yi-rock terroir yase-Wuyi. I-Běi Dǒu ibhekwa njengomunye wabameleli abahamba phambili be-yan yun.
5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe buhambisana nomthetho we-Wuyi yancha — ngokugcizelela ukugazinga ngamalahle okunezigaba eziningi (焙火, bèi huǒ).
- Ukuvuna (采摘, cǎi zhāi): Ngesandla, entwasahlobo.

- Ukulungisa (杀青, shā qīng): Ukugazinga okusheshayo emigqonyeni ku-280–300°C ukuze kuyekwe i-oxidation.
- Ukusonga (揉捻, róuniǎn): Ukusonga ngomshini — amaqabunga anikezwa ukwakheka okuvamile okude nokujikelezayo.
- Ukomisa okokugcina (烘干, hōnggān): Ukwehlisa umswakama kufike ku-≤5%.
- Ukugazinga ngamalahle (焙火, bèi huǒ): Ukufudumeza kancane emalahleni asabiziwe (ngokuvamile izinkuni ze-longan, 龙眼). Kungahle kwenziwe izikhathi eziningana: ukugazinga kokuqala + “ukuphumula” (回润, huí rùn) + ukugazinga kabusha. Isikhathi esiphelele sifinyelela emahoreni angu-12–20. Kunikeza itiye izwi elijulile le-caramel, amantongomane, namaminerali.
- Ukuvuthwa (陈化, chénhuà): Itiye eliqediwe liyekelelwa okungenani izinyanga eziyisi-6 ukuze kuzinziswe iphrofayili futhi “kuzolise umlilo” (退火, tuì huǒ).
6. Izici Zokunambitha:
- Isimo seqabunga elomile: Ama-spirals asongwe aqinile anobude obungaba ngu-~1 cm. Umbala uluhlaza okotshani onsundu ngokuphaphathekile, unamaphethelo abomvu ngokunqunyiwe (izimpawu zokuxutshwa kwe-oxidation). Ingaphezulu linomphetho oncanyana noma licwebezela kancane ngamafutha (okuyizimpawu zokugazinga ngamalahle).
- Iphunga leqabunga elomile: Iyinkimbinkimbi, ifudumele — ukugazinga, izithelo ezomisiwe (i-prune, i-apricot), ubuthaka beminerali obujulile betsheni elishisayo. Izici zamantongomane (i-chestnut, i-walnut).
- Iphunga le-infusion: Limelezelwe ngezingqimba eziningana, livulwa kusukela ekuphuzweni kuya komunye. Ukuphuzwa kokuqala — ushukela oshile, i-chestnut patica. Okuphakathi — i-vanilla, ushokoledi wobisi, izwi lezimbali (i-lily of the valley, i-violet). Ezigcina — ukuphefumula okuncane kweminerali.
- Ukunambitha: Okugcwele, okunamafutha, okusongela. Ubuthaka obucashile, isici esiqavile seminerali (岩韵, Yán Yùn). Ukukhula: ubumuncu beminerali → i-caramel yoshukela oshile → ukunambitheka okuhlala isikhathi eside, okuncane okunoshukela, okulandelwa yimichachilo yokupholisa efana ne-menthol. Ubuthaka bulinganiselwa kahle.
- Umbala we-infusion: I-amber egcwele, igolide le-brandy, ekhanyayo, ecwebezelayo.
- Indawo yetiye: Amaqabunga amakhulu aphelele anamaphethelo abomvu acacile. Aqinile, anwebekayo. Ukuphelela kweqabunga kuyinkomba yekhwalithi yokucubungula.
7. Ukwakheka Kwamakhemikhali:
- I-Polyphenols: ≥23% wesisindo esomile. I-EGCG ≥9%. Ama-theaflavins ≥3% (imikhiqizo ye-oxidation enikeza umbala we-amber “nomzimba” we-infusion).
- Ama-amino acid: Ama-amino acid akhululekile ≥5%; i-L-theanine ≥2%. Ukuqukethwe okuphezulu kwe-L-theanine kubangelwa ukuthungwa okwenziwa yizindonga zamatshe.
- Ama-alkaloid: I-caffeine ≤2% (~20 mg/g). I-theobromine, i-theophylline — ngomkhondo.
- Amaminerali: I-iron ~120 mg/kg, i-zinc ~45 mg/kg, i-manganese ~85 mg/kg — amazinga aphakeme ngenxa yenhlabathi yama-basalt.
- Amafutha abalulekile: I-Linalyl acetate, i-nerol, i-geraniol, i-citronellol + ezinye izinhlanganisela ezingaphezu kuka-50 eziguquguqukayo. Ukugazinga ngamalahle kwengeza ama-pyrazines ne-furfural (izwi “lokuphekwa”).
8. Izinzuzo Zezempilo:
- Ukuzivikela kwe-antioxidant: Ukuqukethwe okuphezulu kwe-polyphenols (i-EGCG + ama-theaflavins) kuqeda ama-radicals akhululekile.
- Umphumela wokukhuthaza nokuhlalisa: I-caffeine + i-L-theanine (≥2%) — “ukugxila okukhuthazayo”. Ukuqukethwe okuphezulu kwe-theanine kwenza i-Běi Dǒu ingabi “nomsindo” kunezinye izinhlobo eziningi ezinomthamo ofanayo we-caffeine.
- Ukusekela ukugaya: Ubuthaka obulingene namathanini akhuthaza izinsiza zokugaya. Ngokwesiko, kuphuzwa emva kokudla okunamafutha.
- Ukulungisa umzimba wamafutha: Ama-catechins nama-theaflavins asiza ukwehlisa i-LDL.
- Ukuqinisa imithambo yegazi: Ama-polyphenols asekela ukuqina kwezindonga zemithambo.
- Umsebenzi wokulwa namagciwane: Izixube ze-oolong zivimbela ukukhula kwezinye izifo, kufaka phakathi i-Helicobacter pylori.
- Ukusekela ngamaminerali: Ukuqukethwe okuphezulu kwe-iron, i-zinc, ne-manganese okuvela enhlabathini yase-Wuyi.
9. Ukuphisa:
- Izinga lokushisa: 90–95°C.
- Inani letiye: 5–7 g ku-120–150 ml.
- Isitsha: I-teapot ye-Yixing yobumba obunsomi (紫砂壶, zǐshā hú) — ilungele ama-oolong asezitsheni; ubumba bucebisa izwi leminerali. Futhi i-gaiwan ye-china iyasebenziseka.
- Isu:
- Fudumeza isitsha ngamanzi abilayo.
- Faka itiye, ukuphuza okuhlanzayo — tela uphinde ukhiphe ngokushesha.
- Ukuphuza kokuqala: 10–15 amasekhondi.
- Okulandelayo: +5–10 amasekhondi kokunye.
- Ukuphuza okugcwele okuyisi-7–10; okunye kuvula izici ezintsha — kusukela emandleni e-caramel nethanga lokuqala kuya emineralini nasezimbali ekugcineni.
- Indlela yaseYurophu: 3–4 g ku-250–300 ml, 90°C, 3 iminithi. Ukuphisa oku-2–3.
10. Ukulondoloza:
- Isitsha esingangeni emoyeni esingabonakali (i-tin, i-ceramic), indawo eyomile epholile (≤20°C, umswakama <65%), kude namaphunga anamandla.
- Ama-yancha agazingiwe azinzile lapho egcinwa — afinyelela eminyakeni emibili.
- Ezinyangeni eziyisi-6–8 zokuqala, ukunambitha kungaqhubeka kukhula futhi kube ngcono (inqubo “退火”, tuì huǒ — “ukuzolisa umlilo”).
- Abanye abathanda kakhulu bayigcina i-Běi Dǒu iminyaka, kufana ne-lao cha; ukugazinga kabusha ngezikhathi ezithile kungenzeka.
11. Intengo Nemikhonyovu:
I-Běi Dǒu iyi-oolong yezitsheni esezingeni eliphakeme. Intengo nge-100 g isuka ku-$50 iye ku-$120+ kuye ngendawo yokuvuna, ubudala bezihlahla, nobuciko bokucubungula. Itiye elibhalwe “Běi Dǒu No.1” futhi eliqinisekisiwe nge-geographical indication liyona elibiza kakhulu.

- Intengo engaphansi kuka-$30/100 g “ye-Běi Dǒu yangempela yase-Wuyi” — ayinakwenzeka.
12. Amaqiniso Athakazelisayo:
- I-Běi Dǒu iyinzalo eqondile yezakhi zofuzo zezihlahla zokuqala ze-Da Hong Pao, ezakhiwe ngokusakaza okungajwayelekile; kwabaningi abanolwazi — kusondele kakhulu ekunambithekeni kwe-“Big Red Robe” enenganekwane.

Sengiphetha:
I-Běi Dǒu iyitiiye lapho kuhlala khona umlando wezihlahla eziyinganekwane ze-Da Hong Pao.
