5. Ubuchwepheshe Bokukhiqiza:
Ubuchwepheshe be-Báimǎ jùn hóng buwumbono womqambi, obuhlanganisa izimiso zodwendwe zegongfu hongcha nendlela entsha yokulawula izinga lokushisa nomswakama ngesikhathi se-fermentation. Ipulazi lalinye lamaziko okuqala eShayina ukwamukela indlela «yokulawula izinga lokushisa nokwandisa umswakama ngesikhathi sokugaya nokubilisa» (揉切控温增湿可控发酵).

- Ukunambitheka: Kunoshukela, «醇厚» (chúnhòu — okugcwele futhi kuminyene), nokusha okugqamile (鲜爽, xiānshuǎng) kanye nokuthungwa okushelelayo, «okufana nosilika». - Umbala wokuphuzwa: Kusukela kokubomvu-rubhi kuya kokusawolintshi-amber; okukhanyayo nokuhlanza, «kufana ne-agate ebomvu» (红玛瑙, hóng mǎnǎo). Emaphethelweni enkomishi — kunomphetho ogqamile osagolide.

- Ama-alkaloid: I-caffeine — cishe 3.5–4.5% (okuyisici samatiye amakhulu aseHainan ane-polyphenol ephezulu); i-theobromine, i-theophylline — ngamanani amancane.

8. Izinzuzo Zempilo:

9. Ukuphuza:
- Izinga lokushisa lamanzi: 85–90 °C kwezinga elivela ezikhunjini ezihlanzekile (单芽); 90–95 °C kwezinga «isikhumba esisodwa — iqabunga elilodwa/amabili».
- Isilinganiso setiye: 4–5 g ku-100–120 ml (indlela ye-gongfu); 3 g ku-200 ml (indlela yaseYurophu).
- Izingilazi: I-gaiwan (盖碗) ye-porcelain — ukuze kutholakale ukunukeka okuphelele; itiye eliyi-glass — ukuze ujabulele ngombala obomvu-rubhi wokuphuzwa; inkomishi yokuhlola — ukuze kuhlolwe ngokomsebenzi.
- Inqubo:
- Shisisa izitsha ngamanzi abilayo.
- Faka itiye; yekela iqabunga elomile livuleke ngaphansi kwesivalo esishisayo imizuzwana eyi-10–15.
- Ukuphuza kokuqala: 5–8 imizuzwana (itiye lithambile kakhulu, likhulula ukunambitheka kalula).
- Ukuphuza kwesi-2–4: 8–12 imizuzwana.

10. Ukugcinwa:
- Ibhokisi: Eliqinile, elingabonakali — ikani likathayela, ukupakiswa oku-vacuum noma oku-foil.
- Izimo: Indawo eyomile, emnyama, 15–25 °C, kude nemikhiqizo enephunga elinamandla. Uma kubhekwa imvelaphi yasezindaweni ezishisayo kanye nokuphakama kwesikhishwa, itiye ligcina ikhwalithi kahle.

- Thenga ngemigudu egunyaziwe yomkhiqizo we-«Báimǎ Lǐng» (白马岭) noma ezitolo ezisemthethweni ze-Hainan Agricultural Group (海南农垦).
