4. I-Terroir Nezimpawu Zokutshala:

5. Ubuchwepheshe Bokukhiqiza:

I-Bái Lín Gōngfū yendabuko — umsebenzi wezandla ophelele. Ubuchwepheshe buhlukile kwezinye i-gōngfū ngokugcizelela ukulondolozwa “kwe-háo” (izinwele) kanye “nokugazinga okuphindiwe” (双复焙, shuāng fùbèi).

  • Ukushwabana (萎凋 — wěidiāo): Okucophelela ngokukhethekile, nokulawulwa kwezinga — “ukushwabana okusesilinganisweni ukukhulisa ukumuncu okusha nobuqhawe” (控制适度萎凋, 以提高鲜酸爽度). Ubude — amahora angu-12–20, kuye ngesimo sezulu.

  • Ukomiswa okuphindiwe / Ukugazinga okuphindiwe (双复焙 — shuāng fùbèi): Isigaba esiyingqayizivele se-Bái Lín Gōngfū — ukugazinga okubili okulandelanayo nokupholisa okuphakathi. Inhloso — ukuvula “iháo xiāng” (iphunga lezinwele), kugcinwa ubusha. Ukulawulwa komlilo kubaluleke kakhulu: uma unamandla kakhulu — uzoqeda i-háo xiāng; uma ulula kakhulu — ngeke ulungise iphunga.
  • Ukuhlunga (分级 — fēnjí): Ukuhlukaniswa kokugcina ngesandla ngokwamabanga.

6. Izimpawu Zokuzwa:

  • Ukubukeka kweqabunga elomile: Imicu emincane, egoqwe ngokuqinile yobude obuphothiwe (条索细长弯曲). Inala yezinwele eziphuzi ngesigolide nezimhlophe (橙黄白毫), emabangeni aphakeme izinwele zingaqoqana zibe “yizinhlamvu ezincane” (颗粒绒球状). Umbala — uphuzi nomnyama (色泽黄黑) ngokucwazimula okunamafutha. Esitayeleni se-“Júhóng” — amathiphu agqame kakhulu, imicu yamacembe mice futhi ihle kakhulu.
  • Iphunga leqabunga elomile: Lihlanzekile, lisha, line-“háo xiāng” (iphunga lezinwele, elisha, elinokhilimu nezimbali), izinothi zezithelo ezomisiwe (iplamu emnyama, i-aprikhothi eyomisiwe), uju, i-malt. Ku-“Júhóng” — ngaphezu kwalokho kunomephu omnandi, “owolintshi”.
  • Iphunga lokumnika: Lisha, likhanya, line-háo xiāng egqamile. Inhlanganisela yoju nezithelo (uju, izithelo ezomisiwe, i-aprikhothi eyomisiwe), izinothi ezilula zezimbali ne-caramel. Iphunga “limnandi futhi lijabulisa” (鲜爽愉快的毫香).
  • Ukunambitheka: Kuthambile, kuhlanzekile, kumnandi futhi kuvumelana (清鲜甜和). Umzimba — uphakathi, kodwa “ugudlile”. Ubumuncu obulula bulinganisa ubumnandi. 7. Ukwakheka Kwamakhemikhali:

  • Ama-polyphenol (茶多酚): 10–18% wesisindo esomile. Ama-theaflavin nama-thearubigin — imikhiqizo eyinhloko yokuvutshelwa, akha umbala kanye “nomzimba” wokumnika.

  • Amaminerali: I-potassium, i-phosphorus, i-calcium, i-magnesium, i-iron, i-manganese, i-fluoride.

8. Izinzuzo Zempilo:

  • Ukugqugquzela okuthambile: Inhlanganisela ye-caffeine ne-L-theanine eningi ihlinzeka ngethoni enganyakazi ngaphandle kokukhathazeka.
  • Umthelela we-antioxidant: Ama-theaflavin nama-thearubigin aqeda ama-radical akhululekile.
  • Ukugaya ukudla okunethezekile: Kushukumisa ngobumnene ukugcinwa kwejusi yesisu.
  • Ukusekela isimiso senhliziyo nemithambo: Ama-polyphenol athuthukisa ukunwebeka kwemithambo.

9. Ukuphisa:

  • Inani letiye: 4–5 g ku-100–120 ml (i-gōngfū); 3 g ku-200–250 ml (indlela yaseYurophu).
  • Izitsha: I-gaiwan yobumba (盖碗) — inketho enhle: iveza i-“háo xiāng”, ayimunci iphunga. Iketela lengilazi likuvumela ukuthi ubabaze umbala we-“Júhóng”. Iketela lase-Yixing — lamukelekile, kodwa lingase “licishe licime” i-háo xiāng ethambile.
  • Inqubo:
    1. Ukufudumeza izitsha: Geza i-gaiwan, i-chahai nezinkomishi ngamanzi abilayo.
    2. Ukufaka itiye: 4–5 g ku-gaiwan efudunyeziwe.
    3. Ukuwasha (润茶): Chitha amanzi ngokushesha imizuzwana engu-1–2 — uma uthanda. Emaqoqweni anamathiphu kungcono ukweqa.
    4. Ukuchitha kokuqala: Imizuzwana engu-8–12.
    5. Ukuphisa: Chitha ngokuphelele ukumnika ku-chahai.
    6. Ukuphisa okuphindaphindiwe: Ukuchithwa okungu-5–8, ukwandisa isikhathi ngemizuzwana engu-3–5. Ekuchitheni kokuqala — i-háo xiāng ekhanyayo nobusha; kwaphakathi — ubumnandi nokujula; kokugcina — ukunambitheka kwe-emberi kanye noju oluthambile.

10. Ukugcina:

  • Isiqukathi: Esivalekayo, esingabonisi ukukhanya — ikani likathayela, isikhwama se-foil, isitsha sobumba.
  • Izimo: Indawo eyomile, epholile, emnyama, kude nephunga langaphandle. 10–25°C, umswakama ufinyelele ku-60%.
  • Isikhathi: Izinyanga eziyi-12–18 zokunambitha okuhle. Itiye elisha liyancanywa — i-háo xiāng igqame kakhulu ezinyangeni zokuqala.
  • Iqandakati alidingekile uma kuvalwe ngokufanele.

11. Intengo Nezikhohlisi:

I-Bái Lín Gōngfū — itiye lesigaba senani elimaphakathi, elinamandla kakhulu kune-Jīn Jùn Méi, kodwa elingaphezulu kwetiyeni elibomvu eliningi. 12. Amaqiniso Anentshisekelo:

  • Itiye elimhlophe netiye elibomvu — zivela esihlahleni esisodwa: I-Fúdǐng Dà Bái Chá — isilimo esanikeza umhlaba i-Bái Háo Yín Zhēn (enye yamatiye amhlophe abiza kakhulu), kanye ne-Bái Lín Gōngfū.   • I-Tǎnyáng Gōngfū (坦洋工夫, Tǎnyáng Gōngfū): “Umngane” wase-“Makhulu Amathathu e-Gōngfū yaseFujian,” okhiqizwa esifundeni sase-Fu’an (福安).
